Recently Cindy and I and
part of our team visited
growers in Champagne and
discovered a number of very
high-quality, smaller
producers. Legras & Haas
(Bin 801) is a fantastic
aperitif - long, clean, lacy &
fine - and will greatly aid
decision making on the
dinner menu. If there were
to be a house Champagne,
it would surely be made
by Egly-Ouriet, located
in Ambonnay, a village
surrounded by pinot noir
and pinot meunier vineyards.
All of their wines are rich &
very very dry (low dosage).
Most of their wines are made
from Grand Cru grapes.

plushly textured & just
beginning to drink. Most of
our 2006’s will carry you
through your meal.

Our cellar houses a
collection from the great
house of François Raveneau,
through a series of years and
appellations. These are big
personal favorites of mine.
Incredibly precise wines of
very distinct character.

Two producers at opposite
ends of the stylistic spectrum
are producing Corton
Charlemagne Grand Cru.
Lucien Le Moine produces a
very modern style white
Burgundy with robust fruit
intensity and very attractive
oak seasoning. The venerable
house of Louis Latour has
been the standard-bearer in
Corton-Charlemagne over the
last century - wines of
complexity and authority, with
very layered personalities. Ripe
with pineapple, hazelnuts &
white dusty stones - these are
incredible wines with white
meat game and especially the
cheese trolley.

one of the five most
brilliant winemakers in
Burgundy for Méo-
Camuzet. His wines display
more power & precision
than I’ve tasted before.
Aromas are at once floral
and have a certain truffley
minerality. The texture is
delicate yet has abundant
fine tannins.

Hermitage is the ancient
home of Syrah in France.
The grape has been
documented to grow there
for more than 1100 years.
Hermitage vineyards are
essentially sitting like a
monk’s cap of granite atop
a very round hill directly
across the river from the
town of Tain (where
Valrhona chocolate was
born and is produced).
The best vintages for
Hermitage are always when
that granite cap is roasted
thoroughly in the sun.

Marcel Guigal bottles
three single-vineyard Côte
Rôtie. Every vintage
receives special attention
in the vineyard and the
cellar. The wines typically
spend 42 months in oak
casks during their
upbringing and often
seem to “die” in barrel.
A few years later they are
reborn when bottled.
Uniquely intense and
balanced individual
expressions; La Turque
is to Beethoven as La
Landonne is to Brahms
and La Mouline is to Chopin.

wine delivers a darker fruit
accent & mellower tannins.

All the Cune wines are
bottled and then stored,
unlabelled, in the historic
cellars. They are stored
without labels because the
labels would quickly
deteriorate in the humidity
of these cellars. Plus, the
bottles might stay there for
decades, undisturbed.
Before release, the bottles
are hand cleaned and
labelled. Cune never recorks
its library wines. Recorking
exposes the wine to the
atmosphere and changes it.
The wines do not see the
light of day from the day
they are bottled until they
are released.
