It’s 2016 and the Club is in full

swing! We have a ton of great activities, events, shows and excellent amenities for everyone to enjoy, and we’re busier than ever with massive makeovers, renovations and new additions! All of which I’m happy to say have been an overwhelming success!

The Citrus Hills restaurants upstairs have been remodeled from floor to ceiling. Beautiful new appointments grip you from the minute you walk through the front door. The Grille’s remodel is visually stunning, and the Garden Room and Hampton Room also received a beautiful makeover. But the biggest change of all took place downstairs.

It is unrecognizable inside and out from just a few months ago. PrimoVita gave us an all new, modern, hi-tech

fitness center that is quite remarkable. The state-of-the-art machines are perfect for any fitness level. If you haven’t taken the tour, you need to do so as soon as you can. PrimoVita is a wonderful new addition to the Club.

Between PrimoVita and the pro shop, there is our CaféVita shop where members can hydrate after a workout or prior to golf. Also, there are beautiful new restrooms, a meeting room with an outdoor patio to relax, and nice new offices for the golf staff in back of the pro shop.

I hope everyone is taking advantage of their dining credit. Keep in mind, you must spend the dining credit in the quarter it is issued as it does not carry over and it is not transferable. The purpose of the dining credit is to increase participation and use at all of our dining facilities. We want to give every member an opportunity to experience and enjoy our Club dining facilities. We look forward to seeing you soon.

Beef Tenderloin with Shallots and Red-Wine GlazeWith Valentine’s Day just around the corner, here’s a delicious, melt-in-your-mouth recipe

for your sweetheart. This easy and elegant tenderloin is the perfect dinner for an intimate night in, or dinner with guests.

Ingredients: 2¼ pounds beef tenderloin, trimmed and tied 8 sprigs fresh rosemary 16 shallots, trimmed and peeled 2 tablespoons olive oil 1/2 cup dry red wine 1/2 cup homemade or canned low-sodium chicken stock or water Salt and freshly ground black pepper

Preparation:Let tenderloin come up to room temperature. Preheat oven to 425 degrees with rack in

center. Arrange four rosemary sprigs in a medium roasting pan; place tenderloin on top; arrange shallots around. Rub meat and shallots with oil; sprinkle with salt and pepper. To give the meat more flavor, tie four or five rosemary sprigs to the top of the tenderloin with kitchen twine before roasting. Roast 25 minutes. Turn shallots for even browning; if roast is dry, baste with more oil or pan juices. Cook until shallots are golden, 10 to 15 minutes more; transfer to a small bowl; reserve. Meat should register 120 degrees with meat thermometer; be sure to let the meat rest about 25 minutes after removing from oven or it will be underdone. Chop remaining rosemary into small pieces. Place roasting pan over high heat. Add wine and stock. Cook, scraping bottom of pan to collect any cooked-on bits, until liquid has reduced by half, 6 to 8 minutes. Pass through strainer and pour over tenderloin.

“Rave On” Buddy Holly tribute… a nearly sold out show, raving reviews; tons of energy and talent… ring a bell? You’re in for a treat because our “Rock Legends” show in February brings back the same performers! There was such a spectacular turnout last year that we just had to invite them back for an encore. The show is part concert, part tribute, with a song list created entirely by you, because this show provides the audience the opportunity to pick the songs they want to hear through the power of applause!

They’ll take you on a journey from the '50s tunes of Elvis, Buddy, and Patsy Cline to the psychedelic '60s hits of The Rolling Stones, Janis Joplin, and Stevie Wonder. Thank you to everyone who attended our first New Year's

Eve dinner at Skyview — it was a huge success! Members were very pleased with the food, the non-stop entertainment, and attention to detail. Everyone had an amazing time and kudos are still pouring in! We look forward to a repeat performance for next year... some members are already making reservations.

I hope everyone has been sticking to their New Year’s resolutions. It may be a little tougher in February, a month that is filled with chocolates! Although the shortest month of the year, we are filling the month with some very exciting new and old member-favorite events. We have Steak Night on the 2nd and 16th, Cocktails and Classics every Wednesday with different live entertainment each week, our 2-4-1 Happy Hour every Thursday from 4-7pm, our Prime Rib Feature every Saturday, and our fabulous Sunday Brunches on the 14th & 28th.

Skyview will be hosting an elegant Valentine's Dinner from 6-9pm on

the 14th, with an array of hand-selected dishes from our Chef, Joe Bergman, such as surf and turf, bacon-wrapped scallops, Angus filet mignon, and pan-seared snapper, to name a few. Our dessert station will feature a flambé station and even a chocolate fountain that will have

a variety of side items for your dipping pleasure, all included

in the price of your meal. During dinner you’ll be enjoying the voice of an amazing jazz and blues vocalist, Miranda Madison. It will be a romantic and

delicious evening you and your significant other won’t

The month of February brings many new and exciting changes

to the Grille and Tiki Bar. We are really excited that our renovations are now complete and the Grille and all of our banquet rooms have been so elegantly redecorated! We are introducing new menus for the Grille and Tiki Bar this month and our newest addition, CaféVita, is up and running. CaféVita offers coffees, teas, cappuccinos, lattes, espresso, and a variety of grab-and-go beverages and snacks. Make sure you stop by for a cup of coffee or hot chocolate when you are playing golf, or try one of our healthy protein shakes or smoothies when you’re working out at PrimoVita.

GET READY FOR SOME FOOTBALL!! Join us on Sunday, February 7th, at the Tiki Bar to celebrate the 50th anniversary of the Super Bowl. We have a fantastic night planned filled with food, football and fun! Special drink prices, raffles, prizes and a great tailgate menu will be available from 4 to 8pm. Come early to make sure you have a table or a seat at the bar to watch one of our 12 TVs.

Most people associate the month

of February with Valentine’s Day, a time for romance, giving cards, chocolates, flowers, and of course, taking your loved one to dinner. Chef Dwane has designed a delicious limited menu for Valentine’s Day, Sunday, February 14th, and he is going to offer a special Valentine dessert of Cherries Jubilee. February

is also National Cherry Month! We are taking reservations and seating in both the Grille and Garden Room from 5 to 8pm for this special day. Several members

have suggested that we have entertainment in both rooms on holidays, so we have obliged! Jack Dempsey will be playing your favorite tunes in the Grille, and Bill Rea will entertain you with piano and vocals in the Garden Room from 6 to 9pm.

February means we are cookin’ at Skyview Tennis Center.

The first four months of 2016 are the busiest of the year and we wouldn’t have it any other way. No fewer than eight USTA teams are currently engaged in adult league competition to represent the Marion district at the sectional level in Daytona Beach. They include two 65 and over teams, five 55 and over teams, and a 40 and over mixed doubles team. That’s a lot of league tennis to squeeze into a busy tennis center, but most league matches are played in the afternoon, leaving more courts available in the morning for member play.

our courts were so busy in the mornings. The Tennis Committee has entertained several proposals over the years to shorten morning reservations to 90 minutes to increase the number of timeslots available. At the rate our community

is growing we may have to implement that

plan eventually, but we’re having too much fun being spoiled with two-hour reservations for now. We appreciate our

members who have adopted afternoon

tennis to help us in the cause.

However, there are days this time of year when morning court availability runs out. For those days, staff will note those who didn’t get a reservation so we can contact them if a court becomes available. It is incumbent upon our members to let

us know when they have a court they can’t use. There’s nothing sadder than an empty court with members waiting to play.

The popularity of Skyview Tennis Center, while a terrific addition to the community, took a toll on the amount of tennis being played at Citrus Hills. It was 11 years ago when members of Citrus Hills Tennis were offered riders to join Skyview. Most of them were elated to accept. Unfortunately, that resulted in an exodus of players from our hard court facility which went underused for several years.

But in the fall of 2015, that facility got a major makeover. New fences, new landscaping and a beautiful new U.S. Open blue surface. Tennis picked up immediately. Throw in a Tiki Bar, remodeled restaurants and PrimoVita Fitness, and you have a remarkable new environment for tennis and just about everything else. If you haven’t seen Citrus Hills lately, then you really haven’t seen it at all!

The beginning of a new year is always very exciting. All those

resolutions we make, personally and professionally, are a sign of eternal optimism. But as it has been said, the longest journey begins with a single step. Here in the Welcome Center we are seeing an influx of visitors who are taking that step to make 2016 the year they do something special for themselves. With some 13,000 baby boomers retiring daily, many are looking at our spectacular area of the country and, in particular, our community.

Congratulations are in order for our Sales Team. Special recognition goes out to Susan Mastrangelo, our New Home Counselor of the year, who finished 2015 with 28 sales! Susan had an exceptional year. She is living proof that hard work and persistence pays off!

I also want to recognize Karis Geistfeld. She finished the year with

20 sales. She worked long hours the last week of 2015 to close the year as our New Home Counselor for the month of December. Karis is another team member who works

very hard for her clients. Please join me as we welcome

New Home Counselors Zack McJunkin and John Clayton. These

two real estate professionals have years of successful sales experience at a variety of properties and communities. We know they will be valuable additions to our team.

Also, on the sales side, the folks at Terra Vista Realty Group had an outstanding year. No other area Realtor came close to their sales and listings in Terra Vista and Brentwood. February is typically the month when everyone thinks about

love. Usually the love of another person, but for many of us, the game of golf was love at first sight. We all have a little love affair with this awesome, maddening and incredible game. The smell of the freshly cut grass, the sound of a crisply struck iron shot, the warm feel of the sun, camaraderie with friends, meeting new friends, honing your skills, and forgetting life’s stresses for a while. We need to get back to remembering why we love to play golf. Some of us took up golf as a career, some of us started playing because our friends played, and others started playing because our significant other played, and we wanted to be able to do something together with them. Whatever the reason we started playing, I think that we can all agree that once we started we fell in love. In keeping with our Club’s vision for the future and constant

commitment to improve, we have implemented a new online golf tournament and league registration system. This technology will allow all members with a club handicap number to register for all of their golf-related events either in the Citrus Hills pro shop or from the comfort of their home.

In the pro shop, there is now a dedicated area with two new state-of-the-art touch screen computer monitors where members can either post scores or enter events. To register for an event in the pro shop, simply input your handicap number and follow the prompts on the screen to enter the event. Members who have the GolfNet software on their home computers may enter any event(s) simply by clicking on Club Signups & Results under the Events tab.

This program provides countless features, including, but not limited to: emailing tee time confirmation, signing up a partner or partners,

viewing the events you are currently entered in, viewing the details of each event, such as cost, format, special events, registration deadlines and results. There are also controls within the program that will prevent signing up for the wrong event or duplicating

For some, the move to a computer-based registration system may seem a little daunting. However, anyone who has previously posted a

score on the handicap computer in the pro shop will have no problem handling the technology. regularly and get out of breath easily, be sure to start out low and move up over time. Find the activity level of a class that best accommodates your comfort zone.

Also, consider your personality. An introvert may not be comfortable in a loud, fast-paced aerobics class. In contrast, getting involved in a class that appears to be opposite your personality can be an enriching experience. For example, a peaceful and calming yoga class may be of benefit to a high-energy personality. Don’t be afraid of branching out. Many classes that seem intense, such as Zumba, yoga, and spinning, are organized so people of all fitness levels can enjoy them. By stepping out of your comfort zone you may be surprised at what you actually enjoy and find beneficial. Get involved in more than one class. Switching

I suggest that you observe a class first. Ask the instructor if you can watch the class in action from the back of the room. Are its goals overall toning, weight loss or developing specific body parts? You should also inquire if different sessions of the class are more intense than others.

10 Tips for Perfect Laundry1. Read the labels. The tags sewn into most articles of clothing advise about specific treatments; they often contain valuable advice.2. Remove static naturally. Dryer balls provide anti-static protection without harsh chemicals. Plus, they lift and separate clothes so they dry faster. 3. Pretreat stains. You can remove nearly all of life's horrible stains right away using simple household items like club soda, lemon juice, hydrogen peroxide, and more.4. Pour in detergent. Powdered detergents are better on mud and clay and in hard water; liquids have the edge on greasy stains.
