• The seeds are doused with hormones to aid in growth
• The grains are stored in bins sprayed with additional pesticides
• Drying of the grain causes damage to it’s proteins

The History of Grain in The US Diet…
• 1850: Processed flour becomes widely available.
• 1855: First description of symptoms of gluten intolerance by Dr. Gull Guy.
• 1892: William Henry Ford and Henry Drushel Perky invent a machine that shreds whole wheat, and start producing Shredded Wheat, the first packaged breakfast cereal.
• 1894: Dr. John Kellogg and his brother invent corn flakes.
• 1897: C.W. Post begins manufacturing Grape Nuts.
1922: Dr. Robert McCarrison warns medical colleagues about the increase in intestinal disorders.
1931: Dr. Willem Dicke, a Dutch pediatrician, starts experimenting with wheat-free diets for children with celiac disease.
1932: Dr. B.B. Crohn identifies a “new intestinal disorder” linked to grain consumption he calls regional ileitis, now called Crohn’s disease.
1940s: Farmers start to use chemical fertilizers to increase yields, reducing nutrients in grains and other crops. Meanwhile, government subsidies for growing corn and soy led to a processed food industry based on these ingredients, as well as high fructose corn syrup, hydrogenated oils, and corn starches.
• 1943: Due to the diseases Beri Beri and Pellagra, the United States government bans the sale of processed grains unless they are fortified with select B vitamins and minerals.
