For two months in the spring of every year, there grows a rainbow in Carlsbad on the west side of the I-5. Simply

known as “The Flower Fields,” this historic site is rich in activities as well as beauty. Encompassing more than 50 acres, the fields boast over 2 million bulbs of Giant Tecolete Ranunculus. A member of the Buttercup family, this blossom is among the finest strains of Ranunculus in the world.

Upon arrival at The Flower Fields, one will find much to do. Informative tractor-pulled wagon rides are available for a nominal fee, and gives the visitor a unique perspective of the fields. The tractors are historical relics themselves, on loan from the Vista Steam Engine Museum (agsem.com). There is plenty for the young set to do, with “Santa’s Playground” - this has pieces from the original Santa’s Village that long-time Californians will remember from Lake Arrowhead. Scattered across the ranch are passport stamps with information about each site; a fun scavenger hunt for the curious-minded. A maze of fragrant Sweet Pea vines encourages one to take time to smell the flowers and get a little lost while doing it. A greenhouse full of

rare and beautiful Poinsettias includes information about each species, and a gem mining attraction are all part of the day. Information about water conservation is available at informative kiosks, and another greenhouse holds spectacular Orchids and Cymbidium. Each year an enormous American Flag is planted using red, white and bluish blossoms - this has become a patriotic favorite of guests and residents alike.

Pack a lunch, and enjoy a beautiful view of the Fields or of the ocean at one of the many picnic areas strewn across the Ranch, or sit in the soothing Artist Garden amongst blossoms and cooing doves. The entire ranch is meticulously landscaped, and the fountain near the entrance, with its spectacular color, is an ideal photo opportunity, as is the vista from the top of the hill overlooking the Pacific. Every weekend visitors can enjoy live music and delectable strawberry shortcake. Visit the website for a list of special events, including a photography workshop hosted by Canon - free with park admission - on April 17. Private tours can be arranged, and a large meeting space now allows for private events of up to 200 guests. Each year over 7,000 schoolchildren visit the Fields for tours, composting clinics and crafting projects.

Over 150 volunteers work at the fields, doing everything from administration to planting, pruning and maintenance. Workers painstakingly scan the rows of blooms to pull the “rogues” - the random red blossom in the row of bright white, for example. The entire ranch, including the wagon tours, are handicapped accessible. As you leave the Fields, make sure to stop at the adjacent Armstrong nursery and pick up your own Ranunculus bulbs or cut stems to enjoy at home. But don’t delay - get there soon! The two-month blooming season ends on May 8 with the Mother’s Day Celebration.

SPRINGTIME IN THE VINEYARDSBy Ken Zignorski

As with your home, we are just finishing up spring cleaning in the vineyards. All of the vines are cut back to their “core” which leaves 4-5 spurs along each vine’s main cordon. The cuttings are plowed back under the ground while the dirt itself is tilled and infused with fertilizer. This year’s winter rains have made the ground fertile, but also have caused some damage to trellis poles and wires which are repaired and replaced.

Actual vine budding should occur by early April for the Valley’s white grapes and late April/early May for red grapes. Temecula’s white grapes always arrive first – this is why the Valley’s white grapes end up being harvested in mid to late August while red grapes are harvested a month later.

During the early stages of growing, it’s exciting to see “embryonic” grape clusters forming. It will take a good month or so for each cluster to really come into their own and become fully formed. In the meantime, the vineyard’s canopy really takes shape with an overabundance of grape leaves and vines. Once a good amount of growth is achieved, the grape vines are tucked up in the trellis wires with the grapes being left to hang slightly below the trellis wires, exposing them to the environment of cool evening air and warm daytime temperatures. The canopy is then trained to provide sufficient protection on each side of

the vineyard row with excess growth being pruned so nutrients go to the grape clusters themselves. Weed control is imperative in the vineyard, so that water and various fertilizing nutrients can benefit the vines’ roots themselves.

As May comes to a close, the grape clusters will continue developing until we get to veraison – about 2 months after bloom, when the grapes turn color. This is the beginning of the ripening process .

While all of this is taking place out in the vineyards, the winemaking team is busy at work finalizing the white wine blends from last fall’s harvest and beginning the bottling process of the 2010 white wines, which will start being released early this summer. As for red wines, barrels are being topped off monthly, with barrel racking occurring every three months so the 2010 red wines can continue their development. For the 2009 red wines that are in barrel, blending trials are starting to take place to finalize each wine’s blend so they can be bottled in May and June to start freeing up some barrels for the 2011 harvest.

All in all, a lot of activity is going on while the vines are just starting their next cycle. Mother Nature definitely keeps us busy.

CHEF ROBERTO’S BREAKFAST CASSEROLE

1 tsp. Extra virgin olive oil1 Red bell pepper diced1 Yellow bell pepper diced1 (5oz) Package “Smart Bacon” chopped or 1 (6oz) package of “Smokey Tempeh Strips” chopped, which ever is available.1 Block firm tofu½ Cup chopped green onions½ Cup grated vegan cheddar cheese“Follow Your Heart” brand or “Veggie Slices” cut into strips1 Tbs. high heat oil like safflower or grape seed oil2 Large russet potatoes, washed, grated, and rinsed or 1 (16oz) bag frozen hash browns1 tsp. Garlic powder1 tsp. Onion powder

DIRECTIONSPat the block of tofu dry and slice it into 4 equal pieces. Using a paper towel or lined kitchen towel, press the tofu firmly to remove moisture. Working over a large mixing bowl, squeeze the tofu through a potato ricer or crumble it all up in your fingers. Add the vegan cheese, garlic powder, green onions and onion powder.In a skillet heat the olive oil and add the “Smart Bacon” and peppers.Stir until the peppers are slightly browned. Add the peppers to the tofu mixture.Using the same skillet get the high heat oil hot and add the potatoes. Stir the potatoes constantly without pressing down on them until they are slightly brown. Add them to the tofu mixture and stir gently until well incorporated. Distribute the mixture evenly into a 13x9” baking pan. Bake at 420º for 20 minutes or until it’s hot. *I like to make this casserole the night before and bake it the next morning.

Tucked in a corner of a shopping center in Hemet is a gem of a restaurant, That’s Amore Cucina Italiana, owned and

operated by a gem of a gentleman and his family. Sicilian-born Carlo DiGristina has a long and rich history in the restaurant business, having owned several pizzerias and fine dining establishments in the United States since 1976, when he opened his first restaurant in Pittsburgh, PA. Trained in Sicily at the Scuola Alberghiera in Cefalu’ - a preparatory school for chefs - Carlo would go on to take every opportunity made available to him to learn the art of the kitchen. Mentored by Guy DiSalvo, Carlo would eventually master the art of the five mother sauces as well as the ability to create delicious and unique dishes, a skill that runs in his blood. Girolamo, Carlo’s father, was a blue-collar worker with a gourmet palate and had an innate ability to recreate complex dishes after tasting them. It was his father’s love of cooking that would inspire Carlo’s dreams. That’s Amore offers a wide range of dishes that will tempt every taste bud. Carlo’s forte is veal, but seafood, pasta,

pizza and daily specials offer something for everyone. One needs only to step inside Bob Richardson’s new Grapes and Tomatoes restaurant in Canyon Hills to feel right

at home. With warm, rustic decor and an attentive staff, you will settle right in and not be in a hurry to leave. If you’d rather enjoy the fresh air and dine al fresco, pet-friendly patio seating is available. And, coming soon, live piano entertainment.

My husband Steve and I were seated near the window next to the patio, with a nice view of the hillsides. The Head Chef, Ramon came out to greet us and made several recommendations for our meal that I was very glad I followed. Our first course was a cheese platter - beautifully arranged with flavorful smoked Mozzarella, sharp Romano, velvety Port Wine Derby, and a delightfully buttery Manchego. To complement the cheeses was an array of candied nuts, cranberries, honeycomb, Maureen’s Gourmet Pepper Jam (a local favorite, from Wildomar), sliced apple and strawberries and a lovely pomegranate jam. I could have feasted on the cheese and my glass of wine and been content - but there was much more to come.

Based on Chef Ramon’s suggestion, I opted for the pan-seared salmon, which came served on a bed of lemon spaetzle - handmade by Ramon. Our entrees were preceded by a delicious

house salad with mixed greens, grape tomatoes and cucumber. The homemade dressings were tangy and flavorful. But back to the salmon. Topping the fish was a fennel salad and thinly sliced grapes, and the entire dish was drizzled with a Concord Grape reduction. I’d never had this combination of flavors, and it was something truly remarkable. My husband opted for the Chicken Alfredo Pizza - one of their most popular - and it wasn’t hard to see why. Topping a delicate pizza crust was grilled chicken and artichoke hearts with a light Alfredo sauce, Mozzarella cheese, flaked red pepper, diced fresh tomato, cilantro and grated parmesan cheese. The individual-sized pizza was plenty for one - we ended up taking some of it home. It should also be noted that the service was excellent - our server, Jamie, took very good care of us, never rushing us nor leaving us feeling neglected. This is an art.

The menu had so many things to offer it was difficult to decide what to order, because everything sounded wonderful. Appetizers include Hummus, Calamari and bacon-wrapped shrimp with limestone greens and cucumber salad. They also offer a wide variety of homemade soups and entree salads as

well as items for the younger family members. Sandwiches are available with your choice of fillings, oven baked and toasty, and also available are Reubens and burgers. The “Chandwich” is named after the owner’s son. Signature pizzas abound, including BBQ Cheeseburger, South of the Border, and the best-selling Paisano - tomato, spinach, garlic, basil and Feta cheese on a thin crust. Pastas, Filet Mignon medallions, roasted chicken, calzones, meatloaf ... there is truly something for every taste bud at Grapes and Tomatoes.

However - the pièce de résistance was just around the corner and we had no idea. Finishing off our wonderful meal, Ramon came to check on us to see how we had enjoyed everything - then suggested we might want to share a piece of apple pie - Apple Walnut Upside Down Pie à la mode, to be exact. This delectable piece of heaven was warm, crunchy, gooey and sweet - pairing perfectly with the generous helping of vanilla bean ice cream topping it. Try as we could, we simply could not finish all of it, although I wanted to very much! Steve proclaimed it the best piece of apple pie he had ever had in his life - coming from a man who is very selective about his apple pie, this is high praise.

We truly enjoyed our experience at Grapes and Tomatoes, and highly recommend it as a place to relax, unwind, and have a wonderful meal in a warm, welcoming environment. You won’t be disappointed.

Spring is a great time of year in Southern California. Everything is green, the air smells fresh, new growth is

everywhere you look, including brand new mommies! So if you are the lucky one in charge of an upcoming baby shower, you have a wonderful time of year in which to plan it.

The themes for baby showers are unlimited. You can go cute, pink or blue, or as our client chose, a little sophisticated. She picked a garden-style tea party to which we added touches of baby sweetness. The bundle of joy was a boy, so we chose white with just a hint of the softest baby blue for our color palette, mixed in with the beautiful patterns on our client’s china teacups...the look was perfect.

This is a great example of taking something that you cherish and working it into your party theme. Our client has an extensive teacup collection she has been adding to for years, which we used both for serving tea as well as for décor pieces by filling them with water and floating single white roses. For the flowers we went with different groupings of like flowers, but

all whites and arranged them in teapots and pitchers as well as old fashion tea tins as the containers.

We chose a buggy and bassinette for staples throughout the party starting with the invitation, moving to the entrance piece and ending with the individual bassinette cakes that each guest received as a favor. We boxed our favors in gorgeous frosted pearl boxes and then used them as a center piece on the cake table. An individual shaped cake for each guest is an extravagant favor but well worth it, I believe. If you make this type of investment make sure to utilize it; show it off well!

The menu was garden style with tea sandwiches, a variety of yummy salads, chocolate dipped strawberries and fresh squeezed lemonade all displayed on our client’s gorgeous antique pieces of furniture. When possible, utilize unique items for serving buffets. Our client’s 50 beautiful teacups and saucers - each unique - were lined up next to silver urns holding black teas accented with flavored sugars. If you are not lucky enough to have a collection so vast, a few antique pieces tucked amongst white rental cups will give you a nice look as well.

I suggest guest seating outdoors - there’s nothing like that fresh spring air. Our guests sat outside overlooking wine country under white umbrellas, sipping tea and anticipating the new arrival (surely) to be loved by all. I wish you a day as beautiful on your next party adventure.

It’s very easy to create a fresh flower posy. First, clean all the leaves or foliage off the stems of the flowers you would like to incorporate into the bouquet. Once all the flowers are clean and ready to be arranged, group three to five stems together as your center...if you are incorporating longer-stemmed flowers like gladiolus or snapdragon, use them as your center point. Now that you have your center, start adding flowers to the diameter, placing them slightly lower, circling around and around until you have the size and width that you would like. Once the bouquet is complete, bind the stems together using floral tape or rubber bands, being careful not to crush the stems. Once the bouquet is secure, add decorative ribbon and you’ve just created a posy!

A simple arrangement of tulips would be a lovely addition to anyone’s home for spring, and is very easy to arrange. Just clean the tulips, removing any foliage that would be in the water. Then arrange the tulips in your hand till you like the size of the bouquet, cut the tulips to fit the container and you have a beautiful spring bouquet.

April and May are a perfect season to host an outdoor baby shower, as the weather is warm but not hot and the scent of fresh flowers is in the air. It was the perfect setting for the “Garden Tea Party Shower” Tiffany designed and coordinated for her client. The all white flowers looked so soft and beautiful arranged in the pitchers and tins.

We utilized the flowers of spring for this shower; incorporating roses, lilies, mums, hydrangeas, tulips and seasonal fillers. The flowers were bunched together to create posies that could be tied to various buggies and bassinets as well as placed in antique tea

What do steeplechase jumps and offside traps have in common?

Not very much since one term relates to a sporting event in the horse world and the other describes a soccer move.

But officials at Temecula Valley’s Galway Downs Equestrian Center, which made a major debut last year as the first ever West Coast host of the prestigious Olympic-grade CCI 3*** equestrian event, believe there can be plenty of common ground between both terms and both sports. And they hope to prove it by converting part of the horse center’s 240-acres into much-needed soccer and athletic fields.

It’s just common sense, they say.

“The equestrian center only takes up about a hundred acres about 99% of the time,” said Galway Downs manager Robert Kellerhouse,“ adding that the facility, located in the Valle de Los Caballos area, is proposing to use 63 acres to create 24 athletic fields for soccer and other “grass field” sports.

“Ken Smith, Galway’s new owner, has been a long-time proponent of soccer sports in the Temecula Valley,” said Kellerhouse. “So when he bought the equestrian center out of foreclosure last fall, he not only wanted to enhance the equestrian activities, but he also

had it in mind to put in soccer fields.”

The Arsenal FC, a 1500-member youth soccer organization based in Temecula, is planning on making the Galway Downs sports complex its home base, and hopes to begin practices there this summer. For the last eight years, the club had used another soccer complex in Temecula, but that sports park was closed to the public last year.

Also proposed to be included at the Galway Downs sports area are plans for two 4,800-square-foot shaded structures for concessions, field lighting and 1,930 parking spaces.

Athletic programs will be limited to select sports, according to Kellerhouse.

“If it’s a sport that uses a hoop, rim or bat, we can’t have it there. And no sports using wheel-vehicles, and no motorized sports,” he said. “But we can have sports like field hockey, football, and of course, soccer. Polo would be a great fit there too.”

There are other non-sports-related events that could be held at at the Galway center like dog shows which are crowd pleasers, Kellerhouse added.

In a recent interview, Country Review Magazine spoke with Supervisor Jeff Stone about balancing quality of life issues and carefully considered land use planning with the heady promise of a Napa-style tourism economy in the rolling hills of the Temecula Valley Wine Country.

The winery tourism business in the Napa and Sonoma wine regions has been a successful money-maker for decades. Do you envision a similar business model being used in Temecula Valley Wine Country?

Of course, since this area is also a wine-producing region there are a lot of similarities in ambience and appearance. But there are some differences that could make it easier for Wine Country here to more cohesively develop local economic growth. Napa, for example, has land owners who own very large properties each consisting of hundreds of acres or more, and there is not a lot of subdivision there. Also, Napa is mostly zoned agricultural so that means most of the tourism revenue from hotel TOTs (transient occupancy taxes) and sales tax is generated in the towns and areas surrounding the Napa vineyard regions.

The Riverside County Wine Country Community Plan proposes to allow a hospitality zone (along with an equestrian zone and a residential zone) in which wineries, hotels, restaurants and special event facilities can operate, so much of the revenue from those taxes can be generated locally. Added to that will be the creation of thousands of jobs here which will increase local revenues overall.

After a trip to the idyllic wine region of California’s Napa Valley two years ago,

Riverside County Supervisor Jeff Stone became convinced that the picturesque Temecula Valley Wine Country, already a premier tourist draw for the county, might have an even more sparkling future to uncork.

Inspired by the potential to transform the local wine-producing region into a world-class destination in addition to hearing increased interest from local and out-of-area vintner-related businesses, Stone launched an effort to update the county’s planning blueprint to accommodate future winery tourism growth in the valley and still continue to protect its unique rural charm.

The 20,000-acre region, located within the county supervisor’s district, contains both the Citrus Vineyard and Valle de Los Caballos policy areas, home to vintners, citrus growers, equestrians and residents. While zoning ordinances and policies have been in effect for Temecula Valley Wine Country since the 1980s, county officials are now in the process of revisiting those zoning policies, as well as proposing a merger of the agricultural and equestrian use policy areas along with some nearby residential areas of estate homes.

Last year, Stone commissioned the 18-member Wine Country Advisory Committee to work with county planners in order to represent the interests of the diverse groups in the valley. That panel is currently studying and reviewing anticipated growth, zoning changes and infrastructure projects under consideration for Riverside County Wine Country Community Plan.

our TOWNSvery dark at night. The roundabouts work by forcing traffic to slow while approaching intersections. They’re very popular in Europe too.

Another of the proposals in the Wine Country Community Plan is the establishment of multi-use trails. Has that been done in other wine country regions?

The multi-use trails are going to be a pretty cool part of Temecula’s Wine Country. I am not aware of any other vineyard regions in the state which have trails for hiking, non-motorized biking and riding horses. Having the trails in place is another way we are looking to contrast our wine country with other wine-growing regions like Napa Valley. And the trails are going to be landscaped, have grape vines and be fenced. They are definitely going to add something very unique here!

So far, it’s been a careful process to get the Riverside County Wine Country Community Plan under way. But you are quite optimistic about how the plan will positively affect the area’s future, aren’t you?

It’s very exciting, and I think it’s a wonderful project because I love Temecula Wine Country. One of my favorite things to do is take friends and guests to the wineries... even if I always end up being the designated driver. (Laughs.)

But this really is a once-in-a-lifetime opportunity to set up an orderly plan for a clean, green, wine-producing business region that can be as much of a tourism draw as the wine valleys in Northern California. I believe there is some amazing potential for Temecula Valley Wine Country’s future, and it is my goal to get The Riverside County Wine Country Community Plan before the County’s Board of Supervisors for approval before the end of this year.

Temecula Valley Wine Country currently has 35 wineries operating now, and according to county planners, there are 30 more winery projects anticipated to be completed in the next five years. But the county’s projections for this region show that there could be—similar to Napa Valley—up to 125 wineries by the year 2035, the plan’s build-out date. Do you think that is realistic?

I think it’s very possible. Right now there is approximately a billion dollars of projects in the pipeline for new and existing development in Wine Country. Some of that is for major expansions by established wineries; about 20 percent of the pending projects are for large wineries with the remaining 80 percent for small and mid-size wineries on 10- to 40-acre parcels. Additionally, there are proposals for six new resorts with over 600 rooms and another twelve restaurants.

We are encountering a lot more interest about this area. Our website www.socalwinecountryplan.org, which was created to keep people informed about The Riverside County Wine Country Community Plan, received more than a 100,000 hits in one month alone earlier this year.

How will infrastructure costs and road beautification costs be financed?

We are not looking to tax any residents in Wine Country to finance commercial enterprises. I want to make that point clear. But we are considering other finance mechanisms such as developer fees. Other funding sources could be challenging with the shortfall in the California state budget, but we are continuing to hope that our share of Prop 42 money (the Transportation Congestion Act passed by voters in 2002 to allocate gasoline sales tax revenue to transportation projects) will come to us.

We’re also factoring in redevelopment money that can be used, but that is if the state doesn’t steal redevelopment funds from the counties to bolster its general fund. That is a real concern.

Speaking of road beautification, one of the proposed ideas to slow down traffic on Rancho California Road in Wine Country is to use roundabouts which is a new idea for the area. Is using roundabouts new for the county?

They have been installed by the Morongo Casino, and have worked very well for them to slow traffic. I think roundabouts are a good solution for reducing traffic speed on Rancho California Road. One of the problems for Wine Country is that motorists drive up to 80 miles per hour along that two-lane road, which is the main corridor to the wineries. Tourists who are unfamiliar with Wine Country use that road, it’s also a wildlife corridor, and it doesn’t have street lighting so it’s

faces behind the PLACES

Most people know Terry Gilmore as the nattily dressed owner of Paradise Chevrolet and Cadillac in Temecula. Most people don’t know how he got there.

Terry grew up in St. Louis, Missouri and had his first job at a bowling alley at the age of six, cleaning up people’s empty beer bottles and other trash discarded around the facility. His parents were avid bowlers, so Terry would work while they were there for their leagues, and was paid at the rate of three free games per hour. The men that owned this bowling alley were part of the Budweiser professional bowling team and were five of the best bowlers in the world. All the kids that frequented the place wanted to be just like them. So, as Terry got older, he began competing, and was very good. In 1966 he was drafted into the Army and served in Viet Nam until 1968, when he went back to the bowling alley and continued competing. As a matter of fact, Terry took his now-wife, Cindy, on their first date to a three-day bowling competition, which would end up being his last game for many years.

At this point, Terry had decided that he didn’t have much of a future in professional bowling, and chose to relocate to Phoenix, AZ. There he went to work for a friend’s dad at a car dealership, which would become a life-changing decision. He went from making $8-9,000/year to $1,000/

week - he had found his home. It was in Phoenix in the late 1970’s that he would meet the man that would become not just his business partner, but also his best friend - Bob Gregory. Bob was the one that helped Terry get started with Paradise Chevrolet. February 2012 will be the 20-year anniversary for this well-known dealership. Terry feels that Paradise is distinctive in that is has “grown up” with Temecula. The current Dodge location on Ynez was the original Paradise location, and they have been in their current site since 2000.

One of the things that makes Paradise distinct in the community, is that they are integral IN the community. Terry and Paradise support over 300 community events per year, 85 of them golf tournaments with hole-in-one cars. One of Terry’s attributes is that he is passionate about being able to rally people together for a common cause. One of the causes that Terry is most likely to be known for is his involvement with the Boys & Girls Clubs of Southwest County. A founding member of this organization, Terry was one of six people involved in the very first auction to benefit BGCSWC, held in 1993. 150 people attended and they raised the $30,000 needed to complete the Clubhouse still located on Pujol Street. He is still seen at the annual “Our Kids Rock” event (sometimes, in a skirt). Before getting involved with the Clubs, he had never volunteered a day in his life. He is proud to think that BGCSWC and its growth will be part of his lifelong legacy. Once concerned with making the big bucks, Terry is now all about giving back. He feels “the measure of a real man is not about success or money, but about character, a willingness to help others, and being a good friend.” He is a believer in commitment vs. convenience, and says that “many things in life catch your eye, but only a few catch your heart.” Terry has been honored in many ways over the years, including being named Temecula Valley Chamber of Commerce Citizen of the Year three times. But the honor that is most special to him was his induction into the Temecula Hall of Fame in 1999, a plaque on his wall reading “for his significant contributions to the City of Temecula.” Married since 1980, he and Cindy have an 18-year-old daughter, Katelyn, a senior at Great Oak High School. Terry’s oldest daughter, Tina, has blessed them with two grandchildren, CJ and Sami.

Dan Atwood and his wife of 25 years, Katie, have been in the Temecula Valley since 1989. They have lived here, worked here, and raised their two children here. Dan says he feels like a “pioneer,” as he was one of the first to open a business, Toyota of Temecula Valley,

in the newly incorporated City of Temecula in 1991. “I am very excited to have been a part of the growth of the area, and am excited about the growth and direction of our City today. It is a great place to do business and raise a family.” Toyota of Temecula Valley, celebrating their 20th Anniversary this Spring, is celebrating by giving back to the community. Part of the celebration is a Car Giveaway Opportunity Drawing, which is raising funds for local high schools in Murrieta and Temecula. The Bank – Mexican Restaurant & Bar was “a dream come true” for Craig Puma, President of CNC Puma Corporation. Starting out in the finance business for 3 years back in mid 80’s, Craig learned a lot about numbers and the handling of money, but it was being in

sales for 20+ years that taught him the simple philosophy of The Bank… “Work hard to give every customer the best experience possible, every time! I’d never even worked in a restaurant before”, Craig remarked. “But I’ve eaten out a lot and I know what people want: Tasty food, great service and a comfortable and fun atmosphere. And that’s the 3 areas we focus on every day for every customer”.

Funny enough, the “dream” was born from a bad economy and lay-offs. On September 10, 2001, Craig was laid off from a job due to the company going through some major cut-backs and as a newer sales manager, he was one of the first selected. “When “9/11” hit the next day, no one was hiring.” So rather than collect unemployment, Puma started his own company selling shutters and blinds. “It was my first business and it was a raving success, but it was never anything I was really into. It just paid the bills.” After 2 years, Puma walked away from that company and went back to work in corporate sales. Over the next 3 years he would go through 2 more lay-offs due to corporate restructuring. In 2006 he decided enough was enough. Having his own business was the path he would take. And while sitting in a car wash, reading “Homes and Land” magazine, he saw the ad for a little Mexican restaurant for sale in the center of Old Town Temecula.

The owners had left the restaurant in the hands of their two children. Both had said they were a bit worn out from the restaurant industry. They had been either helping mom and dad or running the restaurant for 29 years. And they were only in their mid 30’s”. Thinking the idea was a little too

crazy, coupled with the fact it was looking like it could be possible to make it happened, Puma was as scared as could be. But, the daughter of the owner, Sandra Covarrubias, offered to stay for a year and one of the servers, Blanca Nguyen was an inspirational friend who offered to help. Raul Romero, who had worked at The Bank for years previous, would head the kitchen. Puma talked his wife into jumping on board and moving forward with the idea. “I worked another job for 3 years while running the restaurant, relying heavily on my wonderful wife to be the top operational person at The Bank”. The plan has worked out perfectly. Being one of the best moves of his life, the Puma’s have now opened their second restaurant, The Tilted Cactus, in Anza, Ca. Sandra is the Manager and Raul is head chef. The Grand Opening is set for April 22-24.

However, the achievement that Christopher is most proud is his building Big Fogg by himself from the ground up with no outside capital or partners. Out of his one-bedroom apartment in San Clemente, he started BigFogg.com in 1999. Big Fogg was initially a website company that serviced Christopher’s contacts in NCAA football and the NFL. Big Fogg is headquartered in Temecula, CA with offices in Jacksonville, FL and soon in Austin, Texas. In 2010, Big Fogg was honored to be awarded Business of the Year by both Temecula and Murrieta.

It has been a long and enjoyable journey for Christopher since receiving his MBA from San Diego State in 1985. He feels lucky and proud to be a member of the community. He is also happy to be doing work that he truly loves. But then again, Christopher does not consider it work, because he is having so much fun. He takes so much pleasure from the career that he invented that he has no intention of ever retiring.

Mark Anselmo has been a resident of Temecula for over 18 years and has marveled at the amazing growth of the community - not only in numbers, but also in character and service. He has a wonderful wife, Kathy, and two incredible sons, Anthony and

Nicholas. Mark is a Financial Advisor by trade, but was called to the non-profit world after his son, Nicholas, was diagnosed with Autism seven years ago. He and his wife formed Our Nicholas Foundation initially to help fund the needs of special education teachers and therapists to purchase the tools necessary to help those diagnosed with autism. After having five “Auction for Autism” events and multiple other fundraisers including golf tournaments, their services and goals have now expanded. The Foundation now organizes educational forums, social groups for both children and parents, peer buddies within the schools, sports programs (i.e. “Kick with Nick” soccer program) and more. Their support group network now exceeds 125 families in the Temecula Valley that meet for play dates and social activities as well. They feel this is just the tip of the iceberg since there are over 800 families dealing with the diagnosis of autism in the Temecula and Murrieta areas alone and now 1 in 91 children are being diagnosed. ONF is 100% volunteer-run and Mark says he cannot thank their dedicated Board, the ONF families and the business community enough for their continued support. The date is December, 1996. A young Adam Bouvet is the first full-time employee of the Mill restaurant in historic Old Town Murrieta, washing dishes and learning the food service industry. Flash forward to 2011, and Adam is now part owner, alongside

founder Linda Westfall. In speaking with Adam, his love for this local landmark is evident. Also clear is his dedication to and appreciation of his employees. With over 30 people working at the restaurant, Adam could certainly spend all day commending each and every one of them - as a matter of fact, he says that his entire staff is an extended family to each other. They work hard and treat the business as their own, which gives Adam peace of mind when he is away that the employees care as much about the Mill as he does. With the restaurant and his Real Estate business, Adam stays hopping, and he’s not always able to be present at the Mill. He wants to publicly acknowledge his kitchen staff for the great work they do. John Strange - with the Mill for 10 years, who powers through the busy breakfast traffic every weekend and has not missed a breakfast shift in over three years. Matt, Tony, Glenn, Brandon and Michael ... these guys keep things running backstage, and Adam wishes to express his most sincere appreciation to them, the behind-the-scenes dynamos that create the delicious meals that one anticipates when visiting the Mill. Most of the Mill’s employees are referrals, family members, or long-term customers - Adam doesn’t have to look for people to work there - they come to him. He says that his amazing team gives the term “Family Restaurant” a whole new meaning. Adam especially appreciates the fact that his employees all want to be at work - they enjoy their jobs and the people they work with, evidenced by team “road trips” to various sporting events during the year. Paul R. Villamil, Assistant Branch Manager for AppleOne Employment in Temecula, relocated from Orange County to the Temecula Valley in 2005. He actually started his career with AppleOne in 1994 while finishing his senior year at the University of San

Diego, where he graduated with a Bachelor’s Degree in Business Administration with an emphasis on marketing. As owner of Old Town Temecula’s Chopper Gallery since 2008, Kraig Kavanagh has seen just about everything in the motorcycle world. The Chopper Gallery has carved a niche for themselves to provide

gently used custom motorcycles, certified pre-owned Harley-Davidsons and other heavyweight cruisers. Customers owning motorcycles that retain all of, or most of their value enables them to trade up or down or laterally at any time thus making it an enjoyable ownership experience. Kraig’s background is in manufacturing and design. Chopper Gallery also offers a full service department, and watch them grow - they are in the middle of an expansion. Kraig’s transition into motorcycle sales and service is a natural one, as he did design work for Harley-Davidson Limited Edition and Screaming Eagle programs for eight years, and also designed paint schemes for Yamaha, Kawasaki and Victory Heavyweight motorcycles. Kraig enjoys the pace of the store and getting to know all of their fantastic customers one-on-one, versus spending days “fighting fires” at the bigger companies he has owned or managed. His oldest son, Karson, works in the store and Kraig enjoys this time with Karson immensely. Chopper Gallery also has shown that they enjoy giving back to the motorcycle community, as several charity rides use the store as their “home base.” Kraig and his team try and do as much for every ride that they are made aware of as they can. Kraig has a passion for motorcycles, both street and dirt. He got his first bike when he was only 9 years old, a Honda 50cc street bike that he converted for trail use, and grew up riding the trails in what would become Corona and down to Lake Elsinore before the existence of the 15 or the 91. The Chopper Gallery’s business model is to emphasize customer service, customer service and more customer service. Kraig insists on developing and maintaining the personal connection that he says is missing with many companies. This is obvious by their new business being almost 50% referrals. Kraig’s late father spent a lifetime in sales, and once told Kraig that your customer is like the front wheel of your bike - all the pedaling in the world will get you nowhere if it’s missing. “Say what you do, do what you say.”

Brad was also one of the pioneering attorneys in mold litigation in the late 1990’s. Beside law, Brad’s passion is in martial arts. Currently, Brad holds the position of Chief Inspector for the official sanctioning body of the State of California for Amateur Mixed Martial Arts Cage Fighting. His role is to run the crew of officials at fights, oversee weigh-ins, and keep everything running smoothly during the event in partnership with the promoter. Before MMA was recognized as a professional sport, fights used to be held underground illegally. Now, the safety and integrity of the sport is held firm by officials such as Brad. Brad lives in Temecula with his wife Robin, a breast cancer survivor; and his two daughters, Sarah (16) and Alyssa (11).

This is pretty wild - fast paced off-road desert racing. Hitting speeds of over 100 miles per hour across hundreds of miles of rough, gnarly desert. One must be fearless,

as this sport isn’t for the faint of heart. Murrieta resident Mike LaPaglia and his sons Michael (22), Tony (19) and Nick (16) take to the dust and sand most weekends to compete or train in this exciting sport.

Competing in Class 10, Team LaPaglia Motorsports’ race car is geared by a 4-cyclinder 2.5 liter Echo Tech engine, producing 200HP. Driving the car built by Racer engineering, primary driver Michael can reach speeds of 105+ mph while racing through the rough desert washes with bumps up to four feet tall. All of this taking place while using 91 octane fuel. Younger brothers Tony and Nick serve as co-driver and navigator, and are gaining valuable experience with every race . Michael raced professional motocross and supercross for four years, and has been on a dirt bike since he was three years old. He is no stranger to the dirt race course. The LaPaglia family has been involved with racing for their entire lives, and desert offroad racing is just the latest edition to their list. This treacherous racing terrain consists of

sand washes, canyons, rock gardens, fire road switchbacks, long dry lake beds and water crossings.

For a relatively new team to the sport, the LaPaglia’s are hitting the ground running. They have competed in several races over the past year, and stand at seven wins and three losses. They took first place in their class at the Parker 425 presented by “The Best in the Desert,” and have also won in sanctioning bodies of SCORE and Snore. Events take them to Vegas, Arizona, Mexico and beyond. Race courses typically have laps of 50-150 miles, with pit stops in the middle and a traditional pit at the main starting point. Race courses are set up by race officials weeks prior to the event and all riders are equipped with GPS navigation to manage themselves through the course.

The LaPaglia team is sponsored by BFGoodrich, VP fuels, Fox Shocks and others to help support this racing program. Making a living at this sport is unlikely, but anyone who knows this sport knows that the participants aren’t in it for the money. The thrill of the ride, the austere beauty of the desert and the excitement of the finish are all the compensation these boys need.

It’s no contest.

As thousands of third graders in Southwest Riverside County will enthusiastically tell you, going hiking in the Santa Rosa Plateau Ecological Reserve is a lot more fun than sitting at their school desks.

Where else can they do things like check out cougar tracks, look for owls and woodpeckers, sniff at “pizza” and “popcorn” plants, and hang out under grandfatherly oak trees? And, best of all, there are cool, funny guides like park interpreter “Ranger Rob” who can tell them about the times that grizzly bears roamed the area or how giant granite boulders end up as tiny grains of beach sand thirty miles away.

The force behind making those n a t u r e - f i l l e d moments happen is the Santa Rosa Plateau Foundation (SRPF), a non-profit organization formed by 13 volunteer docents in 2003, when the

Metropolitan Water District stopped underwriting the school tour program after nearly ten years. The foundation’s mission is to preserve the 8,400 acres of ancient oak woodlands, mystical vernal pools and rare prairie grass meadows, as well as fund research and education about the pristine paradise. And the organization’s priority is on funding and operating an outdoor educational outreach program for students, one which meets California’s elementary science curriculum for third grade standards. The organization currently works with 70 schools in eight school districts.

“We want to inspire children to learn about and care for the natural world,” said Ginger Greaves, executive director of SRPF.

“The kids come up here, and get to see, maybe for their very first times, a place without houses and streets and grocery stores. They see wildlife, and they learn about many of the hundreds of plants and animals that live here—some of which are endangered. And then they go home and tell their families all about it.

“But not only are the third graders having a great time on the trails, they’re absorbing information provided by the docent guides about the flora and fauna and even the rocks at the reserve,” said Greaves, adding that the children participate in a brief written quiz at the end of each hiking tour.

“We have seen a 32% increase in the information that kids are retaining from what they learn about the natural habitat at the plateau reserve,” she said, “and the foundation’s outreach program is only in its third year!”

However, getting busloads of eight- and nine-year-olds to the ecological site, located in the mesa lands above the cities of Temecula and Murrieta, costs money. With the current shortfall in California tax revenues, cash-strapped school districts have had to cut back on transportation needed for field trips, so a

Oh, the beautiful Temecula area. Famed as Southern California’s up and coming Wine Country, it’s also getting

a reputation as a great place to catch some amazing live shows. Artists from all eras have come through Temecula in the past few years but the ones that I look forward to seeing the most are the ones that hail from my KROQ days – the eighties!

This summer, a couple of great headliners are playing Temecula – Lee Rocker of The Stray Cats and Dave Wakeling of The English Beat and General Public. Ironically, I saw them both the same day, May 28th, 1983 at the second US Festival in San Bernardino. They were sharing the bill with the likes of The Clash, Van Halen and David Bowie and went out to perform to an audience of more than 200,000 screaming fans! When the crowd started to dance the dry dirt was whipped up by their frenzied feet and almost obliterated the artists’ view from the stage of the fans. It was that day that Danny Elfman from Oingo Boingo whispered to me that it should have been called the “dust festival.”

Now Dave and Lee don’t have to worry about the dust; instead they’ll be performing on a great stage in an intimate outdoor setting under the stars and that suits them both just fine.

Dave Wakeling, who has been a dear friend since the ‘dust festival’ days told me how he still loves to play live and to make sure he gives the audience what they love – the hits. And what a hitmaker Dave is. With a catalogue of gold records that include ‘Mirror In The Bathroom,’ ‘Tenderness’ and so many more, Dave’s one problem is squeezing in all the hits! I don’t think a day goes by on my SiriusXM show when I don’t play at least one song by Dave. You’ll be able to catch Dave Wakeling playing all the English Beat and General Public hits on May 27th when

he headlines at Wiens Family Cellars with me as his special DJ opening act.

Just like at the US Festival, Lee Rocker is going to be sharing the same stage as The English Beat – only this time about a month later. Lee will be at Wiens on Friday June 17th and if you love rock’n’roll and rockabilly then this is the show for you! Lee, who has been playing stand-up bass since he was eight years old, was a founding member of the Stray Cats, who shot to fame in 1982 and whose videos helped put the early MTV on the map (long before Snooki and Jersey Shore). It was almost pre-destined that Lee would end up a musician; after all his father, Stanley, is a Grammy nominated clarinetist and his mother, Naomi, teaches music at Hofstra University.

And talking of Stray Cats...I just want to take a moment to thank one of the beneficiaries of the shows, Animal Friends of the Valleys. My wife and I are big into animal charities and personally have four rescues at our house, two dogs and two cats. And contrary to stereotypes, they all get along fine – obviously the dogs haven’t read the instructions that they are meant to chase the kitties, so they cuddle with them instead. According to the U.S. Environmental Protection Agency (EPA) the air inside our homes may be two to five times

more polluted than outdoor air. What’s surprising is that this statistic does not exclude newer homes, which can actually test higher than older residences in terms of poor indoor air quality.

In a rush to conserve energy in the 1970s, builders, architects and designers began building tighter homes with energy efficient windows and doors and thicker insulation in an effort to seal out potential drafts. While we succeeded in lowering the cost of energy bills, we ended up adding to the problem of trapping volatile organic compounds (VOCs) - harmful fumes caused by leftover building products, furniture, animal dander, and indoor mildew and mold - inside our homes.

Below are five steps you can take to improve your home’s indoor air quality. By following these steps and coupling them with the right indoor air purifying unit, you’ll breathe a lot easier in your own home.

Step One: Test your home for possible contaminants.Today, there are a number of in-home test kits available to assess everything from lead on walls and in your drinking water, to asbestos and radon gas.

Step Two: If you have a forced air heating system, have the air ducts cleaned regularly and upgrade to better furnace air filters.Homeowners often ask, “Is cleaning my air ducts worth it?” The answer is yes. When getting your air ducts cleaned, make sure the contractor is a member of the National Air Duct Cleaners Association (www.nadca.com), and uses not only high velocity air, but a whip that is fed through the ductwork to loosen any debris stuck to the walls of the sheet-metal.

Step Three: Keep your home as clean as possible.According to the Asthma and Allergy Foundation of America (AAFA), an estimated 57 million Americans suffer from severe allergies and asthma and keeping your home as clean as possible can dramatically improve the air you breathe.

Step Four: Consider purchasing an indoor air purifier.Because they can vary in performance, size and cost, it’s important that you find the right purifier to fit your needs. There are a number of websites you can turn to for help. If you’re thinking of a particular model and in search of its product rating guide, visit www.cadr.org for the unit’s “clean air delivery rate. Portable units, when sized correctly, can do a good job of cleaning the air in a particular room. But the key is to make sure that unit is sized for the square footage of

that room. HEPA room purifiers can range in price from $30 to $300. The Holmes units that are available at participating Ace Hardware (Ace nos. 6105076 and 6091227) are some of the best performing units on the market. These units use a modular filter system which makes finding and installing the filters much easier.

Step Five: Protect your family by installing a carbon monoxide detector.It used to be that smoke detectors were enough to protect your family. However, in recent years, homeowners across America have been taking safety a step further by installing carbon monoxide detectors in their homes.

BUSINESS OR CUSTODY In a regular family, balancing business and family can be a task in and of itself, but what if you are divorced? How do you balance business and custody and how does your work schedule impact the judge’s decision? In California, it is improper for the court to base a custody decision on a parent’s work schedule. In In re Marriage of Lloyd (2003), the trial court granted the mother’s request for primary custody in a post-judgment modification proceeding, basing its decision on the mother’s ability to care for the children at home because she did not work, whereas the father had to work full-time and place the children in day care. The appellate court reversed the trial court’s decision, finding that the trial court’s reliance on the mother’s ability to stay home, in contrast to the father’s need to work, “was improper and constituted an abuse of discretion.” The law recognizes that reliance upon the asserted superiority of a parent’s child care arrangement suggests insensitivity to the role of working parents. A custody determination must be based upon a true assessment of the emotional bonds between parent and child, upon an inquiry into the heart of the parent-child relationship...the ethical, emotional, and intellectual guidance the parent gives to the child throughout his formative years, and often beyond. It must reflect also a factual determination of how best to provide continuity of attention, nurturing, and care. It cannot be based on an assumption, unsupported by scientific evidence, that a working parent cannot provide such care.

Other jurisdictions have come to similar conclusions. The New York Supreme Court, Appellate Division, explained that a parent who worked outside of the home should not be penalized for his or her employment. The Supreme Court of Vermont noted a trial court’s award of custody to a father was inappropriate where the rationale was based upon the fact that the child would have to spend less time in daycare with the father than with the mother. In Alaska, the Supreme Court held the trial court abused its discretion in awarding custody of a child to his father based upon the fact that the father would likely remarry and provide his child with a “two-parent household.” Likewise, the Pennsylvania court noted that a parent may not be deprived of custody based upon his or her work schedule if adequate arrangements are made for the child’s care in the parent’s absence.

big portion of SRPF’s fundraising monies goes to pay for bus transportation.

“The buses are expensive and the schools can’t afford it, but we don’t want to stop the touring. The program is too important,” she said, adding that historically SRPF has set aside $45,000 per year to pay for bus transportation, but additional funds may be needed this year as the outreach program is drawing interest from more schools.

Additionally, the foundation has plans to embark on a program for middle school students to participate in a native grasslands restoration project at the reserve.

According to organization officials, SRPF has raised more than $350,000 since its formation. Fundraising is done through memberships, private donations, grants and special events such as photography exhibits, a yearly art show (usually held during the summer months) and the upcoming 8th Annual Santa Rosa Plateau Garden Tour on April 30. The fundraiser will include seminars, tours through six garden estate homes in Tenaja Valley and La Cresta, and a drawing for a helicopter ride over the Santa Rosa Plateau.

Other fund-raising events currently being considered by the foundation, are intimate musical concerts which would be held at the reserve’s visitor center.

But it doesn’t matter if you are nine or 90 years old, visiting the Santa Rosa Plateau is a great way to experience a still untouched part of California. There is a bounty of wildlife, oak trees that are hundreds of years old, some of the largest remaining vernal pools in the state, and several not-too-strenuous trails throughout the site. Also on the reserve is a bit of human history; two adobe buildings which date back to 1846 and 1855 respectively, making them the oldest standing buildings in Riverside County.

So, go on. Don’t let the kids be the only smart ones to know about the wonder of the Santa Rosa Plateau Ecological Reserve. Take a hike, and get amazed and inspired too!

revenues that will come from leasing the athletic fields in the future.

“It’s a good plan,” said Kellerhouse, who hopes to have the first two fields open and ready by August. “I am very enthusiastic about it. It’s by far the best way to increase the facility’s potential that I have seen in the 13 years that I have been involved with Galway Downs.”

County planners approved the plan in February, but it still must go through an appeal process over concern about possible increased traffic, said Kellerhouse.

Before opening more than four fields, Smith, a Temecula businessman, is required to install a new left-turn lane at Hwy. 79 South and Los Caballos Road which leads to the entrance of the equestrian center.

But all the emphasis on the sports center doesn’t take away from the rising star status of Galway Downs Equestrian Center as a very important hub of high-caliber equestrian events.

“There are only 14 sites in the entire world which can host a CCI3*** (or, in French, Concours Complet International 3***) competition,” said Kellerhouse, adding that the center received approval from the FEI, the sole international governing body for the sport of equestrian eventing, to host the CCI3*** last November.

The approval meant that Galway Downs Equestrian Center, first established in 1968, is not only included with the superstar eventing sites in England and the east coast of the United States, it is the very first equestrian facility on the West Coast to ever receive the coveted status. But the change in ranking has been a long time in coming,” said Kellerhouse, who began managing the equestrian center in the late-1990s.

“We had been hosting CCI2** events since 1999, but we had been hosting so many shows and increasing the difficulty levels in the course all along,” he said, adding that the equestrian “eventing” star ratings are assigned by levels of difficulty in completing dressage, jumping and cross-country programs. “So it just made sense to request that a 3*** be held here. I was thrilled when the FEI gave the approval.”

According to Kellerhouse, some highly ranked riders and horses who participate in the CCI3*** events often go on to make it to the rarified level of the Olympic equestrian team.

Both elegant and dramatic, eventing is not for the faint of heart for rider or horse, as either of them could sustain serious injuries during competition. And for the spectator, this sport is equally exciting to watch, since one single rail knocked down during a jump can change the final standings dramatically.

In addition to the CCI3*** eventing competition in the fall, Galway Downs Equestrian Center hosts another major international equestrian event in March, as well as numerous other competitions throughout the year. EVENT IN DEL MAR

Country Review had a front row seat at the annual Winemaker’s Gala at Del Mar Fairgrounds on March 13, 2011. Over 350 wineries - including Temecula’s own Wiens, Hart and Falkner wineries - participated in the annual event held in Del Mar. Country Review publishers Don Harbour and Gregg Hassler were fortunate to be on assignment as both media and wine promoter - Warrant Red is the first varietal offered by Artist Wines. Warrant Red was created in tandem by Napa winemaker Kristian Story and Erik Turner, founder of the double platinum rock band Warrant. “We have had an overwhelming response,” says Turner. Warrant Red received a Silver medal in January at the San Francisco Chronicle Wine Competition - the largest American wine competition in the world. Many people were surprised to see Erik pouring at the Kristian Story Wines table - for fans it was a real treat, and for wine enthusiasts is was a real tasting pleasure - if you were a fan and a wine enthusiast, well then...you had died and gone to - where else - “Heaven.”
