A Letter From the EditorOne of the best things about publishing Cress Creek Links is when we hear about ways
in which the magazine has impacted people positively. This can happen when someone
receives recognition after we do a story about them or when our readers have used the
services of a business that is advertising with us. On this topic, we recently received the
following e-mail:

Also, I was having lunch with some of the guys in the neighborhood the other day and
they suggested we do a story on the cemetery that is just northwest of Bauer Road
and Mill Street – which we will be doing (and I bet most of the people who read this
magazine have no idea it is there!).
It’s these types of interaction that are so rewarding for us in publishing Cress Creek
Links. We truly enjoy getting to know, and sharing with you, all the great things going
on in our neighborhood. I would invite you to send along any story ideas you have – or
if you would like to submit a story – please do so! We’d really be interested in providing
opportunities to our younger writers who may be interested in journalism who want a
great place to get a few stories published. If this sounds like something for you, please

As we’ve said before, this is your magazine and you play a critical role in helping us find

Brad Hudetz’s resume reads like a culinary best seller – not only is he the general manager of his family-owned business, City Meat Market, he’s also worked and trained at some of the most recognized and award-winning restaurants in Chicago. Brad recently took time out on a warm, very busy, Saturday afternoon to share his culinary journey and how he came to revive Naperville’s iconic City Meat Market.
After graduating from the Scottsdale Culinary Institute, he returned home and started his career working in the elite Chicago culinary scene. Working at Les Nomades, a sophisticated, formal French restaurant, which won the AAA Four Diamond Award, was a great way to start. He prepared a Mediterranean/California fusion menu at Naha, which was rated in the Top 100 New Restaurants in the World by Conde Nast Traveler.
His experience at Alinea was like no other. Each customer received an 18-course meal that resembled the likes of a Picasso painting - food was art at Alinea. Hudetz didn't stop there, his love for Italian food brought him to Spiaggia as Sous Chef. It is the only four star Italian restaurant in Chicago overlooking Michigan Avenue. He then returned to his French roots at the world famous Le Francais, perfecting his technique and palette. Hudetz became Head Chef at Courtrights, a four star restaurant in Willow Springs where he had control of the menu and kitchen. Before venturing off on his own, Brad spent time with Whole Foods learning operations and about prepared foods.
Opening a French fusion restaurant would have seemed like the next logical step, but Hudetz said, “I knew for years I wanted to open a local meat market, prepare my own foods and develop relationships with the customers.” He was looking at space in south Naperville when he heard City Meat Market was closing. He knew being able to continue this Naperville tradition was his calling - he felt prepared and this was his opportunity.

City Meat Market originally opened its doors in 1890 at 27 W. Jefferson Ave., in downtown Naperville where Charles Bottger and his three sons ran the store. Over the next century, different owners kept the tradition going. Even as Naperville became more sophisticated, it was still the local butcher shop where they knew you by name. Decreased parking and soaring rents forced City Meat Market to relocate to its current location on Royal St. George Avenue.

Walking into City Meat Market today, there is still a feeling of yesterday. The old butcher block sits in the front window, Brad's brothers and Mom and Dad can be spotted helping out and you'll probably run into your neighbor. For a moment, time seems to stand still, until you look a little further and see the culinary delights in the cases. The meat selections are fresh and beautiful. “I use the same purveyors as the restaurants I’ve worked for,” said Brad. Not sure what to give Mom this year for Mother’s Day... how about a hand and a green thumb in the garden. Patiently, we have been waiting for warmer weather, being teased a day here and there with summer like temperatures. Planting spring and summer annuals is a sure sign summer is in full bloom and here to stay.
If your Mother’s Day plans are low key this year, planting summer flowers together can be a new family tradition and get finished in half the time with so many sleeves rolled up! Take the kids during the week and let them help pick out the flowers, they will be more excited to plant their favorites. What about painting and planting a terra cotta pot for Grandma? Father’s Day, the end of school, the first hours of summer, and longer, warmer days are strong indicators that it’s time to fire up the grills and start cooking!
Nothing says summer like a great steak on the grill shared with family and friends. For the past 25 years, this marinade recipe has been a favorite in our family. On Father’s Day, our entire family would come together for the first barbeque of the season. We all knew marinated filets were on the menu and they would be grilled to perfection. We have shared this recipe with many, and we hope you enjoy it too!

Secret Summer Marinade 2 large onions
2 cloves garlic
1 cup soy sauce (you can also use low sodium)
1/4 cup Kitchen Bouquet
2 teaspoons Lawrey’s Season Salt (feel free to use less)
Place all ingredients in a blender. Blend on high to create a thick liquid. Pour liquid over meat. Marinate at least two hours in the refrigerator. Flip meat once so all sides are covered. Grill to perfection.
Use your favorite cut of beef good for grilling, even a roast. I also have marinated chicken, pork and thick cut onions in this - yum!

Counting down the days until Summer break is a favorite childhood pastime! The last day of school is often celebrated with a trip to Diary Queen, celebrating the year's accomplishments. It’s a quick transition getting used to no homework or early bedtimes, but can take a moment to plan these long, sunny days of Summer.
Start early and make a list of all your favorite Summertime destinations and activities. It doesn’t matter how long or unrealistic it seems, just keep writing. Many activities will be easy to check off - day trips to the Morton Arboretum, a Kane County Cougars game or taking the train into the city. Others may take a little planning - a long weekend in the Upper Peninsula of Michigan or Lake Geneva. Some may be put on the bucket list - visit the Eastern seaboard, eat Maine lobsters, Maryland crab cakes and Philly cheese steaks, all in the same trip.
Whichever category your plans fall into, take full advantage of Summer. Spend time with family and friends, create memories for a lifetime and enjoy the feeling of when a well thought out plan comes together!

Mario Serpico’s Naperville Cobbler Shoe Repair is a testament to hard work and a lifelong dedication to a craft that insists on succeeding today by using the tools of yesterday.
In a non-descript building with the words “Shoe Repair” above his shop, Serpico’s been fixing shoes, handbags, baseball mitts and luggage for Naperville and the surrounding residents in the same Cress Creek Center location since 1981. Located just doors from shops residents have come to notice everyday, such as Lover’s Lane and Chinese Kitchen, Serpico can remember businesses from the shopping plaza that closed their doors many years ago.
“There was an Italian restaurant in here, a pet store, a children’s clothing store and a hair salon,” describes the soft-spoken, almost shy, Serpico, who’s quite unknowingly sending the message that he’d rather be watching thread run through the sole of a shoe than talk to someone about his life. “After three months on Washington Street, I opened this shop in May of 1981 – 30 years I’ve been here.”
Born in Chicago as a son to Joe Serpico, also a cobbler, Serpico says he first started working in his Dad’s shop in the mid-60s, when he was about 8 years old. He moved from the register to the back room, helping fix shoes, baseball mitts and repair leather goods when he was just 12.
“My dad’s shop was at the corner of Howard and Western in the city,” says Serpico. “I would work there on Saturdays. Then my dad got sick and my uncle took over the shop. They downsized the building from six shops to four a few years later and that’s when we closed it. I took a year off and then opened this shop.”
With his uncle not in the business anymore, Serpico chuckles quietly when asked how he takes vacation since he’s the sole business owner.

“The last vacation I took was in 2005 after my dad passed away,” he says matter-of-factly, without a hint of demonstrating how committed he is to his shop. “Since then, I’ve been here every day, every hour that we’ve been opened.”
Taking a break from questions for a few minutes while customers come in, Serpico discusses how to fix the color of a shoe with a long-time customer who calls him a “miracle worker” while another customer opens a bag and says “I’m sure you’ve seen this before and know what to do.”
One of the unique aspects to being a cobbler, says Serpico, is that there’s not much in the way of innovation or recent technology that will help him do what he does – and the equipment in his shop is a clear demonstration of this. On one side of the room is a sewing machine that appears to be 50 to 60 years old – and his work bench looks as if it’s come right from a 1940s Disney cartoon.
“One of the biggest changes I’ve seen is that people aren’t as quick to throw their shoes away as they did 10 or 20 years ago,” he says, wiping his work weary hands on the dark blue apron he’s grown into through the years. “I think people tend to hold on to them longer than they have in the past.”
And as today becomes the past and tomorrow’s just ahead, Serpico just kind of shrugs when asked how many more years he expects to keep his shop open – almost as if he expects tomorrow won’t be any different than the past 30 years in Cress Creek Square.
Serpico’s Shoe Repair is open Monday through Friday from 9 a.m. to 6 p.m. and Saturday 9 a.m. to 3:30 p.m. The shop is on the northwest corner of Ogden Avenue and Royal St. George in the Cress Creek Square shopping center.

IT IS TIME FOR THE 137TH KENTUCKy DERBy!
Of the 40,000 thoroughbred colts born each year, only 20 three year old’s will make a “Run for the Roses” on this greatest day of horse racing.
Churchill Downs in Louisville, Kentucky, with its landmark white and green Twin Spires is home to the Kentucky Derby. Over 155,0000 people will attend the Derby this year to watch elite athletes, both horse and jockey make history on the first leg of the Triple Crown. People all over the country take part in the many traditions only experienced on this day. Fans are glued to television sets in hopes they placed a winning bet and rooting for the favorite or long shot.
The Kentucky Derby is steeped in old fashioned, southern tradition. Every year, along with the horses taking center stage, so do the women’s hats. This long standing Derby tradition has women shopping for months in the finest boutiques searching for that lavishly brimmed hat that may only be worn once and then neatly tucked away on a shelf, but for today, it is the most important accessory.
First served in 1939, the Mint Julep may be one of the most iconic sporting event drinks. It is as serious as drinks get - Early Times whiskey, water, mint, sugar, and ice. The drink may be served in an ice frosted silver mint julep cup, but most Derby fans purchase them in commemorative glasses listing all of the past year’s Derby winners. Getting the glass autographed by the winning jockey always adds to the excitement and value.
As horses and jockeys make their way through the grandstands onto the track, the crowd roars as the University of Louisville plays “My Old Kentucky Home.” Fans wave their mint juleps as they sing this Derby anthem, loud, proud and in unison. Everyone is a Kentuckian, if only for a day.
One of the most elegant traditions is the blanket of fragrant red roses laid over the winning horse in the Winner’s Circle. In 1904, the red rose became the official flower, and in 1925, the Kentucky Derby was called the “Run for the Roses.” you may remember Dan Fogelberg’s “Run for the Roses” for the 1980 Derby. Each year, 554 roses are sewn into a green satin backing with the Commonwealth of Kentucky and the track’s signature twin spires. Another tradition started in 1996 when the blanket of roses was sent to Danville, Ky., to be freeze dried. The Kentucky Derby museum has a silver dipped rose on display from 1982 winner, Gato del Sol.
The Kentucky Oaks race is the little sister event to the Kentucky Derby, but don’t be fooled, this day is all about the fillies, lilies and pink! you may have heard buzz about a filly named Rachel Alexandra. She won the Oaks in 2009 by 20 1/4 lengths, a track record.

Kentucky Oaks Day has its own traditions, the biggest one being the color pink! Men and women alike wear pink on this special day, officially named, “Ladies First.” Churchill Downs has partnered with the Susan G. Komen and Horses and Hope charities raising money and awareness for breast cancer. There also is a Survivors Parade, with 137 breast cancer survivors walking the track this year prior to the Oaks Race. It is truly a special event you can watch on television.
If you’ve ever smelled a Stargazer lily, you know it’s a little bit of heaven. Imagine 133 of them. That is the number of lilies used for the winners blanket, with a little oak ivy weaved in between.
The day wouldn’t be complete without an official Kentucky Oaks drink. The Oaks Lily is delicious and a refreshing cocktail made with vodka, sweet and sour mix, cranberry juice and triple sec.
Even if you aren’t at Churchill Downs on the first Saturday in May, you can still enjoy the sprit and tradition of this great event with friends and family at home. Pick your favorites and hooves crossed....your number comes in.

It’s funny how the passage of time can shift our perspectives on events. At times, when we are in the middle of them, they may not seem so special. It’s just another invitation or family obligation we feel we must meet. As time goes by, those obligatory dinners and invitations turn into “the good old days” and “back in the day” memories. At this time of year, memories of past Father’s Days gently creep into my mind. We really didn’t do anything special, invited my Grandparents, my Uncle (my Grandfather’s identical twin), my cousins and some close family friends over for dinner. I watched my Dad surrounded by white smoke, eyes burning and sweating over the hot grill perfectly cooking our steaks to order. It didn’t look like the way to spend a day honoring Dad’s, but it is what we did, every year.
My Grandfather with his Canon AE-1 in hand taking pictures all day and gathering us for family photos. When I was a teenager, I’m sure I wanted to be somewhere else with my friends just hanging out. But as I look back, I wouldn’t have been anywhere else, and not doing anything special, well, was really something very special. Father’s Day is a day to honor all the wonderful men in our lives who do so much for us each and every day. So, take pictures, make cards, get new grill tools, a new grill, or buy Dad one more tie or golf shirt that he really doesn’t need. Regardless of the gift, how big or small, he will open it graciously, tell you he loves it and say thank you with a huge smile. So this Father’s Day when you are sitting around the table, or at the ball game, or watching your Dad or husband grill, take a moment and realize....that today is the“good old days.” Happy Father’s Day!

Common Spring and Summer Injuries
The snow has finally melted, the birds are finally chirping, and the Canada geese have returned-- it must be springtime in Chicagoland. It’s the time to break in the running shoes, bikes, racquets and clubs, as well as the braces, ace wraps and tape. While spring and summer are the best time to get outdoors, it’s also a common time for injuries to occur, often involving the ankle, elbow and knee.
The most common injury in sports and recreational activities is an ankle sprain, which is an injury to the ligaments holding the bones of the ankle joint together. This type of injury is commonly sustained by rolling the ankle toward the outside of the foot, usually during running or jumping activities. Most of these sprains are mild and can be treated at home, with the “RICE” rule: Rest, Ice, Compression, Elevation. Mild sprains are characterized by minimal swelling and very little, if any, bruising of the joint. Rest, ice and elevate the foot as often as possible for the first few days. Compression can be achieved using an ace wrap from your local pharmacy. These injuries usually take up to two weeks before one can return to normal activities. When should someone seek medical attention? If the ankle has significant swelling, bruising, instability or there is an inability to bear any weight on the injured foot. Significant and recurring sprains may require
more aggressive treatment by a specialist and months to fully recover. Prevention of recurrence is the key to prevent instability and long-term problems.
Another injury often referred to as “tennis elbow” is common among active adults. This condition is caused by chronic overuse of the muscles and tendons that extend the wrist, causing pain on the outside of the elbow. Often described as an aching pain, this condition typically involves morning stiffness, which may cause frequent dropping of objects. The good news is that studies have shown that tennis elbow symptoms often resolve on their own and without surgical intervention. However, the bad news is symptoms may take up to a year to fully resolve. Anti-inflammatories such as Motrin or Aleve may help with pain and many healthcare providers will recommend wearing a brace to alleviate stress on the tendons. Physical therapy is often a helpful adjunct in treatment.
So remember, an apple a day may keep the doctor away, but injury prevention (e.g., stretching) will help keep surgery at bay!

Cress Creek Country Club members improve their golf game this Spring in Scottsdale.
This Spring, Wally Hynes, PGA and Cress Creek Country Club golf pro, hosted members at the Westin Kierland Resort and Spa in Scottsdale, Arizona. Members enjoyed the beautiful Arizona sun while attending classes and perfecting their game on the course.
Benjamin Nachtwey, PGA, has been named the new First Assistant Golf Professional here at Cress Creek Country Club. Nachtwey spent the last five seasons as an Assistant Golf Professional at Stonebridge Country Club. He also has served in the same capacity in previous years at The Ocean Reef Club in Key Largo, Fla., RedTail Golf Course, and Indian Lakes Resort. He is a Class-A PGA Member, has given over 1,000 lessons in his career, and is excited to forge new relationships with our membership while focusing on tournament coordination and teaching the game of golf.
“My teaching philosophy is to help each student, low or high handicapper, to further enjoy the game by raising his or her level of play,” said Nachtwey. “My hope is that students will notice their enjoyment of the game increase each day as their skills progress. I adapt a teaching style that will allow for the student to not only notice changes to their ball flight,
but to understand why the changes occur. This philosophy is achieved by giving the student drills and related swing thoughts to focus on while practicing. I want to help students realize their potential and further wet their appetite to strive for a better game.”
After a solid high-school career, Nachtwey was the team captain of the Benedictine University golf team and graduated with honors in 2002 with a degree in Business and Economics. He turned pro shortly thereafter and since then has competed on the NGA Hooter’s Professional Tour.

A lot of planning and money goes into a wedding – the dress, the flowers, the location, the band, the honeymoon. But what happens when the “honeymoon” is over? These agreements can divide assets and designate property as “marital” or as “nonmarital” (e.g., property obtained by gift, inheritance, pre-marriage or after legal separation and maintained separate from marital property) at the time of death or divorce. Prenuptial agreements can benefit many couples for various reasons; however, they are particularly beneficial if you own your own business, have significant wealth and/or are entering into a subsequent marriage.
