Ingredients for Cake: 2 cups sifted all-purpose flour 1 teaspoon baking powder 1 1/2 teaspoons baking soda 1 1/2 teaspoons salt 2 tablespoons ground cinnamon 2 cups sugar 1 1/2 cups vegetable oil 4 eggs 2 cups finely shredded, peeled carrots 8 1/2 ounces crushed pineapple, drained 1/2 cup chopped pecans 3 1/2 ounces flaked coconut Ingredients for Icing: 1/2 cup margarine, softened 1 teaspoon vanilla extract 1 package (8 oz.) cream cheese, softened 1 box (16 oz.) powdered sugar

Directions for Cake: Preheat oven to 350°F; grease 2 round cake pans, dust with flour. In a large mixing bowl, sift together flour, baking powder, baking soda, salt and cinna-mon. Add sugar, oil and eggs. Beat with an electric mixer at medium speed for 1 minute. Stir in carrots, pineapple, nuts and coconut. Spoon into cake pans. Bake at 350°F for 40 minutes or until cake tests done. Cool. Directions for Icing: Using an electric mixer, cream together margarine, cream cheese and vanilla. Gradually add sugar, beat until smooth and creamy. Fill layers and front top and sides of cake. Serving Suggestions: Keep refrigerated.
