2 onions

1 oz. barley

4 pints water

1 teaspoon mixed herbs

Salt and pepper

Cut the meat into pieces and remove as

much fat as possible. Cover with cold wa-

ter in a large saucepan. Bring to a boil and

skim. Peel and slice the carrots and tur-

nips. Skin and dice the onions. Add all the

ingredients to the meat. Season to taste.

Simmer for 1½ - 2 hours until the meat is

tender. Serve hot.

Clafoutis with white chocolate & mixed berriesFilling:

• 1 cup white chocolate, chopped

• 2 cups fresh or frozen mixed berries (e.g., raspber-

ries, blackberries, blueberries, and/or strawberries)

• 1 cup whipping cream

• 7 tbsp butter

• 2/3 cup sugar

• 1 egg

• 3/4 cups fl our

Pastry shell:

• 1 cup fl our

• 1/4 cup sugar

• 1/4 cup cold butter

• 1 egg

• 1/2 tsp vanilla extract

• 1 tbsp water

(for kneading)

In a bowl, combine fl our and sugar and cut in but-

ter until butter resembles small peas. Make a hole

in center of fl our mixture and add egg and vanilla

and mix until just combined. On a lightly fl oured

surface, turn dough out and knead, adding water

if needed. Return dough to bowl, cover in plastic

wrap, and refrigerate for 1 hour. Remove from

refrigerator and on a lightly fl oured surface, roll

out dough into a circle then press down and with

fi ngers to form a large circle that will fi t into tart

pan. Line an 8-in (20cm) tart pan with parchment

paper. Carefully place dough in pan and form edges

with fi ngers.

Distribute chocolate and berries evenly on bot-

tom of shell, carefully cover with plastic wrap, and

refrigerate. In a stainless steel bowl or mixer, whip

cream, then cover in plastic wrap and set aside in

refrigerator. In a different or cleaned bowl or mixer,

combine butter and sugar and whip on medium-

high speed until well combined. Add egg and whip

until light and fl uffy and colour changes from yellow

to white. Stop mixer and add fl our. On low speed,

mix until just combined. Do not overmix. With

a wooden spoon or rubber spatula, fold in pre-

whipped cream.

Preheat oven to 350oF (180oC). Remove tart pan

from refrigerator, carefully uncover, and pour filling

evenly over berries and chocolate. Place tart pan on

a baking sheet and bake 45 minutes or until golden

brown, Remove from oven and let cool for 2 hours

before serving.

Fieldstone Juliett esWhile exploring the Dordogne region in France, Paul

Hanley, owner and head baker at Fieldstone Artisan

Breads, watched a talented local baker give a little girl

a cookie at his bakery as a Christmas treat. Paul asked

to try the cookie and later, over a glass of Bergerac, the

amiable baker shared his special cookie recipe. Field-

stone now makes these cookies every year and calls

them Juliettes after the little girl through whom we dis-

covered them. These decadent Christmas cookies have

an intense chocolate flavour - the better the quality of

the chocolate you use, the better your cookies will be!

Ingredients:350 grams bittersweet chocolate

56 grams butter

150ml eggs

112 grams white sugar

150 grams ground almonds

Extra granulated sugar for garnish

Method: Melt the chocolate and butter in a double boiler.

Whip eggs and granulated sugar until mixture is thick

and smooth.

Fold ¼ of the egg mixture into the melted chocolate.

Then fold the melted chocolate into the remaining egg

mixture.

Before the eggs and chocolate become completely

incorporated, add almonds and fold in. Be careful not

to over mix!

Cover and chill completely, ideally overnight.

Form dough into small balls using a melon baller.

Roll balls in extra granulated sugar and place on a

parchment lined baking sheet.

Bake at 325 degrees until cookies spread and are soft

and still a little gooey in the center (approximately 12

minutes).

No-Bake Paleo Chocolate Coconut Macaroons1 banana

¼ cup Almond Butter

¼ cup Coconut Oil

2 tbsp Maple Syrup

5 tbsp raw cacao powder

1 ½ cups unsweetened shredded coconut

½ tsp vanilla extract (optional)

Cover a flat baking tray with some baking parchment.

Mash the banana in a large bowl. Whisk in the almond

butter, coconut oil, maple syrup and vanilla if using to

form a paste. Now add the cacao powder to the mix,

one spoonful at a time, stirring well. Finally, stir in the

coconut, making sure all the mixture is well combined.

Form the mixture into 12 mini ‘macaroon’ shapes, and

place onto the baking parchment.

Leave in the fridge for at least an hour to fully set be-

fore eating - if you can! Enjoy.

GINGERBREAD BOYS1 cup margarine

1 cup white sugar

1 egg

1 cup molasses

2 tbsp vinegar

5 cups fl our

1 1/2 tsp baking soda

1/2 tsp salt

3 tsp ginger

1 tsp cinnamon

1 tsp cloves

Cream margarine and sugar together.

Blend in egg, molasses and vinegar

till smooth.

Add dry ingredients in stages till all

incorporated into a smooth ball.

Chill in fridge at least 3 hours or overnight.

Roll out to 1/8” thick and cut out the gin-

gerbread boys.

Bake at 350 degrees, approx 8 min till

lightly golden.

Decorate when cooled, if you wish.

Makes 5 dozen.

Coasters — Th e Perfect Hostess Gift!!

For a set of 4 coordinating coasters you will need:

For the top: Four coordinating cotton prints cut into

four 5-inch squares.

Press each square in half, wrong sides together (A)

For backing and lining: Another cotton print cut into

eight 5-inch squares

Press firm iron-on interfacing onto the wrong side of

four of these square.

Lay the remaining four squares, wrong sides together,

on the Interfaced backing squares.

Construction: Put the 4 squares with the backing

(interfaced) piece facing up.

Use one of each of the 4 top prints, and with the raw

edges facing out, place the pieces on top of each other

so you have the same amount of each print showing.

Sew around the outer edge with a 1/4-inch seam. Trim

the corner, turn the coaster right side out and press.

Topstitch 1/4 inch from the outside edge with a

decorative thread.

Classic Christmas Cake• 1 1/2 cups all purpose fl our

• 1 tsp apple pie spice

• 1 tsp ground cinnamon

• a pinch of salt

• 2 2/3 cups golden raisins

• 1 1/3 cups raisins

• 1 1/3 cups ready-to-eat dried apricots, chopped

• 2/3 cup glacé cherries, chopped

• 1 cup slivered or chopped almonds

• Finely grated zest of 1 unwaxed orange

• Finely grated zest of 1 unwaxed lemon

• 6 oz. unsalted butter, softened

• 3/4 cup packed light brown sugar

• 4 eggs, beaten

• 4 tbsp brandy

• 3 tbsp apricot jam

• 2 tsp water

• 16 oz. ready-made marzipan or almond paste

• Confectioner's sugar, for dusting

Icing

• 3 egg whites

• 3 tsp liquid glucose or glycerine

• 4 cups confectioner's sugar, sifted

• a deep 9-inch round cake pan, greased and lined with a

double layer of parchment paper and with a double thick-

ness of parcel paper tied around the outside of the pan

Sift the fl our, spices and salt into a bowl. Mix the dried fruit,

cherries, almonds, and zests in a separate bowl and stir in

half the fl our. Set aside.

Cream the butter and brown sugar together in a large bowl

until pale and creamy, then gradually beat in the eggs. Fold

in the remaining fl our mixture, then the fruit mixture. Stir in

the brandy, mixing well. Spoon the mixture into the prepared

cake pan and level the surface. Bake in a preheated oven

at 300oF (150oC) for about 2 hours, or until a fi ne skewer

inserted into the center comes out clean. Remove the cake

from the oven and let cool in the pan for 30 minutes, then

turn onto a wire lack and let cool completely. Wrap the cake

tightly in wax paper and foil and store in a cool, dry place for

at least a week.

To make a glaze, heat the jam in a saucepan, with the water

until melted. Bring to a boil, then simmer for 1 minute. Strain

through a nylon sieve.

Place the cake upside-down on a cake board and brush the

top and sides with the glaze. Roll out half the marzipan on a

surface dusted with confectioner's sugar to fi t the top of the

cake. Put the marzipan round on top of the cake, then smooth

over and neaten the edges. Roll out the remaining marzipan

into a long strip to fi t the sides of the cake, then roll up, place

one end against the side of the cake, and unroll to cover the

sides and joins. Leave in a cool, dry place

for 1-2 days, to allow the marzipan to dry.

To make the icing, lightly whisk the egg

whites and liquid glucose in a bowl. Stir in

the confectioner's sugar until it forms soft

peaks. Spread evenly over the cake. Let dry

in a cool place for 24 hours, then decorate

as desired.

Clancy’s Fancy Sugar Cookies• 2 cups butter (soft/room temperature)

• 2 cups white sugar

• 4 eggs

• 2 tsp vanilla

• ¾ cup milk

• 6 cups fl our

• 2 tbsp baking powder

• ½ tsp salt

Preheat oven to 350 degrees.

· Cream butter, eggs, sugar, vanilla in large bowl

· Add fl our and other dry ingredients, alternating

with milk, to the butter and egg mixture

· Pack into a ball, cover tightly with plastic wrap

and put in fridge overnight (or at least 2 hours).

You can also freeze dough (in a freezer bag) at

this point to use at a later time.

· Flour your working surface and roll out small

portions of dough, to about ¼ to ½ inch thick.

Cut with your favourite holiday shapes.

·Bake on greased cookie sheet (or stoneware) for

about 10-12 minutes. Bottoms should be lightly

browned.

Let cool on baking rack (at least 30 minutes) and

then ice with royal icing ( 1/3 cup meringue pow-

der, 3 ½ cups icing sugar and 1/3 cup of water

– mix for 3 to 5 minutes). Divide up royal icing

into 4 bowls, use red, green, blue food colour-

ing and also keep one white. Pick a colour and

gently spread icing on the top of the cookies and

decorate with sprinkles! Make them extra fancy!

Crockpot Turkey Stuffi ng Cranberry ChutneyFavourite Christmas Recipes from our Kitchens to Yours.Semiahmoo Rotary members would like to share some of our

best recipes with PAN readers this season in the spirit of giving.

A great idea for a big crowd.

1. Sauté: 1 cup margarine, 2 cups chopped onion, 2 cups

chopped celery

2. Add: 2 loaves cubed bread crumbs, 1/4 cup parsley, 2 cans

drained mushrooms, 1 tsp poultry seasoning, 1-1/2 tsp sage,

1 tsp thyme, 1/2 tsp pepper, 1/2 tsp marjoram

3. Mix everything together.

4. Add: 2-1/2 cups chicken broth mixed well with 2 eggs.

5. Add everything to crock pot. Cook on HI setting for 45

minutes and LOW setting 4-6 hours.

A delicious and flavourful change from a regular roasted turkey

2 litres unsweetened apple juice, 1-1/2 c brown sugar, 1 cup sea

salt, 4 oz. fresh ginger peeled and thinly sliced, 15 whole cloves,

6 garlic cloves chopped, 3 bay leaves, 3 med oranges quartered,

3 litres cold water, 1 turkey, 2 Tbsp. oil

1. Combine 1st 7 ingredients and boil. Stir until salt and sugar

is dissolved. Stir in oranges, remove from heat and add cold

water and cool.

2. Put turkey in a large brine bag and pour brine over.

Refrigerate for 18 - 24 hours. Turn turkey every few hours.

3. Rinse turkey under running water and pat dry. Rub oil over

turkey. Place oranges inside cavity.

4. Roast as per usual at 350 deg. F. Watch wings and legs do not

brown too much. Cover them with foil.

Homemade Cranberry Chutney (makes about 4 cups) - a

wonderful alternative to the store bought variety

3 cups fresh cranberries, 1 c. chopped dried apricots, ½ c.

chopped dates or prunes, ½ c. chopped onion, ¼ c. chopped

preserved ginger, ½ c. vinegar, ½ c. corn syrup, ¾ c. packed

brown sugar, 1 T. grated orange rind & ¾ c. OJ, ½ t. dry

mustard, ½ t. salt, ¼ t. ground ginger

1. Combine all ingredients in a heavy saucepan. Bring to a boil

over medium-high heat. Reduce heat to low and simmer

uncovered for 15-20 minutes.

Classic Potato Latkes2 pounds russet potatoes, peeled, diced

1 large onion, peeled, diced

1 egg

3 tablespoons all purpose fl our

1-1/4 teaspoons salt

3/4 teaspoon pepper

1/2 teaspoon baking powder

10 tablespoons (about) vegetable oil

Preheat oven to 325°F. Place 2 baking

sheets in oven. Line large bowl with

towel. Finely grind potatoes and onion

in processor (do not puree). Transfer to

towel. Fold towel up around mixture; twist

top, squeezing out all liquid into bowl.

Let liquid stand 5 minutes. Pour off liquid,

reserving any potato starch in bowl.

Add potatoes to bowl. Mix in egg, fl our,

salt, pepper and baking powder.

Heat 6 tablespoons oil in large skillet over

medium-high heat. Working in batches,

drop 1 heaping tablespoon batter per

pancake into hot oil. Using back of spoon,

spread to 2-1/2- to 3-inch rounds.

Cook until brown, about 3 minutes per

side. Transfer to baking sheets in oven.

Repeat with remaining batter, spooning

off any liquid from surface of batter and

adding more oil to skillet by tablespoonfuls

as necessary. Serve hot.

• 1 cup fl our

• 2 tbsp. white sugar

• 1 pinch salt

• ¼ cup butter

• 2 tbsp. water

• ½ tsp. vanilla

• ½ cup heavy cream

• ½ cup light brown sugar

• 2 tbsp. honey

• ¾ cup cranberries

• ¾ cup chopped pecans

• ½ cup pecan halves

In a food processor, mix flour, white sugar,

salt and butter

Mix until resembles coarse cornmeal

Add water and vanilla

Press dough into greased pan

Bake for 15 min until lightly golden

@350 degrees

For the filling bring cream, brown sugar

and honey to a boil (1min)

Stir in cranberries and chopped pecans

Top with pecan halves spread evenly over

crust and bake for 20-25min until bubbling

Cook, cut & enjoy!

Christmas S’mores12 chocolate graham crackers

3/4 cup butter

3/4 cup firmly packed brown sugar

3 cups miniature marshmallows

1 cup red and green M&Ms

Preheat oven to 350ºF. Line a 15x10x1 inch

jelly-roll pan with aluminum foil leaving a

1 inch overhang on ends; spray foil with

no-stick cooking spray. Place graham

crackers onto foil so sides touch.

Melt butter and brown sugar in 2 quart

saucepan over medium heat, stirring

constantly, until smooth and mixture just

comes to a boil (4 to 6 minutes). Pour

evenly over crackers. Bake for 5 to 6

minutes or until bubbly.

Remove pan from oven; sprinkle with

marshmallows.

Continue baking until marshmallows begin

to soften (2 to 3 minutes). Sprinkle with

M&Ms. Cool completely. Lift from pan

using foil and cut into bars.

Peanut Butt er Dog Biscuits Ingredients:

• 2 cups whole wheat fl our

• 1 cup rolled oats

• 1/3 cup smooth or chunky peanut butter

• 1 1/4 cups hot water

• Additional fl our for rolling

Preparation:

1. In a large bowl, whisk together fl our and oats. Mix

in the peanut butter and hot water. If the dough is too

sticky, add more fl our.

2. Knead the dough well. Round it into a ball and cover

with plastic wrap and let rest 15 minutes.

3. Heat oven to 350 degrees. On fl oured parchment pa-

per, roll out the dough to 1/4 inch thickness and cut into

shapes with cookie cutters of choice. I use, what else,

a bone cookie cutter. Since the dough doesn’t spread

while baking, you can cut the biscuits close together.

Remove scraps and pick up the parchment paper by op-

posite ends and transfer to a baking sheet. Repeat with

remaining dough.

4. Bake 40 minutes. Turn off the oven and leave them in

the oven to cool overnight. The dryer they get, the lon-

ger they will stay fresh. If you can’t wait that long, cool

them completely on a wire rack and treat your doggie

to a guilt-free snack.

Prep Time: 30 minutes

Cook Time: 40 minutes

Total Time: 70 minutes

Brie with Sun-dried Tomatoes4 oz. sun-dried tomatoes in oil

-fi nely chopped

3-4 garlic cloves, minced

6 oz brie cheese, chopped, keep rind on.

2 tbsp fresh parsley, chopped

Small oven-proof casserole dish

or brie baker.

Mix tomatoes and garlic and

pile generously on diced brie.

Heat in oven at 350 degrees for a few

minutes until the cheese is soft.

Serve with bagel chips or crackers.

Very simple recipe and works out

perfectly every time!

Magic Santa Bars2 cups graham crumbs

3/4 cup butter, melted

1 can Eagle Brand milk

1/2 cup pecans, chopped

3/4 cup white or semi-sweet

chocolate chips

1 cup dried cranberries

1 cup coconut

1 cup mini marshmallows

Combine crumbs and butter and

press into 9x13 pan

Pour 2/3 can milk over crumbs

Sprinkle pecans, chips, cranberries,

coconut and marshmallows over that.

Press down fi rmly. Pour remaining milk

over top.

Bake 325 degrees for 25-30 minutes

till lightly browned.

Cool. Cut into 24 bars.

Store loosely covered at room temp.

Liver Dog TreatsLiver Dog TreatsPut the following four ingredients into a blender and

purify:

1/2 to 3/4 of a pound of chopped/sliced liver

3 cloves of garlic

1 tbsp oil

2 eggs including the shells

Pour the liver mixture into a bowl and add:

1 cup fl our (all purpose, whole wheat, rice, bean)

1 1/2 cups of corn meal

Mix everything together and grease a cookie sheet

REALLY well or use parchment paper. Spread the

mixture on the pan with a wet hand. Bake at 350ºF for

45 minutes or until medium brown. Cut into squares

and return to the “off” oven to dry out for another 10

minutes. These treats must be kept frozen.

Grandma’s Butt er Tarts1 cup white sugar

1 cup raisins

2 eggs

Beat the above ingredients well. Then add:

1 teaspoon vanilla

1/3 cup butter

4 tablespoons milk

Boil 3 minutes - stirring all the time. Put

into unbaked tart shells. Add a piece of pe-

can on each tart before baking. Bake at 400

degrees for 10-12 minutes or until golden

brown and bubbling. Makes 12+ tarts or
