Producer Profile – fryar’s
Kangaroo Island is well known for its clean, healthy environment, and here Tom and Fiona Fryar’s Free Range Poultry Farm covers 4,000 acres and is situated near Kingscote on Kangaroo Island. Mobile poultry sheds are used on Fryar’s free range farm, with each shed providing 1,000 hens with shelter, nesting boxes and timber rails for roosting. The sheds are designed to allow the birds access in and out as they please, lay-ing hens on the farm are never locked in sheds. The sheds are moved across the paddock which gives the hens’ access to fresh pasture. The hens are also fed a mixture of grains which are grown, crushed and mixed on the farm. Beak trimming is definitely not allowed on Fryar’s free range farm, all hens are full beaked which enables them to peck and scratch at seeds, in-sects, grubs etc as nature intended.

METHOD Heat Delice and cream in a small saucepan on a

very low heat, stirring gently till the cheese and cream are combined (don’t boil). Take off the heat, add softened gelatine and stir gently until gelatine has dissolved. Strain and pour into greased dariole moulds. Refrigerate (3 hours or overnight).To make Sugar Toasted Brick PastryCut brick pastry sheets into irregular shaped strips.Paint with clarified butter then sprinkle with caster sugar. Bake until golden, cool before using. To serve, unmould Panna Cotta onto a plate, serve with rhubarb, pastry shards and crushed praline.

Poaching Ingredients200g guava paste500ml (2 cups) Orange Mountain Verjus100g sugar
To Make the FillingPut all filling ingredients, except the walnut meal and walnut halves, into the food processor. Process until a smooth paste. Scrape out of the bowl and mix in the walnut meal. Stuff half to a full teaspoon into each plum without overfilling. Set aside.
To Poach the PlumsCut the guava paste into teaspoon sized pieces and put into a wide bottomed pot with the verjus. Melt together on low whisking occasionally. Once melted put the plums into the pot (in a single layer). Sim-mer for 10 to 15 minutes without boiling. Remove and push a walnut half into the top of each plum. Put onto a paper lined tray. Add the 100g sugar to the pot and simmer until reduced by half. This syrup will reset if chilled so, leave at room temperature if putting the finishing plates together immediately.
