Method1 Make Lemon dressing: Place oil, lemon juice and pepper

in a screw-top jar. Secure lid. Shake to combine.

2 Heat half the oil in a non-stick frying pan over medium-high heat.

3 Add half the haloumi. Cook, turning, for 1 to 2 minutes or until golden. Transfer to a plate. Repeat with remaining oil and haloumi.

4 Place lentils, tomato, parsley, celery and haloumi in a bowl. Add dressing. Toss to combine. Serve.

It takes a quality barrel to make a quality whiskey and that’s why we devote the same care to making our barrels as we do to making our Whiskey. So important is the barrel, we’re the only distiller that makes the extra effort to craft our own. We select the best white oak for the barrel staves and fi t them together by hand. Then each barrel is carefully toasted and charred inside to caramelize the wood’s natural sugars which is where our charcoal mellowed whiskey draws its rich colour, distinctive fl avour and fi nish.
