Chicken Picnic Roll

Ingredients (serves 6)

300g flat mild pancetta or streaky bacon, rind removed 4 (about 180g each) corn-fed chicken breast fillets 500g chicken sausages 1 cup large basil leaves 300g sliced ham 5 x 60g eggs, hardboiled, shelled 2 tbs honey Method

Preheat the oven to 180°C. Lay a large sheet of lightly greased foil on the workbench. Lay pancetta, slightly overlapping, to completely cover foil. Place the chicken breasts in between 2 pieces of plastic wrap, then use a rolling pin or meat mallet to flatten. Lay the chicken over the pancetta. Remove the meat from the sausage casing and spread over the chicken breasts to completely cover. Place basil leaves over the sausage filling, then cover with slices of ham. Lay the hardboiled eggs just off-centre in a long line on top of the ham. Fold in the long edge of the roll that's closest to the eggs, then, using the foil, roll up to enclose eggs. Make sure roll is covered tightly (if necessary, use another sheet of foil to cover), then twist ends to seal. Place in a baking tray and bake for 1 1/2 hours. Unwrap the top of the foil, drizzle with honey and return to oven for 15-20 minutes or until pancetta is golden. Cool, then rewrap and refrigerate overnight. To serve, bring to room temperature, then cut into thick slices.

6: Members years and why you joined the club. I joined the club in July after moving to the area from Melbourne via Maldon this year. I joined the club because I heard such great things about it from people I know in the area

7: Marital status and family. Married with a 7 year old son and 4 yo girl/boy twins

8: Any special events coming up? I need to get organised and have myself graded, but a dressage day or two this season would be great.

9: If you were going to do the Kur, what music would you use? Time of your life by Greenday, because if I was doing the Kur, that’s what I’d be having!

10: What’s your good luck charm for competing? I pretend I’m riding at home to relax me.

11: What was your first car? A brown Leyland Mini called Barnie (the children of the previous owner cried when I drove it away!) Couldn’t tow a float but was a dream to park!

12: Favourite joke? I quite enjoyed the visual below

13: Who inspires you? People who are really good at what they do but remain humble about it.

The husband says, "What do I look like, Mr. Plumber?" A few days go by, and he comes home from work and his wife says, "Honey, the car won't start. I think it needs a new battery. Could you change it for me?" He says: "What do I look like, Mr. Mechanic?" Another few days go by, and it's raining pretty hard. The wife finds a leak in the roof. She says, "Honey, there's a leak on the roof! Can you please fix it?" He says, "What do I look like, A Tiler?" The next day the husband comes home, and the roof is fixed. So is the plumbing. So is the car. He asks his wife what happened. "Oh, I had a handyman come in and fix them," she says. "Great! How much is that going to cost me?" he snarls. Wife says: "Nothing. He said he'd do it for free if I either baked him a cake or slept with him." "Uh, well, what kind of cake did you make?" asks the husband. "What do I look like," she says, "A Pastry Cook?"

Two Irish guys are fishing. The first guy reels in his line and sees that he's snagged an old bottle. As he's taking it off the hook, a genie pops out and promises to grant him one wish. "Turn the lake into beer," he says. The genie goes "Poof!" and the lake turns into beer. He says to the other guy, "So what do you think?" The other guy says, "You jerk. Now we've got to pee in the boat."

Three guys, stranded on a desert island, find a magic lantern containing a genie, who grants them each one wish. The first guy wishes he was off the island and back home. The second guy wishes the same. The third guy says "I’m lonely. I wish my friends were back here."

Rally information.

Equipment roster -If you are rostered on for a month and cannot do your duty for the day it is up to YOU to swap with another member from another month ( preferably some one who has not already done roster duty ), it is not up to the rally coordinator to do so. The duties need to be carried out as per the requirements below.

Equipment roster duties -

Set up : Open up gate Club rooms Toilets MenagesKerrie Taylor, Kaylene Scott and Jean Dart have keys.The club room door (which is a single door with two padlocks) has to be opened first, then once in the club rooms the sliding door, closest to the kitchen, is opened from the inside. It has a bolt going into the wall which is located on the right hand side of the door if you are facing it. Once unscrewed, the door will slide along. (please note that is rather hard to slide so give it a good push)Fill and turn the urn on. Turn on hot water, the switch is located in the storage room ( near kitchen ) underneath the bench.Place the wheelbarrow and pooper scooper down at the dressage arena.Open jumps shed and take jumps down to the jumping arena. Please lock shed after removing jumps trailer.When instructor comes, please help placing the jumps on arena.Leave the trailer there until pack up.

Lunch : please check what time lunch will be.Kaylene Scott has a $60 float in cash. Spend $5 per person eg: 12 = $75Take a list of who is staying for lunch, who has bought something and who has paid and who has prepaid.Purchase lunch– Be imaginative it doesn't have to be chicken and salad. Don't forget if no one has made sweets please buy something.Prior to lunch set up tables and cutlery and set our chairs around table if they are stacked.After lunch dishes have to be washed and the kitchen tidied up. Excess food to be either taken home or thrown away.Benches to be wiped down and everything put away in cupboards.

Rally information.

Pack up :Put jumps back on trailer.Return jumps to she and put lock on jumps trailer and make sure the shed is LOCKED!!Harrow both arenas ( make sure the pickets are facing up and drive slow ).Pick up remaining horse poo (NOT THAT THERE SHOULD BE ANY ) in the ménage and yards.Empty wheelbarrows up near jumps shed and place back in the club shed.Shut the shed sliding door and lock.Turn urn offTurn lights offLock club roomsLock toiletsLock arenasDouble check that everything is clean and locked.Lock the front gate.

It may seem that duty for the day is a bit involved! Well it is! That is why there is a roster and the load is being shared between members as it seemed to be left up to the same people all the time. This is the only way it can be fairly done across the board. It is only once a year you have to do duty roster and the rest of the time you can kick back and relax and enjoy the day, now that has to be a good thing!
