1.5 INTRODUCTION OF THE PRODUCT
Electrical deck oven is a machine that provides the desired temperature inside by resistances,
those stationed in the bottom and top of each deck. Bottom of decks are equipped with specially
manufactured baking tile. Due to the standard steam system it allows baking all kinds of products.
The resistances are specially imported from Europe and provide high energy savings. The machine is
modular and decks can be added according to need. The machine has chimney hood for steam, and
temperature and humidity-controlled yeasting cabinet. Each deck works independently of the
different degrees of heat.
Products are baked in a tray or directly on the baking tile. The bottom and top temperatures
could be set independently according to need. It is prevented of spreading the steam to the
environment by aspirator. The fermentation of products is provided by yeasting cabinet. The
products those have been fermented in the yeast cabinet are baked in the oven and become ready
for sale.

1.6 GENERAL PROPERTIES OF THE MATERIALS USED IN PRODUCT
1. There used special baking tile, with high thermal conductivity and that distributes the heat
homogeneously.
2. Resistances are made of ceramic and energy savers.
3. Front side and chimney hood are made of 1.20 mm thick patterned stainless steel.
4. External covers are made of 1.20 mm thick stainless steel.
5. To minimize heat loss, high-quality (TSE certificate) of stone wool is used.
6. All used electrical equipment are comply with European standards and CE certified.

1.8 MAIN PURPOSE OF USE AND OTHER APPLICATIONS
The oven has not been designed for cooking or heating products containing combustible
materials (such as alcohol components). It is designed for baking and heating foods generally
containing flour (such as bread, pizza, biscuit, cake, cookie and etc.)
Although the machine is built in accordance with current safety standards (established),
use of non-purpose and the use by inexperienced staff may result in dangerous consequences.
The following are specifically prohibited::
Heating of any material other than the predefined..
Operation and maintenance by unauthorized personnel
The state of being working area open and can be entered by unauthorized persons (and
especially children).
The replacement of oven without proper protection and safety devices for the operation
Operating the oven in a place where exists danger of explosion.
We would like to remind you once again; the highest attainable temperature of oven's baking
chamber is 350 C.

2. OPERATING THE PRODUCT 2.1 CARRIAGE OF THE PRODUCT
Ovens can be carried with crane by hooks on top corners or by palettes on the flat ground, by forklift
(see figure). FMAK INC. is not responsible for any damages occurred during transport.
Before carrying all areas (installation place, carriage line, parking area etc) should be
checked to ensure that there is no possible dangerous situation
The lifting equipment (rope, chain etc) should be chosen appropriately.
Necessary measures should be taken against swinging and the lifting equipment should be
connected in a balanced way.
Do not stand at the top or under the machine during transport.
Unauthorized persons should not be allowed to the carrying area.
The required distance between the load and living beings should be met against accidents and
injuries.
The swinging should be considered.

Take the necessary measures during carriage! Start moving after making sure that the
hooks are fully hung and stable.

2.2 PACKING
Before unpacking check the product for possible damages occurred during transport and check if
the parts are the same with the packing list. If there is a flaw or missing part the manufacturer should
be informed within 24 hours.
After installation, dispose of the packing material proper to the national law. If there are
materials which should be stored for future use, those should be stored in a place away from any
harm.
2.3 STORAGE
If storage of the constituent parts of the machine or the machine is desired, proceed according to
the following clauses.
Keep them in a closed place away from humidity, dust and heat resources.
The permissible ambient temperature and humidity for storage areas are as follows:
Temp: Between -5 C and 45 C
Max. Humidity: %60
Check the protected (important) parts regularly.
Do not stack parts or boxes upon each other.
If the parts are not packed put them on wooden beams and cut off the contact from ground
and coat with nylon to prevent accumulation of dust, dirt.
2.4 INSTALLATION
Check the conformity of the mains voltage and product identification plate voltage values.
Screws and electrical connections may loosen due to vibration during transport. Before
making the electrical connection check the screws and ensure that the electrical connections are
correct. The floor must be flat and smooth and should be reinforced to handle the weight of the oven
as needed. At the same time, adequate and appropriate fire-fighting equipment should be provided
in the building.
To ensure long life the oven there should remain enough space for air circulation around it.
Ventilation: The temperature of the oven hood while operation is g about 50-70 C. The ventilation

rate required for this 150-220 m / h and air flow rate required for each staff member is 20 m / h.
The ventilation system should be established by taking into account these required values
Be careful to prevent damage to personnel and oven when moving the oven and during
unloading from pallet.
Routine maintenance takes place at the front of the machine. If it is considered that the oven is
placed next to the wall and / or another oven, if possible, to facilitate cleaning and extraordinary
maintenance operations there should be left at least 60 cm space around. In any case, there should
be left at least 1,5 meters of space in front of the oven to provide door opening and thus bakery
product installation can easily be done.

2.5 CONNECTIONS TO THE EXTERNAL SYSTEMS Electrical deck ovens have four connection systems including water, discharge, electrical and chimney systems. 2.5.1 CLEAN WATER SYSTEM Water system connection is made by steel pipes. The clean water is given to the water distribution robot and is distributed to steam generators from here. Distribution to generators is made by industrial hose. Clean water system is brought to appropriate distance to the oven by customer. After installation the hoses and pipes should be compressed by clamps. 2.5.2 DISCHARGE SYSTEM
The discharge of steam that has condensed in oven is made by 1 industrial hose. The output of hose is instilled to a manhole abreast with the oven base.
2.5.3 ELECTRICAL SYSTEM Before installation of the oven the electrical system should be brought to appropriate distance by customer. As getting closer, the electrical cables should have been passed under plaster or from ducts as possible. There should be a circuit breaker or a fuse switch near to the user.
The electrical cables between the panel and parts are refractory. Operating voltage is 220/380 VAC and operating frequency is 50 Hz.

2.5.4 CONNECTION OF THE CHIMNEY Metal or spiral pipes should be used to make the chimney. Cowl should be put to the building output.
IMPORTANT REMINDER: Closer chimney supports operating healthier. Lower bend number affects operating positively.
Its the customers responsibility to supply the chimney pipes.
2.6 WARMING-UP INSTRUCTIONS Pay attention to the following conditions 1. Start heating-up with 2 degrees per minute up to 110 degrees. You will need about 45 minutes to finish this. Then heat up with 0.5 degrees per minute for the next 5 hours. From that point you can use the oven with the baking-tiles under normal conditions. 2. To avoid explosion of the baking-tiles it is necessary to heat up slowly and be sure that the baking-tiles will not get a higher temperature than the oven does. At the end of the heating up process the quantity of rest-moisture will be reduced to a non-dangerous level. 3. Never heat up an electrically heated oven with the heating spirals below the baking-tiles. Turn them off until the end of the heating up process. You only should heat up with the upper heating spirals at the top of the oven. 4. Tubular heated ovens have to be heated up for the first 2 hours with a reduced tube-temperature of maximum 150 degrees. From that point you can increase the tube temperature with 50 degrees every hour. 5. Please be sure before starting the first heating up that the baking-tiles have enough free space along the borders to be able to expand with increasing oven-temperature.

The desired settings are made by using command panels. There are two kinds of command panels.

The power is turned on by pressing the power key . When the power is off the led is red
and when it is turned on, the led is green.
Indicates the actual and tuned temperature values of upper and lower resistances. Tuning
value is between 50 350 C degrees. In case of indication errors or over-heating there displays
A01 for upper resistance and A02 for lower resistance.
The led at the top right corner of temperature indicator is lit when the values are below the
tuned value, and turns off when the temperature is over the tuned value.
The value changes step by step when the adjustment keys are pressed one by one and it
changes quickly when pressed and held for two seconds.
Indicates the decreasing time value when the timer is active and tuned time value during
normal operation. Tuned time value range is between 1 to 99 minutes.

Timer becomes active when the timer on/off key is pressed, the led on the key starts
to blink and starts to countdown as minutes. If it is pressed while the timer is active, the led
turns off and the indicator displays tuned time value.

Indicates the decreasing time value when the steam key is active and tuned automatic steam value
during normal operation. Tuned automatic steam value range is between 1 to 99 minutes.
The value changes step by step when the adjustment keys are pressed one by one and it
changes quickly when pressed and held for two seconds.
The steam heater is activated when the steam on/off key is pressed and the red led at the left
bottom corner of the key is lit. If the key is pressed again when the heater is active the red led turns
off and heater becomes passive.
The steam heater is activated when the steam on/off key is pressed and the red led at the left bottom corner of the key lit. If the key is pressed again when the heater is active, the red led turns off and heater becomes passive. When it is charged and the steam is ready the led at the top right corner is lit. When the energy is cut or discharged the led turns off and manual or automatic steaming can not be made.
When the manual steaming key is pressed the valve operates as long as the key is held down if the steam is charged, the led is lit. If the unit is not charged invalid key error displays, led is not lit, steam valve becomes passive.
When the automatic steaming key is pressed the valve operates if the steam is charged, the led dtsrtd to blink and the auto steaming time starts to countdown in seconds on the indicator. If the key is pressed again when the automatic steaming is active, the led turns off and steam valve becomes passive and there displays the tuned auto-steaming time on the indicator. At the end of auto-steaming the machine sounds an alarm and the key led turns off, the steam valve becomes passive and there displays the tuned auto-steaming time on the indicator.

2.7.2.1 WARMING 1. The temperature is set by arrow keys.
2. The warming starts by the key and as long as heater is active the green led lights on. Heating process can be canceled by pressing the same key again.
2.7.2.2 MOISTURIZING
1. The temperature is set by arrow keys.
2. The moisturizing starts by the key and as long as heater is active the green led lights on. Heating process can be canceled by pressing the same key again.
2.7.2.3 REAL TIME CLOCK
Alarm clock is set to activate the yeasting cabinet at a desired time.
Alarm clock can be set by arrow keys after pressing the key .
Real time clock can be set by arrow keys after pressing the key .
To activate the alarm press the key . When the time is reached, the yeasting cabinet will start to run with the last set temperature and moisture values.

2.7.3 ------ DEOC 2T COMMAND PANEL--------
Indicates the actual and tuned temperature values of upper and lower resistances. Tuning value is between 0 350 C degrees. To change value temperature control key is pressed and intended value is set by adjustment keys, temperature control key is pressed again to exit. In the manual mode all changed values are saved immediately, but in preset programs; even the values are changed, the values are restored when the panel reset or a different program is selected. Thus the values of preset programs should be changed by entering program adjustment menu.

This section is for selecting preset programs or to enter program menu and adjust values. Program key is pressed once and the intended preset program is selected by arrow keys. There are 99 preset and 1 manual programs. In the manual mode the values can be changed by real time indicator without entering program menu. To enter program menu the program control key is pressed and held for 3 seconds. The control key of the unit to change is pressed and when the indicator starts to blink the values are changed by adjustment keys. After adjusting all values the program control key is pressed for 3 seconds again to exit the menu.
Indicates the decreasing time value when the timer is active and tuned time value during normal operation. Tuned time value range is between 1 to 99 minutes. Timer on/off key is pressed once and the intended preset program is selected by arrow keys. After adjusting value the timer key is pressed again. A red led at the right bottom corner of the indicator blinks during countdown.
When the program starts it gives steam automatically during the tuned time shown on indicator. Indicates the decreasing steaming time when the steam is active and tuned steaming time value during normal operation. Tuned steaming time range is 0-20 seconds. Auto steam key is pressed once and the intended value is selected by arrow keys. After adjusting value the key is pressed again.
It is used for setting program phase number. A program can be divided into four phases. That means we can set four distinct temperature and time values in a program. In the program control menu phase key is pressed, phase numbers are changed and different temperature-time values are determined for each phase. When the program starts to run the real-rime phase number is shown on indicator.
: By pressing this key the power is turned on and off. When the power is on the red led is lit.
: This key is to turn on the steam preparing (heating). When it is operating red led is lit and when it is ready to give steam the green led is lit. The program can not be started unless the steam temperature is enough, it gives error message on the screen.
: Used for manual steaming, gives steam as long as key is pressed.
: Used for operating aspirator. Yellow led is lit while operating.
: Used for adding extra baking time. Each press gives 1 minute of extra time. May be extended up to 9 minutes.

: This key is used to turn on or off the lamp.
: This key is used to stop the operation of the program.
: This key is used to start the execution of the program.
: These keys are used to change the values such as temperature, time, steam or program number. AUTO-START TIME SETTING Time and program keys are pressed at the sime time for 3 seconds while the panel is switched of or program work is in the stop mode. The day is selected via upper temperature indicator, the time via lower temperature indicator, the program number via program indicator and alarm on/off mode via phase indicator are selected. The button next to the parameter to be changed is pressed, and values are changed by up-down arrow keys while the screen is flashing. After all days are set, program key is pressed for 3 seconds to exit the menu. SETTING ACTUAL TIME Time key is pressed for 3 seconds while the panel is switched of or program work is in the stop mode. There displays the actual day on the upper temperature indicator and the actual time on the lower temperature indicator. The button next to the parameter to be changed is pressed, and values are changed by up-down arrow keys while the screen is flashing. After making adjustments, time key is pressed and held to exit the menu. MESSAGES AND WARNINGS EH BAHE : When additional baking time is set this message appears on the screen. BAHIng : After starting the baking process with the start key this message is displayed. StEAM / tOO LOU : If it is tried to give steam or start key is pressed before the steam is ready this message appears. StEAM / IS OFF : This message appears if it is tried to give steam or start key is pressed unless activating the steam heater key. StEAM rEAdy : This message appears when the intended steam temperature is reached. End Cyc : This message appears when the baking time is over. Not At tEMP : It appears when the start key is pressed unless the oven reaches to the set baking temperature. PrObE1/Err : Upper thermocouple failure. PrObE2/Err : Lower thermocouple failure. StEAM/PrO Err : Steam thermocouple failure. Err XXX : It appears when the oven temperature exceeds 370 C. StE XXX Err : It appears when the degree of steam heater exceeds 300 C.

2.8 MAINTENANCE
Cleaning
If the regular cleaning is done, the oven will run smoothly and achieve the best baking results. To obtain a hygienic environment, the oven should be cleaned at the end of each day's work.
After cleaning, be sure that there are no detergent residues.
Beware of corners and sharp surfaces.
Water Connection
There is a water filter included and it should be regularly cleaned. The cleaning period depends on the property of mains water. Cut the main valve, pull out the filter and after cleaning inside of it put
it back. Open the main valve. Be sure that there is no leakage on connections.
In cases where the water is over-limy the installations should be cleaned by lime remover proportional to the amount of lime in water. Otherwise it should be noted that the quality of the steam will be dramatically decreased.
Electrical Operations
Attention! The main fuse must be switched off while any action.
Clean all cables, power supplies, with a soft brush or a vacuum cleaner one time per year.
Do not steam when the door is open
Do not interfere electrical parts without authorized personnel.
In case of electrical leakage, turn off the main switch.
Do not wipe the window glasses when they are hot

2.9 TROUBLESHOOTING
PROBLEM POSSIBLE CAUSE SOLUTION
Command Panel Is Not Working
1- Fuse has blown 2- Safety thermostat has cut the circuit (this usually occurs because of overheating on the body of the oven and causes power failure)
1- Open the electrical box and turn on the fuse
2- Make cooling and check the command panel settings
Steam Can Not Be Obtained
1- Water valves are turned off 2- Solenoid valve is not
working 3- Steam generators are
not working
1- Turn on the valve 2- Check the valve 3- Turn them on and wait
to be ready
Irregular Baking
1- Discharge valve is opened 2- Steam generator is remained on 3- Resistances are not working
1- Turn off the valve 2- Turn off the steam when
baking no-steam products

Yeasting Cabinet Does Not Heat Up
1- The temperature indicator is out of whack

WARRANTY TERMS
Warranty starts from the date of delivery of the goods and are free from defects in material and
workmanship for a period of 2 years guarantee. After examination if it is determined that it is covered
by the warranty repair or replacement of parts is carried out by FIMAK Inc. on material and
workmanship for free. Warranty does not apply in case of negligence or improper use. Under normal
circumstances, the warranty must be performed by the technical staff of FIMAK Inc.
WARRANTY EXCEPTIONS
Malfunctions that may occur because of following reasons, not covered under warranty.
Mechanical damage which may occur in transportation of the oven by customer.
Damages that may arise due to inadequate network.
Malfunctions may occur due to user negligence.
In cases of repair attempts by the customer or by those not authorized by FMAK INC. during the warranty period.
Malfunction due to electric motors.
All malfunctions that may occur in electrical materials.
In case of violation of rules specified in the users manual.
Corruption of the constant adjustments by the user .
Product lifetime is 10 years.
