Clément took over the reins of the estate in 2012. It has been owned by his family since 1650. Pouilly-Fumé is made from their 3 ha. of vines at Loges using sustainable viticulture and according to the lunar calendar. The juice from each parcel is vinified separately, 20% in oak casks, to make wine that is both fruity and mineral with the potential of ageing for five to ten years. There are two cuvées: one from a limestone soil, the other from Kimmeridgian marl.
