NZ Rose Veal is the latest meat on the NZ market and comes from mature calves around 6 months of age. The animals enjoy an all natural diet of full milk and fresh NZ grass. Throughout their lives, the welfare of the calves is a priority. The resulting meat is pink in colour.

What is the flavour like?

Rose Veal is an extremely clean meat, meaning it leaves your palate fresh and fat free. The flavour and the texture of this meat are something quite unique. You will enjoy a sweet beef flavour and soft, juicy texture requiring little accompaniment to impress.

How should I cook it?

Cook your Rose Veal from room temperature, searing gently for fry cuts and then finish in a slow oven at 160°C.

What are the health benefits of Veal?

Rose Veal is extremely tender, lean, high in iron and low in fat. It provides a terrific alternative to beef or lamb for those looking to reduce their fat intake.

What conditions are the calves kept in?

Typical of NZ sustainable farming methods, these animals are kept in a high welfare environment, grazing in pasture alongside their mothers as nature intended. They are not kept in crates or pens.

STEP 01 Score the skin (cap) of the Pork with a very sharp knife.

STEP 02 Ensure that the Pork is dry before you score the meat. Defrosting frozen Pork can cause surface wetness. Pat the skin dry with a towel if you are not satisfied!

STEP 03 In a mortar bowl, crush some fresh Garlic (a few generous sized Cloves for a 1.3kg Roast) and a Tsp to a Tbsp of Sea Salt to form a paste. You can add fresh herbs such as Thyme and a small amount of Olive Oil here if you wish.

STEP 04 Rub the Garlic and Salt all over the skin of the Pork and massage it into the cracks caused by scoring the meat earlier. Allow the meat to reach room temp before placing in a very hot oven.

STEP 05 Do not place the meat in a high sided dish as this can ‘steam’ the skin and affect the quality of your crackling.

STEP 06 20 minutes in a hot (250ºC) oven should be sufficient to render perfect crackling before you turn your oven down for the remainder of the cooking time.

STEP 07 If you do not wish to cook the crackling over the meat you can remove the scored and salted skin once the meat has reached room temperature and either place the skin under a hot grill shortly before serving the roast or slice the raw skin into strips or bite size pieces and roast alongside the meat until crackling occurs.

STEP 08 Be careful not to burn the crackling under the grill.

STEP 01 Buy good meat. Gourmet Direct premium beef is ideal

STEP 02 Buy it BIG – ideally each steak should be around 300g.

STEP 03 Take the meat out of the fridge and let it come to room temperature at least an hour before you want to cook it.

STEP 04 Fire up the BBQ, or if it’s raining, a heavy cast iron griddle pan is ideal on the stove.

STEP 05 Get the pan or BBQ really, really hot – at least 5 minutes. It should be painful to hold your hand anywhere near the heat source.

STEP 06 Open a window if you are inside – there is going to be a lot of smoke!

STEP 07 Pat the steak dry, otherwise it won’t form a crust. Season at the last minute with a mix of 55% sea salt and 45% smoked sea salt and 10% cracked black pepper.

STEP 08 Don’t use any oil on the meat or in the pan –if the grill is hot enough the meat won’t stick.

STEP 09 Put the steak on. Leave it for a couple of minutes and then flip. Carry on turning every two minutes until it’s the way you like it. Don’t overcrowd the grill or the pan – leave plenty of space between each steak. Keep an eye out for yellow flames – this means the fat has caught fire, so move it another part of the grill.

STEP 10 If there is a thick layer of fat on the steak – hold the meat up vertically and brown the fat.

STEP 11 When you are happy with how it is cooked – leave it to rest for at least 5 minutes. This is vital.

STEP 12 Open a good bottle of red wine and enjoy!

‘DONENESS’ TEST FOR BEEF OR LAMB

RARE The human hand is in an open, relaxed state. Press the large thumb muscle between thumb and index finger. This is how rare meat should feel.

MEDIUM Stretch out your hand. Press the same muscle. This is how medium cooked meat should feel.

WELL DONE Clench a tight fist, and the thumb muscle will feel like well done meat.

LAMB BONELESS LEG W/ SUMMER STUFFING

Ingredients

∙ 500g free range chicken livers

∙ 1 onion diced

∙ 1/4 cup brandy

∙ 1 bay leaf

∙ 1/2 teaspoon thyme

∙ 1/2 cup cream

∙ 1/4 cup dry sherry

∙ 75g butter

∙ 50g butter

∙ 3 rashers bacon finely sliced

Ingredients :

∙ 1 boneless lamb leg (1.3kg)

∙ Salt and pepper

∙ 500g spinach, stalks removed

∙ ½ cup olive oil

∙ 200g halloumi grated

∙ 4 tbsp. fresh mint washed

& stalks removed

∙ 2 lemons zested

∙ ½ cup almonds sliced & toasted

∙ 4 cloves garlic, crushed

∙ 375 ml verjuice

∙ 200ml meat glaze

Method

Chop livers and trim off any white sinews then place in a bowl with the brandy ,marinate for 1 1/2 hours.

Drain livers and then heat 50g butter in pan.

Add onions, livers, bacon, thyme and bay leaf and simmer for 5 mins. Remove from heat and remove bay leaf.

Put mix and sherry in batches in kitchen whizz and process till smooth with cream and season with salt and pepper.

* To get a really smooth creamy pate push through a sieve after this to have a lovely light texture.* Or you can process the mix to a chunky texture and leave it like that for a more rustic version

Method

Preheat Oven to 180°C.

Take your Boneless Lamb Leg and slice through from the fat end horizontally till nearly all the way so you can open to butterfly and lay on your board. Season with salt and pepper.

Place the spinach in a bowl and pour boiling water over to blanch, drain and squeeze out water. Spread the spinach over the lamb.

Combine the mint, zest, almonds, garlic and halloumi in a bowl and then spread over one side of the spinach in the lamb. Cover the mix with the top side of the lamb so it is closed. Tie securely both ways. In a pan big enough to fit the lamb that is ovenproof, heat a little oil and sear lamb all over.

Remove pan from heat and add the verjuice and 1 cup water to the dish. Cover and roast for 2 ½ hours.

Let rest for 20 mins and put your sauce mix into a pan and add Meat Glaze, simmer for 10-20 mins till reduced and thickened.

Season with salt and pepper and add a little butter to the sauce before serving.

Ingredients:

1 x Gourmet Direct beef wing rib roast, approx 2.5kg

Peppercorn Rub:

∙ 1 tbsp. paprika

∙ 1 tsp. garlic powder

∙ 1 tsp. cayenne pepper

∙ 1/2 tsp. onion powder

∙ 1/2 tsp. equal parts freshly

ground black, white, green

and pink peppercorns

∙ 1/2 tsp. dried oregano

∙ 1/2 tsp. salt

∙ 2 tsp. grated lemon zest

∙ Olive oil

Method

Combine all ingredients; add lemon zest just before use. Rub beef with oil and spice mixture. Refrigerate 12 hours.

Preheat oven to about 220°C (or crank the barbecue up to hot)

Now the next part is very important! Allow the meat to come up to room temperature before cooking. Place in large oven tray and cook for about 20 minutes at 220°C (or sear all over on the barbecue for half an hour, allowing more time on the bridge of the bones than on the fleshy side) then turn your oven (or barbecue) down to about 180/190°C and cook for approximately 20 mins per kg.

Check for doneness as you like it and remember that cuts with bone carry a lot of heat, and so it will continue to cook while resting. Allow up to half an hour to rest, while you get your lovely salads and new potatoes ready to serve!

Serve with a gourmet mash and jus. Don’t forget Mandy’s Horseradish on the side. Heaven!

Tip: All barbecues are not created equal so you will need to use some local judgment if using yours. Remember to also take into account the position of your barbecue and the weather on the day. A cold day generally means a longer cooking time.

Put finished mix in dishes to serve, lay a bay leaf flat on top of pate and press lightly to stick.

Next melt the extra butter in a pot and take the clear clarified butter off the top and spoon carefully on to top of your pate dishes to seal them and create a lid.

Chill in the fridge for at least an hour before serving.

You can make the pate mix and put into containers and then freeze them with gladwrap pressed down firmly to the top of the pate before the butter stage if you like - will freeze for a month.
