SAUVIGNON BLANC 2013D.O. MAULE VALLEY - CHILE

WINEMAKING:

Gentle machine harvesting during cold night in order to preserve delicate varietal character of the Sauvignon Blanc. Cold soaking for 4-6 hours before gentle pressing. Settling for 24 hours, racked off its heavy lees before being inoculated with special selected yeast strains. Temperature controlled fermentation at 16-18°C for 18-20 days. Left on its fine lees for 4 months to enhance volume and richness. Clarified and filtrated before bottling in late spring.

TASTING NOTES:Brilliant pale lemon color. Intense youthful aromas reminiscent of green apples, fresh cut grass, gooseberries, and hints of elderflowers and mineral. The palate is refreshing with charming gooseberry fruit and hints of minerality, giving a perfect harmonious balance. The finish intensely filled with charming fruit with a mouthwatering acidity.
