This year’s theme is: With God All Things Are Possible There is only one hotel reserved for the Convention. Your reservation must be re- ceived no later than August 16, 2011. After this date, reservations will be accepted at the best available rate based on availability. Group rates are effective three (3) days be- fore and three (3) days after conference dates, subject to availability. Jim Friebel, Chairperson Ways and Means Committee The Italian Catholic Federation will host its 2 nd “A Night for the Seminarians” fundraising event. This year the event will be held on Saturday, June 18, 2011. The event is sponsored by the Ways and Means Committee with the help of other Central Council and ICF members. The net proceeds from this event will be placed in the Providenza Seminary Fund, which supports the education of Seminarians in the various districts of the ICF. Last year, with your gen- erous support, we donated a profit of $11,457.56 to the Providenza Fund. It will be a “Black Tie Optional Event” held at San Carlos Church Hall - 550 Church Street - Monterey, CA 93940. The Social Hour will be at 6:00pm and the dinner will follow at 7:00pm. The meal will be a Prime Rib dinner with all of the trimmings. The evening’s en- tertainment will be provided by Fr. Gaetano Borgo from Venice, Italy. Fr. Borgo is known around the world as “The Singing Priest.” There will be dancing afterwards. The price per person is $50.00. There is a limit of 325 people. One of the ways we can express our appreciation is to support our Seminarians’ vocations - their journey to becoming a “glimpse of the Lord.” We invite you, our Districts and Branches, to support this event by blessing us with your attendance and/or kindly making a donation. All dona- tions will be recognized and posted at the event, in the Bollettino, and on the ICF website. He needs you to achieve some- thing this great. Some people want to believe they can accom- plish great things alone. Not me!! I know how impor- tant you are. Next month is Membership month. Try new ideas to bring new members into your branch. 1. Set a goal on the number of new members you want to bring into your branch. Be realistic. Encour- age your members to bring in new members. 2. Did you know on May 1 one millionpeople will be in Rome for the beatifi-cation ceremony for Pope John PaulII. There are no tickets needed for theevent as it will be first come first servedin securing a place in St. Peters Square.The elaborate ceremony marks the lastformal step before possible sainthoodfor the beloved pontiff. Pope Benedictapproved the miracle needed for be-atification. The beatification will takeplace one week after Easter. The cer-emony will begin at 10am. Spectatorscan than file inside St. Peter’s Basilica,past the closed coffin of John Paul II,which will be brought up from thegrotto tomb below the basilicia. It willbe televised for all to see.

Did you know in Italy no meal isserved without bread. Bread may be servedin loafs or rolls, bread toasted in soups orin salads or pizza. In the Tuscany Region afavorite antipasto is fettunta, a toasted orgrilled bread rubbed with garlic and oliveoil. In Rome add a topping of vegetablesand cheese and it becomes bruschetta. InItaly the Italians either make or buy freshbread daily. But stale bread is never thrownout, leftover bread can be made into breadcrumbs and used for breading or stuffingmeats. Each region has its own variety ofbread. In Southern Italy and Sicily bread

often contains olive oil. Pene integrale(whole wheat bread) is traditionally stillbaked in wood ovens. You will not findflabby damp white sandwich loaves in anItalian bakery, for sandwiches the Italiansprefer ciabatta sliced or focaccia. Be sure toserve your favorite Italian bread at your nextmeal.

College: College of the CanyonsMascot: Cougar

A winner of a 2010 Italian Catholic Federa-tion scholarship, A. J. Rojas is attendingCollege of the Canyons in Santa Clarita,California. College of the Canyons is part ofthe California Community College system,offering degrees, certificates, and transferopportunities for its students.

He chose College of the Canyons be-cause it offers a top-rated Fire Science pro-gram. A. J. wants to earn a Bachelor of Sci-ence in Fire Science degree and plans tobecome a fire fighter and eventually a para-medic.

A.J. is grateful for the ICF scholarship,noting that it helped him pay for his booksfor 5 classes. With the high costs of text-books in vocational programs, such as FireScience, ICF scholarships often ease theburden on students and their parents.

Caz Hildebrand and Jacob Kenedy wiselywrite, “Pasta is a simple thing but getting itabsolutely right depends as much on choos-ing the best pasta shape for the sauce as oncooking it properly. “ In their interesting anduseful The Geometry of Pasta, they set outto show the reader “how to develop an in-stinct for matching pasta and sauce . . . [andto] explain how to team up pasta with sauceto maximize taste and texture . . . “

Within the pages of The Geometry ofPasta, Hildebrand has created simple yetelegant black and white illustrations of vari-ous pasta shapes. You’ll find the more com-mon pastas illustrated, but you’ll also findmore unique and unusual shapes. Thereader will find Agnolotti, Canestrini andCanestri, Corsetti, and many, many morevarieties. The drawings of more 300 shapesof pasta are accompanied with “a history, astory to tell, and an affinity for particular

foods.” Not only does this make for enter-taining reading, but it also provides the chefwith excellent advice for creating the per-fect meal.

One will learn that “Canestrini are ‘littlebaskets’, shaped like old-fashioned wickertrugs that might be taken to market, into thewoods for foraging, or into the fields togather flowers. The shape is, in fact, a deri-vation from farfalle. With its double-cuppedshape, it provides an excellent scoop forsauces, especially types of fish and meatragù in larger sizes, and in smaller ones thetexture is delightful in soups and broths.”

To accompany the illustrations, chefJacob Kenedy has provided more than 100authentic recipes and the ingredients forover 200 sauces. For instance, withCansetrini, one can use the simple butmouth watering Sgombro e Rosmarino, arecipe consisting of Mackerel, tomato androsemary. To introduce the book, Kenedycovers the history of pasta and the basics

any pasta chef must know, including topicssuch as the use of salt and fat in cooking.The recipes, as well as the pastas, are fromall over Italy and represent a wide range oftastes and appeal to those with differentculinary experiences and expertise.

As the authors note, in The Geometryof Pasta, the reader will learn “the science,history and philosophy behind spectacularpasta dishes from all over Italy.” Whetheryou are the cook in the family or one wholoves to eat, you’ll find this book both en-tertaining, interesting, and a delight.

Saint Cresidio of FossaPeriodically, one of my friends who knowsme well will ask me whether the day will evercome when I’ll be canonized. Obviously, thequestion is asked because of my pious,evangelizing, self-effacing and ultra chari-table nature. Modestly, I reply that the Lordis in a better position to answer that ques-tion than I am. (Just between us, I certainlywould not turn the promotion down but therequirement that you have to be dead for atleast five years before canonization mightbe a little hard to take.) Besides all of that,we already have a saint in our family: AngeloGiocomantonio, my third cousin, alsoknown as Saint Cesidio of Fossa. Our fam-ily is really proud of Saint Cesidio and we

tell anybody who will listen about him.Cesidio was born in 1873 in Fossa, a little

hillside village in the Abruzzo at the base ofthe Gran Sasso Mountains of Italy where Ihave some pretty deep roots. During hisadolescence, there was much that distin-guished Cesidio from his peers: he spent agreat deal of time in prayer and in churchrites. The villagers who often saw him walk-ing about wearing a cassock dubbed him “ilfratino (the little friar). What they did notsee was the hair-shirt that he wore underhis outer garments.

In July, 1891, Cesidio and two other like-minded adolescent boys inquired at a con-vent in nearby L’Aquila about becomingFranciscans so that they, too, could modelthe life of St. Francis of Assisi. Two monthslater, Cesidio and his companions becameFranciscans and six years later, Cesidio wasordained. After two years of a tranquil reli-gious life, Father Cesidio requested that hebe dispatched to China where “many pa-gan souls needed to be redeemed.” His pro-vincial refused his request, but six yearslater, relented and Cesidio embarked on atwo-month journey to Tong-Siang, a Chi-

nese village where he assisted an aging mis-sionary.

Father Cesidio became an instant hit inthe village. He quickly mastered the Chi-nese dialect and affected the garb and beardof the common man. He bonded very wellwith the estimated 600 Christian convertsin the area and he instituted classes for themany catechumens who were eager to jointhe Faith. In his last letter to his family,Cesidio commented on his joy when he bap-tized thirty adults and looked forward tofurther evangelization of the natives.

On July 2, 1900, Cesidio was cautionedabout the activities of a Chinese anti-for-eign movement that was menacing foreign-ers and Christians. The group known byWesterners as Boxers was also waging acampaign of terror against Christian mis-sionaries in the provinces. When notifiedof the threat, Cesidio commented: “I don’tfear anything. We came from Italy to Chinaalready prepared to be martyred.” Two dayslater, a band of Boxers came his way to plun-der the church building.

Cesidio began collecting official churchrecords and the sacred vessels and vest-

ments used at Mass. Before he could finishthe collection, the demonstrators arrivedand demanded entry to the church build-ing. Cesidio fell to his knees and, after ashort prayer, he grabbed the Eucharist withthe intention of carrying it to the protest-ors. However, when he emerged from thebuilding, he was stoned, beaten andstabbed several times and then set afire.Some witnesses to the brutal act claimedthat just before he was set afire, Cesidiocried out: “Receive, O Lord, my spirit anddo not impute to these people this sin.” (Nottoo different than the words spoken byChrist at his crucifixion: “Father, forgivethem; they do not know what they are do-ing.”) After the deadly pyre burned out,only a few bony relics of Cesidio remainedin the quickly-disappearing scattering ofashes.
