Aren’t we lucky to live in

Hawaii? Not only are we

surrounded by natural

beauty and perfect weather, but

when it comes to ono kine

grindz, our food is second to

none. OK, I may be a bit biased

being a local girl and all, but real-

ly, we have a fusion of foods that

represent our vast multi-ethnic

population.

Take saimin, for example. It’s a

noodle dish unique to Hawaii

and developed during the planta-

tion era. Inspired by Japanese

udon, Chinese mein and Filipino

pancit, saimin can be easily rec-

ognized as a dish of its own.

From state fairs to schools to

s p o r t -

ing events and bon dances —

saimin can be found practically

everywhere. Hey, it’s even

served at McDonald’s! The popu-

larity of ramen in the Islands also

is equally comparable.

So this week, I took a step back

in time and returned to an

old stomping ground of

my parents: Sekiya’s in

Kaimuki. I also visited

other islandwide eateries

— some brand new —

ready to serve up these

steaming hot local

favorites.

And yet, no matter

where my taste buds led

me, I knew I was in for one

“Ono, You Know” deli-

cious meal that — manners aside

— had me slurping up a storm.

Tanaka SaiminThe 10th of October was an

auspicious day for Joan and Paul

Watanabe as they opened the

doors to Tanaka Saimin on North

Nimitz Highway next to Party

City. Open daily, this new 5,000-

square-foot establishment is

pristine in every possible way

and serves up old local favorites

that customers seem to love.

“We’ve been busy since the

minute we opened,” says Joan,

who credits her parents,

Toshiaki and Mitsuyo Tanaka, for

their relentless support. “Saimin

is our specialty, from traditional

saimin, to won ton min, udon

and hoso udon. We also have

plate lunches and breakfast.”

And you can’t go wrong with

the Tanaka Saimin Special

($8.45), a large won ton min with

two pieces of shrimp tempura on

the side. The saimin is cooked to

perfection, immersed in a flavor-

ful soup base, and the tempura is

guaranteed to ease any hunger

pains.

“Our tempura is very popular

because people like our batter.

We also have mushroom tempu-

ra, Okinawan sweet potato tem-

pura, eggplant and zucchini,”

she adds.

Tanaka Saimin offers a wide

array of side orders as well,

including Yakitori Teri Chicken,

Cone Sushi, and the Barbecue

Beef Sticks are winnahs! They’re

f you’ve noticed theWaikiki diningscene has suddenlybecame a little bitmore fun, you canthank a certainiconic Japanese

character and an energeticrestaurant owner.

On Oct. 15, Makittii — theJapanese buffet restaurantoffering 30 different kinds ofsushi, a real Japanese break-fast and the Sanrio characterHello Kitty — opened for busi-ness to the excitement of chil-dren and those who remain a

child at heart, like its 60-year-old owner.

“Mr. Makino is a kid atheart,” says Chris Mitchell,the general manager of opera-tions. “He likes bright colors,he likes the characters and hejust likes to have fun.”

When Toru Makinoapproached Sanrio Co. Ltd.with the idea to feature its leg-endary characters in a Waikikirestaurant — a venture thatwould appeal to both localsand visitors alike who can’tget enough of the adorablecharacters — company offi-

cials jumped at the chance.Now, after months of planningand some $400,000-$500,000worth of renovations, theeatery that features Tiki stat-ues of My Melody, Badtz-Maru, Monkichi and, ofcourse, Hello Kitty, is readyfor business.

So are Makittii’s customers,who were already makingplans before the restaurantofficially opened its doors.

“I had a woman call up andsay she wanted to hold a grad-uation party for 250 peoplehere,” says Mitchell.

Birthdays are bound to bepopular as well. The restau-rant features a gift shop wherecustomers can buy all sorts ofSanrio gear — including theMakittii Hello Kitty that is onlyavailable at the restaurant.Birthday boys and girls alsocan get a free gift and a photowith Hello Kitty herself.

If you’re not much of a HelloKitty fan but are excited aboutJapanese food, the restaurant

offers separate seating areaswhere the trademark pink andgreen give way to naturalwood and Island colors. Therestaurant also is very breezy,making it a comfortable envi-ronment any timeof day.

Makittii differsfrom Makino’stwo other Oahurestaurants inthat, from 7 a.m.to 9 p.m., it does-n’t close. Makittiioffers breakfast,lunch, an after-noon tea and din-ner service at

5:30 p.m. “Sometimes customers

come in at 1:30 and they wanttempura, sushi, salad, teppa-nyaki, and at 2 they can trythe desserts,” says Makino.

IThanks to a fun-seeking owner who enjoys

bright colors, the brand new Japanese buf-

fet restaurant Makittii helps to bring out

the kid in its guests, who can dine on a vari-

ety of sushi, tempura and teppanyaki while

enjoying a pinch of that ever-so-cute charac-

ter, Hello Kitty.

In addition to the cakes,pastries and sandwichescommon during an after-noon tea service, Makinohas brought in a specialtea from Taiwan that isavailable only at Makittii.

“It not only tastes good,but it is good for you,”says the owner.

The notion of healthyeating comes up quite a bitwhen speaking with theaffable owner. No place isthis more obvious than inMakittii’s breakfast menu.

Breakfast buffets arecommon throughout thearea, but rare is the hotelor restaurant that featuresan actual Japanese break-fast that includes tradi-tional fare such as rice,miso soup, sweet beans,fish, noodles and vegeta-bles. Add this to Americanbreakfast staples includingpancakes, sausage andeven an omelette bar, andit’s unlikely you’ll leavehungry.

Makino says his goal isto always make his newrestaurant better than theprevious one. To help with

this objec-tive, he hasbrought in 15chefs fromJ a p a n ,including fivewho will beworking ondesserts alone.

In addition, the restau-rant has partnered withHakkei and Gaan Expressto add more options to themenu. Those optionsinclude boasting what islikely a first for Hawaii: atofu bar that featuresseven different types oftofu.

Makittii is located at theold Perry’s Smorgy onKuhio Avenue, and has val-idated parking in theMiramar at Waikiki Hotelfrom 5:30 to 9 p.m. It’s $2for two hours onWednesday throughFriday at dinner and allday Saturday and Sunday.Hawaii residents get anautomatic 20 percent offtheir meals with validphoto ID for each person.Gift certificates also areavailable for purchase.

Lunch Sets,Great BetsSushi Ichiban

Sushi chef Manny Nakasenh is get-

ting used to customers asking if

the prices on the menu at Sushi

Ichiban are correct.

“People don’t expect to find this

kind of quality for these prices,” he

says of the $8.95 lunch sets that have

been attracting diners since the restau-

rant opened just four months ago.

The lunch set prices are a deliberate

effort to offer the best possible value

to customers, and introduce new cus-

tomers to some outstanding dishes.

“We work with great vendors, and we

shop around to get the best prices so

we can pass the savings along,” says

Manny.

Enter the restaurant from the 11th

Avenue parking lot, or from the main

door fronting Waialae Avenue, and

you’ll find an attractive, clean, welcom-

ing dining room that seats about 40

people. The sushi bar dominates, and

Nakasenh takes an obvious delight in

preparing food while customers watch

him at work.

Among the most popular favorites

on the current, specially priced lunch

menu are Chicken Katsu, Pork Katsu

and Teri Chicken. And try the mochiko

chicken for a taste of a local-style

favorite done well.

A Sushi Lunch Set serves as a great

example of the quality and value

offered at Sushi Ichiban. The $8.95 set

includes two pieces of salmon, two

pieces of ahi, two pieces of Thai snap-

per and one piece ika (squid) with

tobiko. All sets are served with rice,

tsukemono and house salad.

The regular menu served at lunch

and dinner is also available daily, and

includes fresh fish, steaks, chicken,

udon and ramen, sushi and sashimi

sets and even pasta.

But at $8.95, the lunch sets are rea-

son enough to rush over before word

gets out.

Isn’t it amazing how

something as simple as a

list of names of wines can

be so intimidating? For

many diners, just the

appearance of a sommeli-

er, or wine steward, at

their table raises their

stress level.

I often think that the rea-

son I see so many people

drinking water during din-

ner is just because of the

snobbery and fear that’s

still associated with order-

ing wine in restaurants.

Incredible how we’ve let

something so enjoyable

become so terrifying.

There are actually a cou-

ple of simple ways to let a

server/sommelier know

how much you want to

spend, and an experi-

enced waiter will be happy

to look for clues to help

you in ordering a wine to

suit your budget. My

favorite way is to open the

wine list and tell the wait-

er, “I’m looking for some-

thing like this,” letting my

finger point to the price of

a wine, rather than the

style. Then I’ll ask if he can

recommend anything “like

this” to go with our food.

Other guests are

unaware of the “secret”

signal, the waiter should

immediately understand

the price range and an

enjoyable wine ought to

be forthcoming.

It’s the most popular entrée

a brief absence.

Yuka Shoop“This is my second time

here. The last time I came I

was so impressed with the

food that I couldn’t wait to

come back. I like the pho

and the green papaya

salad. The green papaya

salad is very good. Today

we’re having the pho with

rare beef and the green

papaya salad — just the

same as the first time I

came. I enjoyed it so much I

didn’t want to take a risk!

“I like the atmosphere,

which is very casual, and

the staff has been very, very

friendly. I’d recommend the

restaurant and I’m definite-

ly coming back again.

Setsuko Sato “This is my very first time

here, and, in fact, I’ve never

had this kind of food before.

I think it’s very delicious. It’s

my first taste of these kind

of flavors — of the basil and

the lemongrass mixed in

with the spices — and the

pho is something I’ve never

experienced. I love the taste

of the broth; it’s light and

not greasy and it really

tastes wonderful. For a first-

time experience of a differ-

ent taste, this has been very

good.”

E ach of our Hawaii-Korean restaurants has a signaturestyle. Some offer rare meats in hot pots and stews; oth-ers, an Americanized twist on traditional food. At

Camellia Buffet on McCully Street, the restaurant boasts a pop-ular poke, fresh sashimi, spicy marinated pork, and a lesser-known meat superbly suited to high heat and quick grilling –flap meat. Granted, it’s not the most glamorous name, but thisinexpensive cut of beef (part of the short loin), is ideal for usein yakiniku-style cooking.

“The flap meat is what we serve at dinner time, as well as sir-loin steak,” says Camellia Buffet manager Kelly Park. “Peoplereally like it.” That’s because the humble flap is full of flavor,similar to skirt and hangar steak.

It’s best when cooked over high heat and to a temperature ofno more than medium rare. That way you’ll get all the flavorwithout any of the toughness that comes with overcooking.And make sure the meat is sliced thinly and cut on the bias forthe best way to maximize flavor and texture.

It could easily be the signature meat for the unpretentiousCamellia Buffet, a restaurant that’s been steadfastly servingsimple, homemade food for 25 years. Park has been at therestaurant almost since the beginning.

“I’ve been here almost 20 years,” she says with a smile,“and many of the staff have been here a long time, too.”

She maintains that one of the reasons for Camellia’slongevity is that customers enjoy the food, but they alsolove the staff.

“The customers come back because we have goodfood, but also we have a very warm atmosphere,” saysPark. “We know all of the regulars, we know what theylike and don’t like, and we always listen when they tellus what they want to see on the menu. They joke aroundwith us, they give us advice. It’s almost like a family rela-

tionship.” Recently, customers have asked for a couple of new things, includ-

ing dishes for children. “We noticed that people were asking more and more if they could

have something for their kids,” says Park. “Not all kids like spicyfood and vegetables, so we added orange chicken.” It might seemslightly incongruous amid the kim chee and cucumber, but theChinese-influenced orange chicken with fried rice is a big hit withfamilies.

“We cook it all ready so the kids don’t have to wait to eat,” Parkexplains. “They love it.”

You’ll find many of the vegetables, sides, sauces and meats com-mon to Korean buffets on the Camellia line, including a seaweedsoup with generous amounts of seaweed, red bean porridge, redbeans and rice, rice and noodles.

Newer menu items include Korean pancakes. “People like them because they are trying to eat more healthy,”

notes Park of the pancake made with sesame oil, soy bean paste andseaweed.

“It’s good for vegetarians, and it’s a healthy food,” she says,adding that the Korean pancake has been an instant hit with diners.

Camellia’s kim chee is unique in its use of anchovy broth as a baseinstead of water. The anchovies bring a rich flavor to the kim cheebefore the other ingredients are even added.

Homemade poke — spicy and tossed in a mixture of sesame oiland chili peppers — is the single most popular item on the buffetline, and in the evening sashimi is added to the menu.

Camellia may be casual and unpretentious, but it can get a littlecrazy on the weekends. “People have to call to make a reservation,”says Park. “On the weekends it’s very busy, so we always advisepeople to call if they’re coming after 6:30.”

Go at lunchtime if you want to check out the restaurant for thefirst time, or earlier on weeknights when the crowds aren’t throng-ing.

Highly recommended from the buffet are the flap steak, sirloin,poke, short ribs and the spicy pork, and make sure to try the housered potatoes marinated in a shoyu dressing, along with the won bokkim chee and namul.

“It’s a meat lover’s paradise,” says Park with a smile. “That’s whypeople have been coming back for more than 20 years.”

Sumo Ramen is one of my toppicks when it comes to all things“saimin,” or in this case, ramen.

Owners Ken and Cindy Wongopened the Market City ShoppingCenter location in 2004, and theysay business has been kind,thanks to loyal patrons and newdining enthusiasts. Sumo Ramenhas a diverse menu ranging fromcurry to fried rice, to fried noo-dles, udon, cold soba udon, currycombos, appetizers — and, ofcourse, ramen — be it spicyramen or ramen combos. Whew!Take your pick. Being a noodleconnoisseur myself, I had to optfor the Mochiko Chicken Ramen($6.95), a localized fusion of ten-der mochiko chicken and authen-tic ramen.

“Everything is made fresh,daily,” Cindy says. “Our soup baseis traditional and popular amongcustomers.”

Locals also seem to relish in theMochiko Chicken Plate (reg. $6.75,mini $4.50) and Chicken KatsuCurry (reg. $6.95, mini $4.95). Ton Ton Ramen knows a thing or twoabout enticing noodle dishes that areboth healthy and fresh. Owner Ken Choopened this West side eatery in December2004, specializing in traditional favoritessuch as Miso Ramen ($7.75) and ChickenKatsu Ramen ($7.75), as well as new spe-cialties including Black Sesame TantanRamen ($8.50), Soft Rib Ramen ($8) andIppin Ramen ($8), along with side orders

of gyoza, kimchi and Spam katsu. Thechefs prepared the Black Sesame Ramen,the Soft Rib Ramen and my favorite CurryRamen ($7.75) to tempt my taste buds.

Cho says the Soft Rib Ramen is pre-pared in an original Japanese style inwhich the ribs are slowly cooked for morethan eight hours until tender and juicy.The ramen is served in a garlic-shoyubase with a traditional half-cooked egg.

“We sell 100 of these a day on average,”he states. “It’s very healthy.”

The Black Sesame Tantan Ramen alsohas benefits that support vascular andrespiratory health, and helps to relievecases of rheumatoid arthritis. I also appre-ciate that Ton Ton Ramen uses no MSG inits cuisine, which helps minimize theoccurrence of migraines.

Zippy’s Restaurants When I think local, I think Zippy’s. I

know for a fact that as soon as I returnhome from the Mainland, or anywhereacross the globe, for that matter, the firststop is most certainly to this local joint.This beloved restaurant has been aroundfor generations and can appease all crav-ings and appetites. Since we’re on thetopic of saimin, the Zip Min ($8.25) is def-initely worthy of mention. As a signaturefavorite, the Zip Min was first introducedsoon after the first Zippy’s restaurantopened in McCully in 1966, and offered inthe dine-in restaurants only, it remains a

favorite to this day. The Zip Minis derived from Zippy’s own spe-cial recipe of noodles, won ton,breaded shrimp, choi sum, fishcake, dried seaweed, egg, sweetpork and green onions.

“It’s unique in that it is a spe-cial combination of items — weuse freshly made local noodles,”says Jeanine Mamiya-Kalahiki,marketing manager for Zippy’sRestaurants.

“We have a lot of people whoeat here regularly and keep com-ing back,” Morihara says. Whatbrings them back, you may ask?“Probably the saimin,” she says.The soup base is made fromscratch with dried shrimp base,konbu and chicken — so don’tbe surprised if you slurp upevery last drop. Sekiya’s accom-modates all appetites with small($4.95), large ($6.95) and extra

Butternut Squash & Lobster Bisque with Crispy Seafood DumplingServes 4 | by Chef Chai Chaowasaree

Ingredients:• 4 cups diced butternut squash• 2 cups lobster stock (can substitutewith vegetable or chicken stock)• 1 tablespoon vegetable oil• 1/2 tablespoon chopped garlic• 2 tablespoons choppedonions

• 2 tablespoons chopped celery• 2 bay leaves• 2 springs fresh thyme • 1 cup heavy cream• pinch of pepper• salt, to taste (some lobster or chick-en stock may already be salty)

Preparation:• In a soup pot with medium heat,add vegetable oil, celery and onion.Sauté for a minute, then add garlic

and sauté for 30 seconds. • Add butternut squash and chickenstock and cook about 15-20 minutes(depending on the heat) until squashis soft. • Add heavy cream, salt and pepperand puree in a blender until soup issmooth.

Crispy Seafood DumplingIngredients:• 8 spring roll wrappers• 4 medium-size shrimp, finelychopped• 2 scallops, finely chopped• 1/2 cup crab meat• 1/2 whole egg, beaten • 2 tablespoons chopped greenonions• 1/4 tablespoon garlic powder

• 1/4 tablespoon onion powder• pinch of paprika • pinch of pepper and Aloha shoyu,to taste• 2 cups vegetable oil for deep-fryingdumplingCombine shrimp, crab meat and scal-lop with one-half of beaten egg, garlicpowder, onion powder, paprika, greenonions, pepper and shoyu sauce untilingredients are well-combined.Scoop in one-half tablespoon of mix-ture and wrap with spring roll skin.Repeat for all wrappers.
