things up a bit with some zesty chili toawaken your senses and your tastebuds. Chili is probably considered oneof the most versatile of dishes and canbe paired with practically anything —chips, bread, rice, salad, you name it— I love everything about it. Chili alsois a hit at any gathering and better yet,you can personalize it with any spicesand flavors to make it your own.With that, gather up your appetites

1132 Cafe &Espresso BarCraving some

delectable home-made chili, I headed on down to 1132Cafe & Espresso Bar at the FirstHawaiian Center (999 Bishop St.) whereowner Stefan Kruger and wife Ednaserve up the most tantalizingly freshsandwiches, soups, salads, pastries andother local dishes all made-to-order.Stefan says 1132 Cafe caters mainly to

the office crowd, providing breakfast andlunch for those on the go. The Krugersopened 1132 Cafe & Espresso Bar fiveyears ago at 1132 Bishop Street, prior toopening the doors to its most recentlocation at the First Hawaiian Center (999Bishop St.).The majority of items on the menu

are derived from Edna's personalrecipes, including the appetizing ShoyuChicken, Curry Fried Rice and mouth-watering Chili.

“Our homemade chili is very popu-lar,” Edna says. “It features a zestytomato-based sauce with spicy piecesof Portuguese sausage.The Chili Combo ($6.98) is my per-

sonal favorite, as I think it pairs per-fectly with the Mediterranean salad,complete with a medley of mixednuts and spicy cucumber dressing.There also are other combinationoptions as well.As for the chili itself, I can't help but

savor each bite consisting of leanground beef, fresh chunks of tomato,bell peppers, onions and beans. Talkabout comfort food at its best! If you’recutting carbs, don't worry, no rice isneeded — the chili is downright onoli-cious on its own!For the lighter of appetites I suggest

the small bowl of chili ($3), or largebowl ($4) if you're in the mood forsomething a bit more filling (a slice ofbread is included).

Rumor had it that despite the alreadyirresistible favorites to grace theKenny’s menu, chef Ernesto Yeban andthe rest of the staff were working tire-

lessly on perfecting 15 new items onthe menu. Excited to see what all thehype was about, Dining Out met withYeban himself, longtime employee andassistant manager Erlene Hutchinson,catering manager Martin Corcino andrestaurant manager Rory Sandobal,

who shared with us exactly whatmakes Kenny’s a class act — with manydelicious surprises in store!

DO: Kenny’s Restaurant opened itsdoors to the public 45 years ago.What’s the concept behind the restau-rant?

Corcino: Here at Kenny’s we providea combination of local, Japanese andAmerican cuisine. I guess you could saythat we’re really known for our freshisland fish that our local fishermenbring in two or three times a week.

Sandobal: Kenny’s has been heresince I was a child, and it seems likeeveryone knows of KamehamehaShopping Center and Kenny’s

Restaurant. Thisrestaurant alsobrings back a lotof memories forfolks, and theyreminisce aboutsharing mealshere with theirfamilies andloved ones.

DO: So, haveyou seen genera-tions of familiespass throughhere?

Corcino: Ohyeah, I used tosee kids whowere below myknees and now

they’re way taller than me! We’vewatched a lot of children grow up here,and they’re still eating the samefavorites from when they were young.

DO: Yes, Kenny’s is an iconic land-mark, not only in Kalihi, but on the island

as a whole. What do you think has attrib-uted to much of its success?

Hutchinson: Definitely. The loyalcustomers that we’ve had all theseyears have played a big part in our suc-cess. Also, the people who work here— we all pull together to make every-thing a success — without the employ-ees, we’re nothing. It’s a real familyatmosphere here, and everyone getsalong. It takes a lot of good people tomake a good restaurant. The food alsohas brought everyone in time and timeagain.

Yeban: Our job is to serve our cus-tomers the best that we can, so wealways try to provide them with excel-lent food and service.

DO: Chef Ernesto, please tell usabout your culinary background.

Yeban: Well, I guess you would call it“old school” (laughs). I've worked with

chefs from the Hale Koa and theOutrigger Canoe Club for thelast seven years prior to comingto Kenny's, and I’ve been herefor the past 18 years. Here atKenny’s the local-style of cook-ing is similar to what I do, and itwasn’t hard for me to continueKenny’s traditional style ofcooking. I’ve also learned a lotfrom the other managers andemployees here at Kenny’s whoknow a lot about cooking —everyone shares their insights.

DO: Obviously, you and therest of the staff at Kenny’s mustbe doing something right. This110-seat restaurant is alwayspacked. What are some signa-ture favorites here at Kenny’sthat have remained constantthroughout the years?

Sandobal: Most definitelyour Chinese Chicken Salad,Oxtail Soup and ChoppedRibeye Steak.

Yeban: The BBQ Beef Tri-Tip($16.69) also is very, very pop-ular among our customers, aswell as the Kenny’s KoreanStyle Chicken ($11.99) and

Akule ($14.95). The Akule isdipped in salt, pepper andflour, and then grilled, or youalso can choose to have itsteamed with a nice shoyu andsugar sauce (patrons canrequest to have it sugar-free aswell). The meal is served withmiso soup, tsukemono andchoice of white or brown rice.Our Korean Boneless Chickenalso is very special to us. Wespecially marinate the chicken,tenderize it, coat it with flourand then deep-fry it. We seasonit with our specialty kal-bisauce. Rice and a medley ofmixed vegetables completesthe dish. It’s important to usthat when customers comeback to dine they receive thesame good food that they knowand love. Being that 85 percentof our customer base is returncustomers, we’re hoping thenew menu items will offer themsomething different to try, aswell as help to bring in newcustomers.

DO: Yes, you folks have beenworking on revamping the

menu and changing it up some.Can you elaborate on this?

Sandobal: We’re takingsome items off the menu andadding some new items as well.We’re still sticking with thefavorites, but we're addingentrees that we think theyounger generations will reallyenjoy. We have a great 12-inchTeriyaki Chicken Pizza($12.50). Our teriyaki sauce is asignature item here at Kenny’s,so on top of our pizza madewith fresh mozzarella cheesewe have grilled yakitori chick-en, white onions and greenonions, drizzled with mayon-naise. You wouldn’t believe it,but the mayonnaise really addsto the dish — it really balancesout the taste.

Hutchinson: As far as othernew menu items go, the TacoSalad and Turkey CranberrySalad have been selling reallywell, in addition to ourStrawberry Pancakes andHaupia Pancakes.

DO: Kenny’s also is knownfor its catering. What type of

events do you usually caterto?

Corcino: We cater a lot ofpotlucks, weddings, gradua-tions, even small office partiesor luncheons. We’re also in theprocess of coming out with anew catering menu in the nearfuture. And for an additionalcharge we’ll deliver to any-where on the island.

Shabu shabu restaurants havebecome a hot trend on the localdining scene in the past fewyears, and for good reason.Cooking over a tabletop hot pot is

fun for diners, giving them free rein overwhat flavor combinations they want tocreate at any given moment. It also is ahealthy way to eat, as most ingredientsare fresh vegetables, seafood or lean cutsof meat that are cooked in soup brothsrather than oil or butter.

But at many local shabu shabu establishments, the fullexperience of dining out is dampened by limited foodchoices and the lack of service, as customers must often-times serve themselves from cold, industrial refrigeratorshoused in a dining room surrounded by bright, flashyneon lights.

Not so at Shabu Shabu Bangkok. Located on the maukaend of Kapahulu Avenue, Shabu Shabu Bangkok is decid-edly contemporary-casual in design. The calming wall col-ors, collection of Asian-inspired artwork, soft music anddim lighting beckon diners to slow down, relax and savorevery bite over interesting conversation. For those whowish to escape the crowds in the main dining room, thereare three private rooms that can seat six people, and alarger room with a seating capacity for 40 that can be sec-

tioned off by sliding glass doors.Though the concept of shabu shabu is the same

as in most places, Shabu Shabu Bangkok steps itup a notch by having a friendly wait staff bringorders to each table. Soup broths come in five fla-vors — beef, chicken, vegetarian, Thai curry andthe house Tom Yum broth — and cost $2 per per-son, with free refills available. There are the typicalmenu combo choices of seafood, meat or vegetari-an sets, as well as a la carte offerings like vegeta-bles (from $3.75), meats ($4.75) and seafood andmushroom plates ($5.75).

Every entrée comes with five different Thai dip-ping sauces — Cilantro Lime, Tom Yum, Thai SoySauce, Ginger Onion and the house Red BeanSauce — to kick up the soup base, and for evenmore spice, each table has a bottle of fresh Thaichili peppers on the side.

Per diners’ requests, Shabu Shabu Bangkok intro-duced a full menu of Thai cuisine last month toaccompany its extensive list of shabu shabu options.

From appetizers, soups and salads to entrees,Thai curries, noodles, rice dishes and desserts, the

new menu has something for everyone.Seafood lovers will rejoice with an order of

Crispy Shrimp Wraps ($7.95), a mild combinationof shrimps, water chestnuts and spices wrapped inpastry shells and deep-fried served with coolcucumber slices and a vinaigrette dipping sauce,and the Fish Patties ($7.95), local fresh fish mincedwith string beans, red pepper, lemon grass, shal-lots and fresh spices.

For those who like their meals hot, there is theEvil Jungle Prince, a famous dish that combinesfresh basil, coconut milk and red chili with choiceof shrimp ($14.96), chicken ($12.95) or vegetablesand tofu ($9.95) served over a bed of chopped cab-bage. Or sample the Panang Curry, a fragrant andbrightly colored medium-to-hot curry made withshrimp and scallops ($16.95), chicken ($12.95) oras a vegetarian option ($10.95).

Other standouts on the new menu includeVegetarian Spring Rolls ($7.95), Spicy Lemon GrassSoup (Tom Yum, $4.50-$5.95), Green Papaya Salad($6.95), Long Eggplant and Sweet Basil Stir-Fried($9.95-$12.95), Green Curry Seafood ($16.95), Pad

Thai ($9.95-$12.95) and SpicyFried Rice ($9.95-$12.95). Fordessert, choices includeBrownie Ala Mode ($7.95),Thai Tapioca with AppleBanana ($4.95, $7.95 with scoop ofice cream), Cheesecake ($5.95) and twonew options, Fried Banana Lumpia ($7.95) andThai Halo Halo topped with coconut, ube or mangoice cream ($7.95).

There also is a list of tasty beverages to pair withthe food. For example, the sweet and creamy ThaiIced Tea ($4.50) is the ideal companion for a curryor seafood dish, while the light, refreshingCalamansi Juice ($4) — a naturally sweet drink thattastes like a combination of tangerine juice andlemonade — goes well with stir-fry or spicy fare.

sine, the options are plentiful atMaple Garden Restaurant. MapleGarden Restaurant, the former YenKing Restaurant at Kahala Mall, hasbeen serving locals genuineNorthern Chinese cuisine for morethan 30 years, according to generalmanager Richard Lam.

“We are theoriginal

Szechuan-style Chinese restau-rant,” Lam explains. “We have beenopen from 1975 and we serveSzechuan-style spicy food.Szechuan-style is a little closer toNorthern Chinese food. SouthernChinese food is a little sweeter andnot that spicy; Northern Chinesefood is more spicy.”

Lam, who worked at Yen King for18 years, took over the businessafter his boss retired. After YenKing’s lease expired, the restaurantrelocated to its current location onIsenberg Street. Since then, Lamrenovated the restaurant and creat-ed an innovative menu that includ-ed customer favorites from theoriginal Yen King restaurant.

“The Smoked Tea Duck … I don’tthink a lot of restaurants do it,”Lam says. “It has the smoky flavorand it’s crispy inside. For theBraised Pork Thigh, it’s the thighpart, so there’s not much fat. Wecook that one for about six hoursto make it soft. We also offer a lotof seafood options, like crab andlobster.”

Other menu favorites at MapleGarden include the Honey WalnutShrimp ($13.50), the Fish with BlackBean Sauce ($13.50) and theSautéed Crispy String Beans ($9.95).

Besides its authentic Szechuancuisine, Maple Garden is unique inthat it offers its customers two dif-ferent dine-in options: eitherordering à la carte or partaking ina gourmet buffet. The buffet isavailable from 11 a.m.-2 p.m. forlunch ($11.95 for adults, $7.50 forchildren) and from 5-8 p.m. for din-ner ($15.95 for adults, $9 for chil-dren). The buffet menu includes

many items on the regular menu,such as Kun Pao Chicken and Salt& Pepper Shrimp. Several entrees,however — such as the SmokedTea Duck, Cold Ginger Chicken andGarlic Shrimp — are only availableduring dinner.

“Customers are about 50-50(when choosing between the buf-fet option and à la carte),” Lamsays. “The average price rangeper customer is about $20 orless. We have a senior discountfor the buffet — 10 percent offevery day.”

In addition to the senior dis-count, Maple Garden offers itscustomers lunch and dinner platespecials. From 10 a.m. to 4 p.m.,customers can get the lunch platefor $8.25, which includes a choiceof two entrees — including selec-tions like Crispy Fried Chicken,Chili Garlic Shrimp, Spareribs inHoney Sauce and Sweet & SourPork — along with rice, tea andHot & Sour Soup. Customers havethe same option for the dinner

plate, which costs $9.25. Maple Garden is not only a local

favorite because of its cuisine andspecials, but also because itsfacilities are accommodating forbanquets, meetings and parties,especially during the graduationseason. Weekends — Fridays,Saturdays and Sundays — areusually the restaurant’s busiesttimes, due to the various sched-uled parties and meetings,according to Lam.

“We have two private rooms,”he says. “One room holds up to 20people and the other private roomholds up to 70 or 80. We do a lot ofmeetings — we have a projector,microphone and podium; every-thing is ready for use.”

prices of select menu items to what they were when Sejiuand Ayako Ifuku founded the landmark restaurant in 1961.“It’s one day every month, and we’re doing that to

recognize our beginnings and say thank you to the com-munity for supporting us all these years,” says vicepresident Jim Gusukuma.This Saturday (July 16), customers can get a Hot Dog

and Small Drink for just 25 cents! The anniversary spe-cial will be sold from 10 a.m. to 5 p.m. at the parking lottent only and will be limited to five items per customer(no phone orders will be accepted).“In August we’re having 25-cent Hamburgers,”

Ameal at Rainbow Drive-In is akin tostopping by your parents’ house fora quick bite to eat. The food is sim-

ple and unpretentious, but somehow recre-ating those homemade dishes is impossible to do on your own.The reason for this familial feel is because Rainbow Drive-In

has been a family operation since it was founded by Sejiu andAyako Ifuku in October 1961.“Rainbow Drive-In is still in the same family today,” says vice

president Jim Gusukuma, who also happens to be the Ifukus’son-in-law. “The second generation is still running it and lookingto pass it on to the third generation.”Another part of the Rainbow Drive-In ohana is its dedicated

staff of 42 that helps the tiny drive-in run smoothly from 7 a.m.to 9 p.m. every day. In fact, many of the employees have beenwith the company for more than 20 years, such as kitchen man-ager Pam Martin who started with the company in 1983.“I think people would be surprised by how many employees

we have,” Gusukuma states. “Because our trademark is quickservice, we have to hire a lot of people to have fast service andget the plates out.”Though bustling

all year long, sum-mertime signals thestart of busy sea-son for the drive-indue to its closeproximity to Waikiki,Kapiolani Park andDiamond Head.“We’re fortunate

to be in Kapahuluand be so close tothe beach,”Gusukuma says.“And our busi-

ness noticeablyspikes when there’swaves!” he addswith a laugh.While the plate

lunches, mac salad,saimin, loco mocoand bentos havedrawn in locals foryears, RainbowDrive-In recently hasseen an increase in out-of-town customers thanks in part to glowingrecommendations and a feature on Food Network’s hit series Diners,Drive-Ins and Dives.“We’ll ask, ‘How did you find out about us,’ and they’ll say a friend

told us we gotta stop here, or they saw us on television or they askedthe hotel staff,” Gusukuma says.“Again, we’re very fortunate.”Rainbow Drive-In fans also can show their support for the iconic

however, is the substitution of ahikatsu for mahi mahi filet in RainbowDrive-In’s Mix Plate ($7.25).

“Mahi mahi is getting extremely hardto get right now, so we’ve changed toahi,” explains Gusukuma. “Instead ofthe grilled mahi mahi, we’ve substitut-ed ahi in the katsu form, just because itholds up better and is more tenderthan frying it.”Everything else is the same on this

best-selling plate, which also comeswith a boneless chicken cutlet and bar-becue steak served with two scoopsrice and choice of macaroni salad orcole slaw.“If people know us, they know we

don’t add different items very often, sothis is a major change for us,” Gusukumanotes. “But people should try it.”

bell pepper, assorted colors• 1 tablespoon chopped

green onion• 1 tablespoon fresh corn• 2 tablespoons mayonnaise• 1 whole egg• ground pepper, to taste

List B• 1 cup tempura batter

(3/4 cup all-purpose flour, 1/4 cup cornstarch, 1 whole egg and 1/2 cup of water, combined)

• 1 cup bread crumbs• 2 cups vegetable oil for

frying crab cakes• 2 cups Big Island baby

greens or mesclungreens

Preparation:• Combine ingredientsfrom list A, divide to a 3-ounce portion and form a

round pancake. • Dip crab cakes into tem-pura batter and coat withbread crumbs. • In a wok or deep fryer,pre-heat oil at 375 F, thenfry crab cakes to goldenbrown and set aside.• On a plate, lay downsalad as a bed then putdown crab cake and topwith fresh mango, tomatosalsa.
