Merry Christmas from
he idea to recreate the Nativity for this December’s cover was an easy one; pulling it off was a differ-ent story. We owe a big debt of gratitude to all
involved, because it would not have worked without the cooperation of many people.
This cover would never have been possible without June and Scott Allen of Pettit Creek Farms in Cartersville. They were truly a God-send. Pettit Creek was THE perfect place. They had the animals, costumes and
location we needed to rec-reate this Nativity. We can-not thank them enough for their help with dressing everyone and getting the animals in place. Their ani-mals are trained just for this sort of thing and to be that close to a camel was amazing; let alone THREE camels. Prior to popular
belief, they don’t spit, they just slobber a lot. We loved the donkey “Jane”. She was just the sweetest animal, and it was quite appropriate that she is expecting.
Next, we had to find our “Baby Jesus.” Holding this honor is, little ‘Hutch’ Collins, the four month old son of Alisha and Matt Collins of Dallas. Hutch is such a sweet baby, and was perfect in his role. The only time he really complained was when his little sock started coming off. He is a blessing to his Mom and Dad, and we thank them so much for letting us put their new baby boy around all the animals.

AROUND OUR TOWN - WHAT’s COOkINg
New Year’s Open House is an old fash-ioned way to entertain that’s easy on the host and hostess. This fluid party is best
served by an appetizer and dessert buffet; all you have to do is occasionally replace and replenish the food and make sure the coffee is hot and fresh.
Did you know that there are certain foods that many cultures consider good luck charms if eaten on New Year’s Day? Southerners, like us, eat black eyed peas, turnip greens and cornbread for luck and wealth. The ancient Romans served dates, nuts, and raisins. Dutch people consider food shaped in a ring to be good luck; the shape is symbolic of a completed year. And the Italians eat sweets at this holiday for good fortune throughout the New Year.
Get the whole family involved in deciding your menu; that way it’s designed to your taste and bud-get. However, doing forget to offer variety. If you get stumped, the internet is a great tool for finding recipes. Make sure you have extra trays of food pre-pared and stored in the fridge or freezer.
A
New Year’s Open House

Preparation:In large bowl, combine all ingredients except cilan-tro and stir gently to combine. Store, covered, up to 10 days in refrigerator. When ready to serve, mix in the chopped fresh cilantro and serve as a dip with tortilla chips or toasted baguette slices.
SOUTHERN GOLD BARS - Prep Time: 25 minutes; Cook Time: 45 minutesIngredients:
• 1 cup brown sugar• 1 cup butter, softened• 1 egg• 1 tsp. vanilla• 1-1/3 cups flour• 1 cup chopped walnuts• 1/2 cup peach or apricot jam
Preparation:Preheat oven to 325 degrees. Beat together the brown sugar, butter, egg and vanilla in large bowl until smooth and creamy. Stir in flour and nuts. Spread half the batter evenly in a 9” square pan. Spread apricot jam over the batter. Cover with the remaining batter. Bake at 325 degrees for 45-50 min-utes until light brown and set. Cool and cut into bars. Makes 16 bars.

hen it comes to raising healthy families, food plays a central role. Parents can teach good eating habits by encouraging healthy
choices. The result is children with strong minds and healthy bodies.
Last year, the CDC launched a new slogan, “Fruits & Veggies – More Matters.” A minimum of five fruits and vegetables is recommended daily. Look for new and interesting ways to add fruits and vegetables into your child’s diet. As parents, we need to lead by example. Choose different colors and textures to make your choices interesting and healthy. The deeper and richer the color, the more health ben-efits the food will provide. For example, orange car-rots provide many different vitamins and beta-caro-tene. These promote vision, prevent skin disorders and enhance immunity. The anti-oxidants prevent cancer and fight aging.
Green broccoli is loaded with beta-carotene, Vitamin C, folic acid, calcium and fiber. Vitamin C promotes immunity and serves as an anti-oxidant. Folic acid prevents neural tube birth defects and aids metabo-lism. It also reduces the risk of colon cancer and is necessary for heart health. Calcium builds strong bones and teeth and helps maintain a healthy weight. The fiber found in broccoli is both soluble and insoluble, helping to meet daily needs. The two phyto-chemicals found in broccoli squelch cancer-
The Rainbow of Healthy Food Choices
W causing agents and have been found to help maintain blood pressure. For these reasons, broccoli has been called the perfect vegetable.
Like wise, blueberries have been called the perfect fruit. Blueberries are among the fruits with the highest anti-oxidant levels and fight aging, especially in the brain. They can also improve memory and learning, promote urinary tract health, prevent infection, aid in weight loss, and act as a sleep aid.
The delicious red strawberry is rich in folic acid and high in anti-oxidants. It has also been shown to promote dental health by dissolving tartar. It is recommended to reduce high blood pressure, constipation, gout and even acne.
Yellow bananas are known for their potassium. Potassium is essential for muscle contraction and necessary for proper functioning of the heart and nervous system. Bananas are a good source of fiber and have been called “mood enhancers” because they contain tryptophan, which has a calming effect on the brain. They also minimize calcium loss and reduce the risk of osteoporosis.
There are many ways to incorporate fruits and veg-
etables into your family’s diet. Add blueberries, strawberries, peaches, raisins and bananas to your morn-ing cereal or oatmeal. Throughout the day, choose healthy snacks. Have apple slices with cheese or peanut butter instead of crackers or chips and dried fruit instead of sugary fruit snacks. Add some fresh fruit to yogurt. Choose a low-fat vegetable dip with broccoli, pepper strips, cucumber slic-es, carrot and celery sticks. Julienne some carrots or zucchini and add it to your spaghetti sauce. Add steamed cauliflower to mashed potatoes. Have
fruit for dessert.
Children tend to be better eaters if they have a say in what they are eating and they participate in prepara-tion. Encourage children to come into the kitchen and be creative. Give them healthy options and let them choose. Make pizzas with a variety of fresh vegetables. Consider making a desert pizza with dif-ferent kinds of fruits. Enhance old family favorites.
At Cobb Pediatrics, we encourage parents to feed their children well from the very beginning. Healthy eating habits start early in life. Fruits and vegetables are delicious, healthy, filling and low in fat, calories and cholesterol. They provide quick and lasting energy. Explore the more than 350 varieties of fruits and vegetables with your family.

hat can I write about water heaters? They heat water. Sorry, a bit of a Homer Simpson type answer about them but it shows you
how interesting water heaters can be. They are not really something you can get too exited about, but they are something we cannot easily do without. We all want hot water. We need it to wash and bathe in and we need it to clean with. Some of us want to use it to warm our pools, wash our cars, heat our homes or sit in our hot tubs but at the end of the day we all want hot water and the only easy way to get it is to use a water heater.
So thinking about it, what types of water heater are there? There are four main types but most of us will only need to use one.
Solar Water Heaters - These types of water heaters rely on the power of the sun to heat your water. How efficient they are depends on the amount of sunlight they get so this usually depends on where you live. The more sunlight and more intense the better and if the climate is hot in the first place then the water is already pre heated to an ambient temperature before the action of the sun. They are a good source of some hot water but are not really good enough to be classed as your main water heat-er, so you will need a conventional water heater as a
Water Heaters - Which One is for You?
Wbackup. Solar water heaters are a great and efficient source to warm the water in your pool but again, they rely on sunlight to provide a high enough water temperature.
Stove Powered Hot Water - Using your stove to heat your water is the oldest method around. It has been around for a long time, (if you think about heating water in an iron or clay pot), but these days many of us have water jackets built into our stoves. I have a wood-burning stove so in effect my hot water is free as my stove is often on. It is efficient as a water heater and does the job pretty well.
Electric Water Heaters - This type of water heater is relatively expensive to run. This is my backup heater and is useful within 15 minutes as I can have hot water to use for a shower when returning from a vacation and the heating has been off. It is there as a standby for me but is very easy to use as I just switch it on and before long I have hot water. For many people who do not have a stove or fire type water heater this is one of the few choices you have and in this case they are very good, although more expensive to use than a wood stove or solar energy.
Gas Water Heater - These tend to heat both your hot water and provide heating for your house
as well. Not all areas have a supply to gas although some people can also use a supply of bottled gas but this tends to be much more expensive than a piped supply. Gas heaters operate much faster than an electric water heater and they tend to be much cheaper to operate than electric if it is a piped supply so if you are looking to choose between the two then this may be your best choice.
Whichever system you decide to install, do your research first and work out which is the cheapest to operate. Also, you will need to look at the costs of the water heaters and the water heating systems you install and work out what is best for you.

ne of the harshest facts about the wintermonthsisthatmanyfactorscombinetomakeithard forbirds to find food.First, there is
justlessofit.Plantsthatmanybirdsmightfeedon,suchasberries,stopproducinginmanyareas,andthosebirdsthatliketofeedontheinsectpopulationwillfindthatithasprettymuchdisappeared,eitherdyingoutorhibernatingduringthecoldmonths.Sofindingagoodsourceoffoodisachallenge.
The other thing to keep in mind is that becausebirdsarewarmblooded, andwintertimeissomuchcolder, they need a very high source of energy tokeepwarmenoughtosurvive.Muchofthebirdseedavailablethesedaysdoesn’treallyprovidemuchinthewayofcaloriesorenergy.That’swhysuetfeed-ersareafavoriteforwintertimebirdfeeders.
Suetisrawbeeffat,typicallytakenfromaroundthekidneysandloins.Becauseofitshighfatcontentitisveryhighinenergy.Suetisoneofthebestfoodstoattractnuthatches,woodpeckers,wrens,titmice,chickadees,thrashers,cardinals,bluebirdsandmanyothertypesofbirds.And,asusualwithbirdfeeders,it can attract some less desirable wildlife like star-lingsandsquirrels.So, if theseareaproblem, youmaywanttouseasuetfeederwithacage, andfor
O starlings try a feeder covered on all sides but thebottom, which will feed many other birds but dis-couragestarlings.
Dependingonthetypeofsuetyouuse, itcanstartto melt and go rancid at temperatures above 70degreesF,sotakecaretoemptyafterthespringthaw.Another thing to keep in mind is the wintertime
need for water. Obviously, with freezing tempera-tures, the availability of water outdoors will drop, andatypicalbirdbathwillfreezeoverfairlyquickly
since they are designed tobe shallow. There are manyheatedbirdbaths,butprob-ably theeasiestway to solvethisproblemistoaddabirdbath heater to your existingbath.Makesurethatthebirdbathismadefromamaterialthatcantake theheat,someresinsmaymelt.Alsobesurethattheheaterhasathermo-stat so itwon’toverheat thewateraswell.
With a few simple steps likethis, youcanmakesure thatthe birds in your yard aregoingtomakeitthroughthewinter.

Bookkeeping for the Small Business: An Unavoidable NecessityBy Scott Flanagan
Inworkingasapartnerwithsmallbusinessesforovertwenty-fiveyears,Ihavefoundthatsomeoftheownersoperateaverysuccessfulbusinessandothersdonot.Bookkeepingand taxpreparation isanecessarypartofasmallbusinessthatisoftenneglecteddototimeconstraints.Allsmallbusi-nessownersexperiencethestressofjugglingtheirschedulesandwearingmanydifferenthatseachday.TheirtitlecanchangefromCEO,toHumanResourceDirector,toMarketingManager,thentoCustomerServiceRep.innotime.
The owners that tend to fail typically have so much on their plate thattheyendupgettingnothingaccomplishedandendeachdaywithagreatdealofstressandworry.Thesuccessfulownerrealizeshisorherabilitiesandknowshowtodelegateresponsibilitiestoothersleadingtopeaceofmind.
Bookkeeping is an essential part of operating a successful businesswhetheritissmallorlarge.Everybusinessownerneedstomaintaingoodfinancial records for several reasons; they need accurate records tofiletax returns, acquire finances for their business, or to
give apotential buyer the information theyneedto purchase their business. Many small businessownersputfartoolittleweightonkeepingtheirfinancialrecordsuptodate.Theyknowit isanimportant part of running their business, butthey do not have the time, or sometimes theknowledge, tomake financial recordkeepingapriority.
Inshort:bookkeepingisanunavoidableneces-sityforthesmallbusinessowner.Workinginpartnership with an accountant or monthlybookkeepingserviceisas importantaspay-ingyourrentandutilitieseachmonth.Yourbookkeepingpartnershouldhelpyouana-lyzeyourcostsandgiveyousuggestionsonimprovingyouroperations.Thecostofanaccountant or bookkeeper is well worththe tax savings you will likely see andmostofall, yourpeaceofmind.

Ms. AmyInfant TeacherAs a teacher and current college student, NAEYC is the standard for high quality and best practices. NAEYC schools are amazing and I love working at Favorite Time because everyone has the best interest of children at mind.
Ms. TalenaAssistant DirectorI believe that NAEYC is a way for a preschool to prove their excellence in early childhood education. What I value in working at an accredited center, is that we provide a structured child friendly environment where the children have the freedom to explore the world around them with the support and guidance of a well-trained and educated team of professionals.
Ms. MaxiLead Pre-K 3 TeacherI enjoy working at Favorite Time because I know it is a wonderful environment for children. It is great to be at a NAEYC school.
Ms. KarenCertified Pre-K TeacherIn my past 8 years of teaching, I have spent 6 years in NAEYC Accredited schools. There is a huge difference in quality and care. In a NAEYC accredited school there is a dedication and professionalism that is undeniable.
Ms. CourtneyAssistant TeacherThis is a dream job! NAEYC accredited schools are a great place to work and a wonderful place for children. Lower teacher-child ratios mean more one-on-one time with children. I will only work at a NAEYC accredited school!
Ms. KimCertified Pre-K TeacherIt’s reassuring to know that our school holds itself to a higher standard. When a program receives NAEYC accreditation it means that they have voluntarily opened the doors to intense scrutiny and the highest quality audit in the industry. We have willing opened our doors and are proud of what the top leaders in the early childhood education field have found.
Ms. JenniferAssociate TeacherThe best thing about Favorite Time is the commitment to the children. NAEYC is important to teachers because of the highest standards that provide the best possible learning environment.
Lead Pre-K TeacherIt is truly an honor to be a member of the staff here at Favorite Time. NAEYC accreditation speaks volumes on quality. Favorite Time expects the absolute best out of teachers and that makes me truly grateful to be apart of the “Favorite Team”. My experience here has shaped by teaching career and will last a lifetime.
Ms. Stacey
