Handmade in the HunterThe idea for Handmade in the Hunter came to founder Karen Rowe while she was a stallholder at another local market.

She wanted to highlight the fact that the products she had for sale were true artisan. She collected locally produced items from some of her crafty friends and placed them in her stall. It proved to be so well-received by visitors to the area that she started a handmade/ home-grown market in April 2011 based on this concept.

Her original Handmade in the Hunter stall still exists and is the first stall as you enter the market at Kevin Sobels Wines (corner of Broke and Halls Road).

Being an avid cottage crafter, Karen has collected craft supplies for many, many years. Now that she has retired, she is working on finishing and using up the bits and pieces from her well-supplied and bulging craft cupboard. Because she dreams up the projects based on what she has on hand, you never know what surprises you will find in her stall.

Majors Lane Cooking School - Sichuan MenuNever having been to a cooking school before we arrived with some trepidation – what will it be like? Are we entering Hell’s Kitchen? We needn’t have worried as we were made to feel very welcome right from the start. Chef Ben was a great teacher, there were five of us on the day so it was a very relaxed setting that soon had us all working and chatting together, asking questions and volunteering our own culinary experiences to the group.

Ben freely imparted his wealth of knowledge and talked about each of the different spices – where they come from, how they are used in their country of origin as well as in western cooking.

He shared some fascinating stories about

the Sichuan area, the history and his own experiences of cooking there. It was wonderful to hear as we were working and gave us a deep sense of the history of the region and it’s cooking. Somehow this heightened our senses so when we were enjoying the fruits of our labours at the end of the morning everything we had learned really added to the taste experience.

Ben showed us what to look for, what to avoid – including top tips for perfect fluffy rice (we’re not telling you – you’ll just have to do the course) plus easy ways to manage what you’ve learnt with him in your own kitchen.

All in all it was a fun, practical and

informative session and extremely good value. We came away having made great friends and with a new found confidence in the kitchen.

Dukkah Crusted SalmonServes 4Ingredients1 side of fresh Atlantic salmon8 tbs River Flats Estate Lemon Myrtle Dukkah1 tsp River Flats Estate Lemon Infused Olive OilSalad:150 g rocket & spinach1 carrot, peeled3 spring onions

1 red capsicum1 small beetroot, peeled

Dressing:75 ml River Flats Estate Lemon Infused Olive Oil

25 ml River Flats Estate Caramelised Rosé Vinegar

Method: Preheat the oven to 200 c. Cut salmon into 4 pieces, put dukkah onto a plate and dip each piece of salmon into the dukkah to form a crust. Grease an oven tray with 1tsp of the lemon oil, put the fish skin side down (crust side up) onto the tray and cook in preheated oven for 15/ 20 minutes. Meanwhile shred the carrot, spring onion, capsicum and beetroot, toss together with the rocket, spinach and dressing. Divide between 4 plates and serve the fish on top.

Bunna Bunoo OlivesBunna Bunoo is a family managed olive grove located on the Paterson River in the Hunter Valley Region of NSW.The hot summers and cool crisp winters of the area are ideal conditions for cultivating olives that produce the finest olive oil.

At Bunna Bunoo, the olives are harvested and processed within 48 hours. Generations of olive growing and processing results in this unique and superior quality product.

The family grow five varieties of olives. The oil varieties are Frantoio and Correggiola, and the table olives come from Jumbo Kalamata, Kalamata and Manzanillo trees. Harvest is usually between April and June. The olives are processed, bottled, labelled and packed our olives at the grove, in a new purpose-built facility.

The olive oil is cold pressed locally, and

then returns to them for bottling and labelling at the grove.

All of the products are available from our olive grove shop, selected delicatessens and gourmet stores, and by mail order.

The shop is open on Fridays, Saturdays and Sundays between 10 am and 5 pm, and weekdays by appointment. Coffee, tea and light refreshments are available.

Newcastle Maritime Festival 2012The first Newcastle Harbour Regatta was held in 1834, consisting mainly of sailing events. By the turn of the 19th century the Newcastle Harbour Regatta had become the major sporting festival for the town.

Today, 24 years on, the festival exists to raise awareness of our wonderful, foreshore museum and the history of our seafaring ancestors. Flying Circus in the Park As part of Newcastle NOW’s and L!vesites ‘Summer in Town Festival’, Circus Avalon will perform their flying circus show on the 7 & 8 of January at Birdwood Park, and on the 11 & 12 of January at Pacific Park. Where there is water ……there is Lake Macquarie City Art Gallery. ‘Nestled as we are on the foreshore of this country’s largest coastal saltwater lake, overlooking an active marina,’ it impossible not to consider water an ongoing theme in our programming,’ says Gallery Director Debbie Abraham. ‘The changing weather reflected in the lake’s surface each day, visitors’ delight in the splendour of the site, the yachts sailing by, and the deep sense of its Aboriginal significance, always remind us of where we are.’

Curated by Meryl Ryan, Where there is water…brings together 11 contemporary artists whose works explore the theme of water from diverse perspectives and using a wide range of media, from photography and digital video to sculptural installation, painting and printmaking. These artists examine their relationship with this mesmerizing subject, often using it as a metaphor to describe human emotion and states of being.

TALKING BUSINESS by Brett GleesonNew Years Resolutions for BusinessIt’s the start of a new year and its hard to fathom how fast the last one passed by. The tradition of making New Year’s resolutions is well practiced. Fulfilling them is another story. New Year’s resolutions are good

to do. Not just for our personal lives, for our business as well. New Year’s resolutions are simple statements of good intention or goals. The most common ones in our

personal lives are ‘to lose a few kilos’, ‘exercise more’, ‘work less hours’, ‘ have more fun’, ‘spend more time with the family’.These same resolutions apply to our business. For example, ‘Lose a few kilos’ translates to cutting down on waste in the business, operating a bit more environmentally friendly or efficiently. For every ‘kilo’ of waste we shed in our business equates to a few dollars we don’t need to find to operate the business or more importantly, a few dollars more to the bottom line. Pick 2 or 3 areas of the business and put in place some simple strategies to reduce the waste by say, 5 or 10% for the year. First you need to know your current usage and then measure it month by month and see how you go. Start small and build over time. If you are the ‘boss’, then lead by example.Get your staff on board, use the savings to reward those staff that contribute positively. The money saved can pay for some tickets to the movies, a lunch or this year’s staff Christmas party. Acknowledging the positive contributions of employees shows that you really appreciate them. They will repay you many times over. I hope all your good intentions are fulfilled in 2012.

Light Up your Christmas and New Year!For the fifth year running, Hunter Valley Gardens is set to host Christmas Lights Spectacular, Australia’s biggest Christmas lights display and the largest display of its kind in the Southern Hemisphere. A wonderful experience for the whole family to enjoy, the Gardens will be alive with colour every night until Saturday 14th January, 2012.

Christmas Lights Spectacular has won the prestigious Hunter Region Tourism Award for ‘Best Festival or Event’ for three years running, placing the Hunter Valley Gardens event into the Hall of Fame within this category. This year, make sure you and your family down to the Gardens to see what all the fuss is about!

This year’s Christmas Lights Spectacular has an amazing new music and light display as well as over a million Christmas lights on show throughout designated areas of Hunter Valley Gardens. The event includes a special

visit from Santa, with Santa photos available, a range of entertainment, as well as food and beverage stalls.

There will also be a number of new and astonishing features including The Twelve Days of Christmas music and light display in the Border Garden, the cactus musical extravaganza, and the three mega trees that are an incredible 12, 9 and 6 metres high. There are also new lights and music displays throughout the Storybook Garden and the greatest story ever told at the nativity scene.

Gates will open nightly from 6.30pm, with pre-lights entertainment and food stalls so that families can make an evening of it. The lights display will commence at 7.30pm.

Entry to Christmas Lights Spectacular will be $12.50 for children aged between four and 15 and $17.50 for adults and children 16 and older. Children aged

three and under receive free entry and every child will receive a FREE glow stick. If guests have visited the Gardens during the day they are entitled to a discounted entry to the Christmas Lights Spectacular of $10 per adult and free entry for children with a receipt as proof of entry.

Cessnock is a sub-region of the Hunter Valley, 120 kilometres north of Sydney, 40 kilometres west of Newcastle and 30 kilometres from the coast.

Pastoralists commenced settling the land in the 1820’s. The township of Cessnock developed from 1850, as a service centre at the junction of the Great North Road, with branches to Black Creek (Branxton) and Maitland.

During the 1860’s, land settlement was extensive between Nulkaba and Pokolbin with wheat, tobacco and grape growing, the main crops. Coal mining was the principal industrial base of the Cessnock area for over fifty years. Changes in mining, including automation and the introduction of

sophisticated computerised equipment, have lead to the closure of some mines in the area and this, together with the natural ageing of the population, has resulted in a decline in population in some villages over the last twenty years.

Consequently many areas have undergone a change in character, with rural residential housing development and weekend retreats becoming popular.

The Hunter Valley wine-growing area in Cessnock City is one of Australia’s oldest wine regions and one of the most famous with around 4,500 acres under vine. The vineyards of Pokolbin, Mount View and Allandale, with their rich volcanic soils tended by entrepreneurial vignerons, are also the focus of a thriving and growing tourism industry. The town has a number of fine restaurants, guesthouses and galleries.

The Convict Trail is a conservation project that is restoring the convict-built Great North Road. This is one of Australia's national historic treasures.

John Waters in “Looking Through a Glass Onion”28th January, 8pm at Cessnock Community Performing Arts CentreIn 1992, John Waters and Stewart D’Arrietta took to the small stage at the Tilbury Hotel, Woolloomooloo, Sydney with their debut production of “Looking Through A Glass Onion”. What was an initially a one week booking quickly sold out and extended into a six week, sell out season.

Fast forward 20 years and after many successful and sold out Glass Onion

tours, John and Stewart have decided to return to their ‘up close and personal’ intimate 2 man show tour commencing in January 2012.

“This is a last chance opportunity for regional Australia to see this show as we’ll be taking it to Broadway in New York in 2013 and are in discussion with Yoko Ono on aspects of the New York shows”, says John Waters.

“Although we’ve done two tours with the full band we were constantly inundated with requests from areas we had yet to tour to come and perform, so we’ve yielded to the call and decided to go back out of the road with the original 2 Man show” cites Waters.

The show is not a cut-and-paste biography of Lennon or an emulation of

the original recordings. It’s part concert and part biography, though it doesn’t seek to tell the full story of Lennon’s life. Rather than impersonate it is intended to evoke Lennon’s honesty, bitter-sweet humour, self criticism and disdain for pretentiousness and pomposity. The song Glass Onion was John Lennon’s postscript to The Beatles.

An emotional trip down memory lane and a wonderful introduction to the life and times of one of the most fascinating icons of our time. With 31 songs performed including, ‘A Day in the Life’, ‘Strawberry Fields Forever’, ‘Revolution’, ‘Lucy In the Sky with Diamonds’, ‘Woman’, ‘Jealous Guy’, ‘Imagine’ and more, this is a show for all ages.

Kurri Kurri and the surrounding towns.

Coming up in March 2012 is the Kurri Kurri Nostalgia Festival, running from the 23rd - 25th with a full program and something to suit everyone. This rock n roll festival with classic cars, hot rods, retro markets and lots more, attracts over 35,000 people and is one of the largest in Australia.

The full program is on the website (www.kurrikurrinostalgiafestival.com.au), there's plenty of dances, events and entertainment for the whole family. To mention a few we have a Retro high tea at the high school, rockabilly all stars at Weston Workers, High school prom with Juke box Jive at Buttai barn and plenty of free activities, show and shine, side show alley and main stage over the weekend in the Main street and Rotary Park.

Kurri Kurri is famous for its Murals, they are a wonderful expression of our history and region, and tours are available all year round, we have many coach groups coming into town to view these amazing outdoor artworks and are proud to be the biggest Mural town in Australia.

In September 2012 we are launching Mural Month, where additional tours will be run, a Mural will be painted and there'll be lots for visitors to do and see in the area - so stay tuned.

There are now over 50 murals, making Kurri Kurri the largest mural town in Australia.  New murals are currently underway.  Don't forget to look for the kookaburra in every mural, some are quite difficult to find.

Open every weekend until Nov 30th 10am – 3pm. When you visit Tocal Homestead its not hard to imagine days gone by. Tales of architects and graziers, bushrangers, businessmen, social reform and philanthropy are woven through the highs and lows of life on this unique property.

There is a lot on offer for visitors to the Allyn & Paterson River Valley, just two and a half hours’ drive from Sydney, an hour from Newcastle and where Dr Henry Lindeman planted his first grape vines in 1843.

Here you will discover the geographically blessed towns of Paterson, Vacy, Gresford and East Gresford, ringed by the ancient Moonabung Ranges and criss-crossed by the pristine waters of the two rivers that flow from the Barrington Tops.

First stop could be historic Tocal

Homestead for tales of the olden days of bushrangers, graziers, and other characters who inhabited one of the greatest Australian cattle and horse studs of its time. Have a look at the rare architect-designed barn built around 1867, and the gracious Colonial Georgian country house. Tocal Homestead is a very popular venue for weddings and milestone celebrations.

Paterson has inspired many artists to pick up a brush to try to capture this picturesque Australian country town on canvas. Take the time to look at the many fine old homes, grand commercial buildings, museums, art gallery, pubs, cafes, parks and shops that contribute to Paterson’s unique style.

9km north of Paterson is Vacy, with rugged Mt George to the west. It is well worth a visit to the café, hotel, arts & crafts shop and general store for a taste of country hospitality, great food

and quirky crafts. Travel over the Vacy bridge, circa 1898, to Bunna Bunoo olive grove and gift shop. You can see the roof tops of the cabins and lodges such as Banjos Bushland Retreat and Cabins in the Clouds on Mt George, perfect destinations for weekend getaways or a longer stay.

The small towns of Gresford and East Gresford are the gateway to Lostock Dam, Mt Allyn and the Chichester State Forest to the north. Take the Allyn River Road drive past homesteads set among rolling green hills and granite outcrops. Visit Clevedon craft shop, Natural Furniture Works, the Beatty Hotel and Camyr Allyn winery. History lovers will enjoy a drive to St Anne’s Anglican Church and suspension bridge, and St Mary’s on Allyn at Allynbrook.

Upstairs Art Teaching Studio and Gallery Upstairs Art Teaching Studio and Gallery is located on the New England Highway in the heart of the historic upper Hunter town of Murrurundi.

The teaching studio which has been operating for 5 years is open for 4 sessions a week and welcomes new students of any level of experience to improve their knowledge and skill from lessons with artist-in-residence Rodney Swansborough. In the last 2 years the business has expanded to include an art supplies shop and fine art reproductions are available to be printed on a wide format Giclee Printer.

Rodney’s wife, artist Pearl Red Moon is an internationally recognised artist and teacher who has taught in the USA, Canada and New Zealand numerous times and all around Australia. Pearl is well known for her art dolls which are in collections worldwide.

For the last year Pearl has been creating a whole new body of work which will be on display from January 2012 in the Pearl Red Moon Gallery rooms dedicated to Pearl’s art.

Pearl is a multi media decorative artist working primarily with textiles, fibres, beads and stitch. She makes sculptural forms (dolls), wearable adornments from beads, silver and found objects and 2 dimensional art.

Her art is figurative and typically depicts feminine personas portrayed as iconic, dreamlike and fantasy representations. She uses the skills accumulated skills over 3 decades as a textile artist to create unique layered and embellished textiles to enhance the works with abstract elements.

In addition to painting Pearl also incorporates the western traditions of female needle and textile craft to

collage the works together using such techniques as hand and machine embroidery, knitting, crocheting, applique and beadwork.
