PROJECT: Pop Up Omelette Station

• The team worked together to create a “Pop Up-Build Your Own” Omelette Station Promotion to help increase breakfast participation at one of our High Schools.

• This promotion was a test day to see the feasibility to bring the “Pop Up” to other middle and high schools on a rotating basis to increase the interest in the breakfast program for secondary students.

PURPOSE: Develop New Concept to Increase Breakfast Participation

• Each year our department develops new menu concepts/promotions to help change the image of the school food service program.

• With the successful addition of our “Build Your Own” Customization Line now in place at ALL secondary schools for lunch service, we wanted to try this concept during breakfast service.

PURPOSE: Develop New Concept to Increase Breakfast Participation

• The team utilized many of the same items that are used daily for the lunch customization line which made the preparation for the event much easier to implement.

• Commodity liquid egg was used for the egg base.

• Toppings consisted of: Diced tomatoes, diced green peppers, mixed shredded cheese, diced onion, bacon bits and diced farm to school chives.

• To complete the meal biscuits & farm to school harvest of the month Strawberries.

PURPOSE: Develop New Concept to Increase Breakfast Participation

• The team reversed the flow of the serving line so that the customers could pick their cold toppings and then move to the hot well for the final cooking step.

• Induction cook tops were used and placed over the steam well.

• Each omelette was custom prepared for each customer.

RESULTS & RESPONSES

• Students loved the customizable breakfast option.

• Hearty breakfast options are a big hit with students and customizing was a BIG PLUS!

• Students didn’t mind a short wait for the custom omelette's!

We loved the eggs! Building our own omelette to order was awesome!

I loved the customizable option! Because I’m a vegetarian this was a GREAT option!

We’ve never eaten in the school café before! This really

intrigued us and we will be BACK!
