Dear Jam-Roc Star Magazine Readers

Welcome to this month’s issue of Jam-Roc Star magazine. This month’s magazine will focus on 5-star Jamaican cuisine. The theme is “Ah Taste of Jam-Roc.” In the magazine you will find several different recipes and pictures for each Jamaican dish such as Jamaican Style Jerk Chicken, Jerk Pork, Jamaican Style Curried Lobster, Sweet Brown Stew Fish, and Shrimp in Coconut Cream Sauce. You will also find recipes and photos for beverages like a Mango Smoothie, Cherry Juice, Carrot Juice and Pineapple Orange Juice etc. Other features you will find in the Jam-Roc Star include an interview with one of Jamaica’s top chefs, J.R. Garvey Jr., who owns a 5-star restaurant called ‘J.R. Has Ah Good Taste’ and is located in Ocho Rios St. Ann. You will also find recipes, restaurant reviews, cooking tips, and entertaining tips on different types of Jamaican cuisine.

A new, exciting (but shocking) season of “Hell’s Kitchen,” starring Chef Gordon Ramsey, premier’s every Tuesday night on the Food Network Channel. Chef Gordon Ramsey hosts his reality show where twelve chefs from all over the United States will compete for their own world class restaurant. He yells, swears, compliments, and most importantly eliminates a contestant every episode. Every week each chef is

given a cooking task for them to complete. Which ever chef wins the task they receive a reward whether it is a car, money, vacation etc. All 12 contestants are split into 2 teams (red or blue) and they will cook in a restaurant and serve costumers based on their cooking service. Chef Ramsey will make a final decision on which team wins or loses. The team that wins will be safe from elimination and the team that loses will have to eliminate one of their team members to go home. Only one chef will be standing at the end of all this.

I highly recommend this show to anyone who loves cooking, the Food Network, or just a good old competition reality show. I find that this show can be educational despite the confrontations, cursing, swearing and all the drama that goes on. It is still a good show. This show can help culinary arts students to show them a little of what the real world is about and what you have to go through in order to become the best chef out there. I believe that culinary art students as well as views will and can learn a lot from watching this show.

INGREDIENTS:

• 1 quart ripe Jamaican cherries • 2 1/2 quart water

• 1 lime (lemon) • 1/4 cup sugar

• 1/4 cup red syrup

METHOD:

1. Puree cherry in blender. 2. Pour through strainer into container 3. Keep juice & discard pulp in strainer 4. Squeeze lime into juice 5. Add syrup & mix 6. And mix (add more or less sugar based on your

taste) 7. Best served with crushed ice 8. Serves 6-8

J.R (James-Richard) Garvey Jr. is Jamaica’s youngest top rated chef and is a certified graduate of the West Indies Cooking Academy. He is an honorary graduate with a degree in Culinary Arts. J.R has traveled to different countries around the world for schooling and for job apprenticeships; in addition, he has worked on boats and ships for several years as a head cook. He decided to move back to the Island of Jamaica and opened a five-star restaurant called ‘Ah Taste of Jam-Roc!’

He serves many of his famous Caribbean dishes such as Jamaican Style Jerk Chicken, Jerk Pork, Jamaican Style Curried Lobster, Sweet Brown Stew Fish, and Shrimp in Coconut Cream Sauce. He also serves his famous beverages like Mango Smoothie, Cherry Juice, Carrot Juice and Pineapple Orange Juice. His restaurant has been open for the last 3 months and so far, it has been very prosperous in its profits.

His restaurant is located in Ocho Rios, St. Ann on the tourist attraction strip

and is open Mondays through Saturdays. J.R decided to build his restaurant in Ocho Rios because it a tourist attraction area and it will attract tourist, famous people, local residents and Jamaicans that live all over the island so they can come and dine at his restaurant.

While dinning at the restaurant in the evenings you’re able to see a priceless view of the sun going down as well as enjoy the music, the setting and the entire ambiance which makes it a true Jamaican classic. J.R says “I strive to make my country look good when it comes to its food; culture and its hospitality service and also maintain a positive reflection on my restaurant, so that it will keep attracting the tourist.” From the interview I had with J.R, I discovered that he has a great business vision and strives to be the best in what he does. I wish J.R as well as the business the best in its success.
