There are 15 types of vegetables that have been grown mainly in Kanazawa since be- fore 1945, which have been designated as “Kaga vegetables”. In recent years, people in the Tokyo metro- politan area have been becoming more aware of their distinctive flavors. Because this area is blessed with abundant nature in each of the four seasons, Kaga cuisine has evolved in a distinctive way. Kaga cuisine is delicious local dishes made of local ingredients, designed to be enjoyed on a daily basis. Jibuni (stew of duck and vegetables) and Kabura-zushi (turnip sushi) are simple and un- pretentious dishes, but when they are served on gorgeous Kutani ceramic ware and Ka- nazawa lacquerware, they take on the refinement of “Kaga cuisine”. Savoring dishes with one’ s eyes and tongue — this exquisite relationship is the attraction of Kaga cuisine. The warm and cold currents that come together in the Sea of Japan make for good fish- ing all year round; the fresh seafood it provides includes Japanese halfbeak in the spring, and squid in the summer. The most well known are sweet shrimp and “Kanaiwa Kobako”-brand crabs, which are representative winter specialties. Sweet shrimp is a prime-quality prawn with sweet flesh and a melt-in-your-mouth tex- ture, that can even be enjoyed for its roe and intestinal tract. This shrimp has an un- usual biological makeup; first it grows as a male, and in the spring of its fourth year it turns into a female. “Kanaiwa Kobako”-brand crabs are female snow crabs. Although small, they are prized for the distinct flavor of their roe and internal organs. When the fishing season opens in November, entire storefronts of fish shops take on the bright vermillion color of crabs and shrimps, and restaurants serve the freshest possible seafood. The castle town of Kanazawa offers spe-cialty vegetables of all four seasons that have been cultivated since the feudal period.There are 15 types of vegetables that have been grown mainly in Kanazawa since be-fore 1945, which have been designated as “Kaga vegetables”.In recent years, people in the Tokyo metro-politan area have been becoming more aware of their distinctive flavors.

Kanazawa’ s culinary culture has been fostered by the traditions of the wealthy Kaga do-main. Because this area is blessed with abundant nature in each of the four seasons, Kaga cuisine has evolved in a distinctive way.Kaga cuisine is delicious local dishes made of local ingredients, designed to be enjoyed on a daily basis.Jibuni (stew of duck and vegetables) and Kabura-zushi (turnip sushi) are simple and un-pretentious dishes, but when they are served on gorgeous Kutani ceramic ware and Ka-nazawa lacquerware, they take on the refinement of “Kaga cuisine”.Savoring dishes with one’ s eyes and tongue — this exquisite relationship is the attraction of Kaga cuisine.

The warm and cold currents that come together in the Sea of Japan make for good fish-ing all year round; the fresh seafood it provides includes Japanese halfbeak in the spring, and squid in the summer. The most well known are sweet shrimp and “Kanaiwa Kobako”-brand crabs, which are representative winter specialties. Sweet shrimp is a prime-quality prawn with sweet flesh and a melt-in-your-mouth tex-ture, that can even be enjoyed for its roe and intestinal tract. This shrimp has an un-usual biological makeup; first it grows as a male, and in the spring of its fourth year it turns into a female.“Kanaiwa Kobako”-brand crabs are female snow crabs. Although small, they are prized for the distinct flavor of their roe and internal organs. When the fishing season opens in November, entire storefronts of fish shops take on the bright vermillion color of crabs and shrimps, and restaurants serve the freshest possible seafood.
