The Jungle Queen Live Music Bar is now in its 6th season and has gained quite a reputation. With international Live Music acts and quality cocktails and spirits this bar has a reputation unlike anything else you’ll find in White Sands Beach or Koh Chang. The bar starts to fill up around 9.00pm so get in early to get a table. If you cant find them just look for their powerful spotlight to guide you, then turn into walking street next to Monkeys restaurant. The Beach Club is a waterfront restaurant beside Klong Son Beach in the exclusive Siam Royal View development.The restaurant is housed in an airy and tastefully decorated modern building beside a horizon swimming pool that diners are welcome to use. It is a great location for an afternoon meal accompanied by a swim and some beachside relaxation. Alternatively it is an atmospheric spot to watch the sun set or book in advance and come down for a delicious evening meal.Given the location prices are very reasonable and there are a large number of mouth-watering menu options. Classic Thai dishes are served as well as some interesting western selections such as Hungarian Goulash and a variety of pasta and risotto dishes. Fresh seafood is also a good choice and the Beach Club is one of very few places on the island that offer Swiss and even Thai Fondues.

Below are some straightforward recipes so that you can make some of our favourite Thai snack dishes. Moo Dat Diao - Fried Marinated PorkYou just can’t go wrong with fried pork can you?IngredientsPork Steak - cut into strips 100 grammesMaggi Sauce (or soy sauce) 1 TeaspoonOyster Sauce 1 TablespoonSesame Seeds 1 Tablespoon

First mix all the ingredients together, cover and leave to marinate in the fridge for at least an hour - overnight if you’re organised.Then fry in hot oil until browned. Pla Too is a delicious salty Thai fish but this dip will work fine with smoked mackerel, herring or any oily fish.First fry the fish on both sides until browned and then remove all of the flesh being careful to avoid bones.Then dry roast all of the vegetables in a frying pan over a medium heat until browned but nor blackened. Now place with the fish in a pestle and mortar and pound the life out of it (or mix in a food processesor if you want to take the easy route). Now add thefish sauce and enough water to make a smooth paste that isn’t too runny.Serve with vegetables as shown. Thais usually serve all of the dipping vegetables raw but raw eggplant is really bitter so we suggest that you boil it for three or four minutes.

Chop all of the vegetables into small pieces and mix in a bowl with all the other ingredients. Stir very well to make sure that all of the flour is combined and ad water until a workable paste is formed.Scoop out balls of the mixture with a dessert spoon and fry in hot oil until browned. Place on kitchen paper to drain off any excess oil and then transfer to a plate and serve with a dipping sauce of sweet chilli, or tomato sauce - or whatever else you fancy.

Rice

!Here in Thailand rice is everywhere. This isn’t really surprising since it is the very backbone of Thai nutrition, having been the food around which all meals are based for thousands of years in this part of the world.And of course in these times of international cuisine it’s no longer a particularly exotic dish, at least in its plain boiled incarnation. So how can you write an even vaguely interesting feature on it? We thought we’d try and dig up a few things - strange and bizarre wherever possible - that you didn’t already know about rice.

• Gin Khao is the term most commonly used in Thailand for “Eat Food”. It literally means eat rice but feel free to use it when dining on egg and chips or caviar or whatever you like.

• The Thai phrase “Gin Khao Daeng” means literally to eat red rice - but its common meaning is “to be in jail” since red husked rice is was traditionally the cheapest and hence served to prisoners. But it turns out to be healthy and full of fibre so it has suddenly become more popular and therefore more expensive. So do Thai prisoners have to make do with white rice now? • Thai Rice Wine or Sato originates from the North-East of Thailand. It’s really more similar to beer than to wine and is widely available throughout the country. Put diplomatically it’s taste is best described as boisterous and a trifle rustic and can prove challenging to the unaccustomed palate. Rice whisky or Lao Khao is a rice-based distilled spirit, high in alcohol, industrial in flavour and not for the faint of heart, or liver. • If you’ve never stood on boiled rice barefoot then don’t try it - the resulting gluey horribleness is a uniquely unpleasant experience.

• Most rice in Thailand is cooked in electric rice cookers which are handy because you just add rice and water, plug them in, and close the lid - they switch off when the rice is cooked and keep it warm until you need it. They are very cheap to buy here in Thailand and can be eye-wateringly expensive elsewhere so if you’re looking for a left field holiday present for a rice-loving loved one then say it with a rice cooker.

• The myth that rice is bad for birds because it expands in their stomachs and kills them is apparently unfounded. Lucky birds.

• The theory that you can dry out a wet mobile phone in raw rice is also wrong. Rice only cooks in boiling water remember.

• Edgar Rice Burroughs was the author who created Tarzan. Jerry Rice is probably the greatest wide receiver in American Football history. Sir Tim Rice is a British lyricist and author best known for working with Lord Andrew Lloyd Weber on a string of bewilderingly successful musicals. Sadly our limited research was unable to find their opinions on the miraculous foodstuff with which they share a name.

Khao Pat - Fried Rice Thai Fried rice is a simple staple dish which is often eaten as a breakfast or daytime meal. It can be made with pretty much any meat, seafood or vegetable. It is a quick and tasty meal by itself or it can be served with other dishes. The measures below are for a single serving.

Ingredients50gms - Any kind of meat (If required) 200 gms Pre-Cooked Rice Onion - half, sliced 1 EggTomato – half, roughly chopped2 Spring Onions – roughly chopped 1 Garlic clove – crushed Half a Lime 2-3 Spring Onions Oyster Sauce - half tablespoon White Pepper - a large pinchNam Pla Fish Sauce - a few DashesGolden Mountain Sauce - a few DashesCucumber Sliced to GarnishTomato sliced to Garnish

Preparation Fry the chicken, meat or what-ever you have decided to use until browned or softened. Don’t add too much oil because the oil used in this recipe is absorbed by the rice later on.Add the onion and fry for another minute or so until soft. Now add the garlic, spring onion and tomato and mix everything together. Then add the egg and stir until it has cooked.Now add rice, fish sauce, golden mountain sauce, oyster sauce and pepper and stir fry vigorously mixing everything together over quite a high heat. Serve with the lime, spring onion, cucumber and tomato on the side. You can also chop some small green and red chillies and serve in fish sauce in a side dish to provide a little more salt and spiciness if required.
