Paddy’s Palms has an excellent menu for all the family and is located just up the hill from White Sand Beach.The menu offers a wealth of classic pub dishes such as Irish stew, breakfasts, fish and chips and pies. The Beach Club is a waterfront restaurant beside Klong Son Beach in the exclusive Siam Royal View development, which is also home to the island’s only Golf Course and a Yacht Marina.The restaurant is housed in an airy and tastefully decorated modern building beside a horizon swimming pool that diners are welcome to use. It is a great location for an afternoon meal accompanied by a swim and some beachside relaxation. Alternatively it is an atmospheric spot to watch the sun set or book in advance and come down for a delicious evening meal.Given the location prices are very reasonable and there are a large number of mouth-watering menu options. Classic Thai dishes are served as well as some interesting western selections such as Hungarian Goulash and a variety of pasta and risotto dishes. This is a reasonably simple but delicious authentic Thai dish. The recipe has been kindly provided by Magic Garden in Lonely Beach.To achieve the best taste the holy basil is a key ingredient. It is also called Hot Basil and is increasingly available around the world. If you can not find it anywhere purple or sweet basil can be used as a subtitute - but it doesn’t quite impart the zing of its hotter cousin.

Ingredients (serves 2)250 grammes ground pork2 garlic cloves5 small Thai chillies2 tsp. soy sauce2 tsp. fish sauce4 tsp. oyster sauce2 tsp. sugar2 tbsp. vegetable oil2 tbsp. water

Recipe - Pat Ka PraoPreparation1 - Place the garlic and the chillies in a mortar and crush it with a pestle into a paste-like substance.

2 - Heat in the vegetable oil in a wok or frying pan to a medium heat.

3 - Put the chili/garlic paste into the oil and stir fry for about 2 minutes.

4 - Now add the water and the ground pork to the mixture and cook for 2 minutes. 5 - Then add the soy sauce, fish sauce, oyster sauce and the sugar. 6 - Turn down the heat and cook for another 2 minutes. If the mixture is a bit dry add a little bit of water to it.

7 - Turn off the heat and add the holy basil leaves. Mix it a couple of times with a spatula and ready is the Pad Ka Prao!!

Typically it is served with rice and a fried egg on top makes the dish complete...Enjoy!

A simple and tasty breakfast treat. The Croque Madame is basically a fancy grilled cheese sandwich that manages to amount to more than the sum of its parts. It makes a great breakfast or a tasty light meal at any time of the day. This recipe has been provided by 15 Palms Beach Bar & Restaurant at White Sand Beach which is, of course, a great place to enjoy this dish.

Preparation1 - Spread one side of the bread with butter

2 - Spread a third of the mustard and cream on each slice of bread

3 - Slice the cheese thinly and use two thirds of it to cover the two slices of bread.

4 - Then place the bread in a grill until the cheese has just melted and the bread is beginning to brown. About three to four minutes should do the job.

5 - Then heat a little vegetable oil in a frying pan and fry the egg after seasoning with salt and pepper. Baste the white with hot oil since you’re looking for a cooked white but a runny yolk.

6 - Now put the two slices of bread cheese sides together.

7 - Spread the rest of the cream and mustard on top of the sandwich and add another layer of cheese. Place in the grill again until the cheese has melted and the bread has browned.

8 - Place the fried egg on top and serve.
