gfs summer summer kids camps camps All New Classes, Same Recipe for FunAll New Classes, Same Recipe for FunEnroll your child in one of the Good Food Store’s summer cooking camps and you’ll help them discover the pleasure of preparing real food made with their own hands. Basic cooking skills will be the foundation for each class: “hands on” fun supplemented with discussions about health, nutrition, local foods and kitchen safety. At the end of each day the young chefs will gather together for a family-style meal and enjoy the fruits – and vegetables, grains, and meats – of their labor. Plus, each student will receive a GFS Cooking School apron.

What’s the diff erence?Broccoli vs. BroccoletteBroccoli. Broccoli needs little introduction here in the United

States, where it’s far more popular than its cousin: Broccolette.

Broccoli was fi rst cultivated in Italy, in Calabria on the Mediterranean

Coast. Its seeds were imported to colonial America, with

Thomas Jefferson planting Broccoli at Monticello in 1767.

Broccolette. Also known as Broccolini,

Broccolette is often misidentifi ed as Baby

Broccoli. It is actually a cross between

Broccoli and Kai-Lan, a Chinese kale.

Its stalks are long and thin, topped with

small fl orets and an occasional small

yellow flower. The stalks are mildly

sweet, hinting at an asparagus-like fl avor.

“Brocco.” Broccoli and Broccolette have similar nutritional

profi les, both extremely high in vitamins C and K. Both are also known

for the anti-infl ammatory and antioxidant components that studies

show are important in fi ghting a variety of cancers. And a 2-cup

serving contains less than 100 calories. Broccoli and Broccolette are

interchangeable in most recipes, including this tasty main entrée salad.

Orzo Salad with Grilled “Brocco” & Sausage• 1/4 cup, plus 1 tablespoon, extra-virgin olive oil

• 2 tablespoons red wine vinegar • 1/4 cup pitted Picholine olives, quartered

• 1 1/2 tablespoons capers, rinsed & chopped • 12-ounce bunch broccoli or broccolette, stalks trimmed

• 1 large red onion, cut into 1/2”-thick slices • 4 cooked chicken sausages • 1 1/4 cups dried orzo

• Salt & freshly ground black pepper

1. Preheat grill (or oven) to a temperature of about 350º. 2. In a large bowl, whisk together 1/4 of the olive oil and the red wine vinegar. Add the olives and capers, stirring to coat. Set aside. 3. Place broccolette and onion slices on a large roasting pan and drizzle with remaining tablespoon of oil. Salt to taste. 4. Place the roasting pan and sausages on the hot grill. Cook until the sausages are browned and heated through (about 8 minutes) and vegetables have softened and begin to char. Onions will need to stay on the grill a few minutes longer than the broccolette. 5. While vegetables are on the grill, bring a large pot of salted water to boil. Add the orzo and cook until it is just tender, about 8 minutes. Drain well. 6. Coarsely chop the broccolette, onion and sausage into bite-sized pieces and stir them into the dressing. Add the orzo and toss to combine. Season to taste with salt and pepper.
