What is coeliac disease?Coeliac disease is the permanent intolerance to the gluten in wheat,
barley, rye and probably oats that presents in individuals who are genetically predisposed. It is characterised by an immune-mediated
inflammatory response in the small intestine, which interferes with the absorption of macro and micronutrients.
What is the treatment?It consists of following a strict gluten-free diet for the rest of your life. This leads to the normalisation of clinical and functional symptoms,
as well as to the repair of the damaged villi. Coeliacs should base their diet on natural foods: pulses, meat, fish, eggs, fruit, vegetables, and gluten-free cereals: rice and maize. Prepared and/or packaged foods should be avoided as far as possible, as it is more difficult to guarantee the absence of gluten.
