Have you seen changes in the way consumersare choosing where to purchase their food-to-go in recent years?I see a strong movement towards the food-to-gobrands that refresh and innovate their offer andbranding. Consumers, especially in London, areoften overwhelmed for choice, meaning they arealways looking for fresh innovation to determinetheir favoured brand.

How important do you find trade shows such as lunch! to keep upwith trends? Very important, I’ve been an avid supporter of lunch! since theconception, and always find it a great source of trends and innovation.Trade shows offer a platform in a busy schedule to bring togetherinnovation in one go. That coupled with the Innovation ChallengeAwards and bespoke highlighting of new products makes lunch! standout as a must go.

What do you see as the key trends for the food-to-go market in thecoming year? I see a continuation and strengthening of trends in healthy, balanced andnutritiously complete meals. Lunch times are notoriously short thesedays, food-to-go needs to deliver the lunch experience in short, sharpand innovative ways, but not lose in delivering the wow along withfunctionality.
