MAGGI® Asian Liquid Fonds 70g
Tofu (Bean Curd) 250g, 1cm diced
Carrots 150g, julienne
Spring Onion 100g, �nely chopped
Pak Choi 3, �nely sliced
Egg Noodles 300g, cooked
Mange Tout 100g, �nely sliced
Dulse 30g, soaked then sliced (optional)

MAGGI® Vegetable Bouillon Paste 2000ml, made up
Olive Oil 50ml
Shallots 250g, �nely chopped
Arborio Rice 650g, uncooked
Dry White Wine 100ml
Wild Mushrooms 100g, sliced
Parmesan Cheese 150g, grated
Light Cream Cheese 150g
MAGGI® Mushroom Liquid Fond 2tbsp
Chives 30g, �nely chopped
Oriental Miso Style Tofu Soup
Wild Mushroom Risotto
Method:
1) Prepare the liquid fond by adding 70g to 2 ltrs of boiling water
2) Add the tofu and carrots and warm through
3) Add the remaining vegetables and noodles
4) Bring to a simmer for 3 minutes
5) Check the seasoning and add more liquid fond if required and serve
6) Dulse edible seaweed may be also added for authenticity
Method:
1) Make up the MAGGI® paste bouillon with boiling water
2) In a large pan add the olive oil and saute the shallots for 5 minutes without colour
3) Add the Arborio rice and coat in the olive oil and shallot
4) Add the dry white wine and reduce for 3 minutes
5) Add the stock, ladle at a time allowing each ladle to reduce before adding the next. This will take 15 minutes. Keep Stirring
6) Towards the end add the sliced mushrooms and cook through
7) When ready to serve stir in the light cream cheese, liquid mushroom fond and 100grams of the Parmesan
8) To serve, top with chopped chives and extra Parmesan cheese
