taste to food. We take many things in our daily life for granted. Salt

tops that type of things.

Salt is an important secondary food than a food additive.

Although, unlike others, it is not edible by itself, salt is present in all

natural foods such as cereals, fruits, vegetables etc., as a mineral, it’s

an essential ingredient vital for the bodily metabolic functions of

human beings and animals. It is present in all living organisms

including plants. Like the availability of primary food, salt too is

naturally abundant and hence its importance and utility have been

taken for granted by human beings. Yet, its preciousness that could

out way gold if it goes scarce. Such an important natural resource is

abundantly available in India. Have we ever thought about the

birthplace of salt and about the process by which it is produced?

Salt is produced when the salty water is allowed to evaporate in

salt pans. For this, the sea water is collected in successive ponds. The

process of evaporation takes place till the salt crystallizes on the floor

of the pans. To make this process of evaporation easy, salt pans

should be situated in areas of low rainfall and high evaporation rates.

The sunny weather in the coastal districts of Gujarat and Tamil nadu

suits salt production well. Those two regions are the main salt

production areas in India.

Today, salt is universally accessible and cheap. But there

was once a time when it was one of the world’s most precious

commodities. Salt's profound impact on human civilization spans

recorded history and precedes it.

Salt is an inseparable ingredient, which sustains life on

earth. In ancient time when seawater evaporated in pits, white layer

was formed and found not only tasty but human being also

experienced some strength after eating this white layer. The white

layer was nothing but “Solar Salt”. Like this it was the beginning of

civilization as well it was the beginning of solar salt production.

This has a long and intriguing history. It has shaped

civilizations from the very beginning, and story is a glittering, often

surprising part of the history of mankind. A substance so valuable it

served as currency, influences the establishment of trade routes and

cities, provoked and financed wars, secured empires and inspired

revolutions. It is not known as to when salt became article of

commerce, but it is certain that it one of the earliest form of

commercial enterprises.

As the time advanced uses of salt increased and the

method producing solar salt also become a very important process. In

modern times salt has about 14000 known uses from food to industry

to de-icing. Presently, about 120 nations are actively engaged in salt

production.

Salt has influenced human existence virtually from the

beginning. Neolithic settlements were at salt springs. Caravans

trekked deserts trading salt ounce-for-ounce for gold.

Most cultures have folklore and art forms based on salt.

And many cultures share traditions such as offering bread and salt to

welcome visitors. Salt’s economic and military significance produced

trading partnerships or armed combat. And economies and cultures

ranging from the Sahara in West Africa to the Himalayan peaks of

Nepal gives a glimpse of the salt trading culture of centuries gone by.

Salt is made up of sodium (40%) and chlorine (60%),

hence its scientific name, sodium chloride. Salt, like water, is

essential to the functioning of the human body; it is precious as a

condiment and as a food preservative.

In chemical terms, salt is the combination of a sodium

ion with a chloride ion, making it one of the most basic molecules on

earth. It's also one of the most plentiful: it has been estimated that salt

deposits under the state of Kansas alone could supply the entire

world's salt needs for the next 250,000 years.

The technical aspects of salt production have tested

every civilization. The Phoenicians were the first to harvest sea salt,

flooding plains with sea water and then leaving it to dry. The

industrial revolution allowed England to mine its rock salt deep in the

earth, making England the primary exporter of salt during the 18th

and 19th centuries. Japan has a salt production conundrum — it has

no rock-salt deposits and the climate is too humid to allow for

evaporation, so Japan developed its own indigenous salt production

technology of boiling brine.

Salt production was the lifeblood of nations. The

Roman Republic raised the price to raise money for wars, or lowered

it to ensure that all citizens could afford this important part of the diet.

Poland had salt mines that allowed it to export salt and become a rich

and powerful kingdom at the end of the middle Ages, a competitive

advantage that was lost when the Germans improved the technology

of their sea salt harvesting. Venice fought and won a war with Genoa

over salt, but Genoa had the last laugh when Genoan Christopher

Columbus destroyed the Mediterranean salt trade by introducing New

World supplies to Europe.

Salt remained critically important to nations up until the

20th century. American revolutionary Thomas Paine complained of

many things, one of which was the British salt tax. While that might

sound trivial, salt taxes supported British monarchs, salt smuggling

was a problem of the 18th century British state, and salt regulations

were often in controversy.

Salt wasn’t the straw the broke the camel’s back of

American independence, but it played its part. Of course, the

Americans weren’t alone in their rebellion against the British over

salt. Mahatma Ghandi defied British salt laws when he marched to the

sea to make salt.

Salt production was a strategic resource during the

America Civil War. Early in the conflict, Union forces captured key

Confederate salt works in Louisiana and the aptly-named city of

Grand Saline in Texas. In December 1864, Union forces made a

forced march to Saltville in Virginia, where the captured this strategic

town after several previous attacks failed. Why was this town so

important? Saltville was the site of the last major salt processing plant

in the Confederacy, and it cut off the South’s armies from and

undermined civilian morale.

Salt has long held an important place in religion and

culture. Greek worshippers consecrated salt in their rituals. Jewish

Temple offerings included salt; on the Sabbath, Jews still dip their

bread in salt as a remembrance of those sacrifices. In the Old

Testament, Lot's wife was turned into a pillar of salt. Author Sallie

Tisdale notes that salt is as free as the water suspending it when it's

dissolved, and as immutable as stone when it's dry - a fitting duality

for Lot's wife, who overlooks Sodom to this day.

In 1933, the Dalai Lama was buried sitting up in a

bed of salt. Today, a gift of salt endures in India as a potent symbol of

good luck and a reference to Mahatma Gandhi's liberation of India,

which included a symbolic walk to the sea to gather tax-free salt for

the nation's poor.

The British monarchy supported itself with high salt

taxes, leading to a bustling black market for the white crystal. In

1785, the earl of Dundonald wrote that every year in England, 10,000

people were arrested for salt smuggling. Protesting British rule in

1930, Mahatma Gandhi led a 200-mile march to the Arabian Ocean to

collect untaxed salt for India's poor.

Salt has a long and influential role in world history. From

the dawn of civilization, salt has been a key factor in economic,

religious, social and political development. In every part of the world,

salt has been the subject of superstition, folklore, and warfare, it has

even been used as currency.

But salt is also an essential element. Life itself would be

impossible without it, since the human body requires salt in order to

function properly. The concentration of sodium ions in the blood is

directly related to the regulation of safe body fluid levels.

And while we're all familiar with the many uses of salt in

cooking, we may not be aware that salt is used in some 14,000

commercial applications. From manufacturing pulp and paper to

setting dyes in textiles and fabric, from producing soaps and

detergents to making our roads safe in winter, salt plays an essential

role in our daily lives.

Today, salt is so plentiful that its cost is insignificant.

We are far more worried about more high profile — oil, copper, coal,

tungsten, nickel, zinc, and much more. But salt was until recently one

of the primary concerns for the resource policy of all nations.

Learning the history of salt could help us gain a more realistic

understanding of the different kind of resource problems that plague

us today.

Growth of Salt Industry in India:

India is the third largest salt producing country in the world

(after the US and China) with an average annual production of about

148 lakh tonnes. In a very short period of time sufficiency was

achieved (in 1953). Since then, the country has never resorted to

imports. The per–capita consumption of salt in the country is

estimated at about 12 kg, which includes edible as well as industrial

salt. The current annual requirement of salt in the country is estimated

to be 60 lakhs tonnes for industrial use. Caustic soda, soda ash,

chlorine etc., are the major salt-based industries. Besides about 15

lakhs tonne of salt is exported every year.

Sea salt constitutes about 70% of the total salt

production in the country. Salt manufacturing activities are carried out

in the coastal states of Gujarat, Tamil Nadu, Andhra Pradesh, Orissa,

Maharashtra, Karnataka, West Bengal, Goa and hinter land State of

Rajasthan. Among these States only Gujarat, Tamil Nadu and

Rajasthan produces salt surplus to their requirement. These three

states produce about 70%, 15% and 12% respectively of the total salt

produced in the country and cater to the requirement of all the salt

deficit and non-salt producing states. Private sector plays a dominant

role contributing over 95% of the salt production, while the public

sector contributes about 2 – 3%. The co – operative sector contributes

about 8% whereas the small-scale sector (less than 10 acres) accounts

for nearly 40% of the total salt production in the country.

The Tuticorin salt industry, which contributes 25% of the

country's total production until five years ago, has been badly hit by

high production cost, climate change and shortage of labour.

According to Michael Motha, managing director, Sahayamatha

Slattern, the quality of salt produced in Tuticorin has also dipped.

While many salt producers in Gujarat are companies, owning more

than 1000 acres, their counterparts in Tuticorin can boast of only a

handful of producers who can match this scale.

Motha said that 50 percent of the salt sector in Tuticorin is

unorganized. Large export orders ranging between 1 lakh and 2 lakh

tonnes are executed by single firms in Gujarat, while in Tuticorin,

such orders have to be executed by a pool of producers. C. Narean

Dharma raj, partner, Brilliant Salt Refinery, said that a high

production cost was due to high power tariffs and transportation costs.

He said the salt producers pay as much as Rs 100000 a month for

power for a 100-acre pan, while in Gujarat, the same amount is paid

for a salt pan of 2000 acres. Poor infrastructure was adding insult to

injury.

These are the amazing facts about salt and its production

The first salt crust of about 30cms thickness used as

Up grading :

Freshly harvested salt has impurities derived from seawater.

By washing with brine these impurities are removed partly by about

70% before supplying to Caustic Soda industries. By using washed

salt the caustic industries save on chemicals, minimize the generation

of sludge, and also reduce consumption of salt per tonne of caustic

soda reduces, the life of membrane cell increases, the power

The extraction of salt from sea water consists of

progressive evaporation of brine in large ponds using solar heat and
