Satisfy a long harboured yearning, find a special place where you can leave the turbulent times behind, breathe away your cares and let your mind untangle. A light breeze brushes across the rippled water. Sunlight warms
my skin. In the distance I hear a gentle rumble of thunder, but as I gaze at the
majestic mountains the sky above is blue. The scent of wild grasses drifts across
from the lake shore, my breath runs smooth and free. Everything is just the way
it should be – here in my Weisses Rössl at Lake Wolfgangsee.

MEAt last the days are getting longer. The view across the lake as the sun bounces
off the water lets us forget the worries of the past – time for a fresh start into a
new season at the Weisses Rössl. Imagine you spent day and night, week after week,
year upon year in the same place, in the very same house. What would you do to keep
your motivation alive? I've been asked this many a time, and the answer is easy – I reflect,
evaluate, discard or retain, revamp and improve everything I cherish and hold dear. Then
I look for people I can work with. People who share the same values and care about the
same things, who love bringing happiness into other's lives as much as I do. The Rössl
values are reflected in every detail and come together in our annual theme. And that,
my dear Rössl guests, is where you come into play. That's when we reach out to those
who want to come and enjoy what we have to offer, people who will place their trust in
us by choosing to spend their precious holiday time here. We take this responsibility very
seriously. The following pages offer an introduction to some of our wonderful employees
who make work a pleasure, day after day, year-in, year-out.
Here at the Rössl, family, staff and partners have always been at the heart of what we
do. My grandmother was a great advocate for keeping value creation within the region
and my father continuously promoted tourism both from and for the local population.
Our generation is continuing this legacy. In every My Rössl, we introduce some of the
regional personalities and businesses you may come across during your stay – or perhaps
you're already familiar with them? Many of you have probably met Ernst and his bikes
(or skis in winter), and you're bound to know Siggi – or at least his famous schnapps.
But what would any of this be without the ability to meet and celebrate? After so many
months of restrictions and separation we're literally crying out to come together and
share each other's special occasions. Seeing friends and family, celebrating together –
these are a hallmark of the Rössl. Our team is here for you, from initial planning through
to after-care, to ensure you have an unforgettably wonderful time. Yet celebrating can
also mean simply sharing a good bottle of wine with a cherished person and gazing out
at the lake. Here in the Salzkammergut region we say that's "gschmå", our term for cosy.
On that note, I wish you all the best, keep well and see you soon in the Rössl.

Waltraud Haas – as beautiful as she was talented – confidently strode across many a stage and film set. She looks back on a rich career, a long life and a wealth of memories that continues to grow. She was the star of a generation of German-speakers who longed for harmony after the wars. To help the population overcome the recent traumas, the film indus-try aimed to generate light-hearted output. Sentimental films set in the rural idyll, locally termed "Heimatfilme", proved to be the ideal vehicle. They were so successful that Austria created an entire culture out of them. The genre is associated with names that are still fondly remembered today: Karlheinz Böhm, Curd Jürgens, Hans Moser, Freddy Quinn, Oskar Werner and Peter Alexander. Maria Schell, Senta Berger, Nadja Tiller, Romy Schnei-der, Christiane Hörbiger and of course Waltraut Haas. She's on the other end of the line right now.
Frau Haas, “The White Horse Inn” movie, how long ago was that? 60 years?
Haas: "That's all a very long time ago, but Grete Peter, the Rössl's landlady at the
time, was a very charming woman and we became great friends," comments Wal-
traut Haas with a smile in her sprightly-sounding voice.
The film shooting brought you to St. Wolfgang for the first time, and the film itself turned out to be fairly significant for your career. But everyone knew you before then of course. In 1954 and 55 alone you were in front of the camera for 15 different films.
Haas: Yes, and that's an awful lot. But you see, I always had fantastic co-actors, I
generally had nice accommodation and we were all the best of friends. Well, not
quite all of us of course. Occasionally there'd be one who thought of himself as the
big star, but I was having none of that. I soon put them in their place. There's one
leading actor and one leading actress – that much we can agree on, surely? This
usually settled the matter.
I can hear the resoluteness in your voice as you're telling me about that. I should imagine you needed a strong personality to handle such an enor-mous work-rate and not feel overwhelmed by it. And the film world was much more male-dominated back then.
Haas: I remember the time I went to watch Peter Alexander water-skiing on Lake
Wolfgangsee in a suit. Seeing as Peter was on the water anyway, I sat down in his
seat. Along comes his minder and tries to shoo me away. No way, I said, and when
Peter came back in off the lake I called out: Hel-
lo there, Mr Alexander! Since when do we address
each other by our surnames, he asked, and I replied:
Since now, as apparently, I'm not allowed to sit in
your fantastic seat. I stood up and wiped the seat
down with a handkerchief – we were the best of
friends from then on.
Waltraut Haas, as well as playing the Rössl landlady and acting in many other films, you've also had a busy stage career. Considering your numerous roles, does it annoy you that the role of Rössl landlady Josepha Vogelhuber is the one you're most frequently associated with?Haas: Why should that annoy me? The role made
me very popular.
And how do you think you'd get on as the real Rössl landlady?
Haas: Not very well, I think! You're right, there's a
history in my family – my mother kept an inn and
as a young girl I was often asked to help out. But I
can't see myself as the boss.
Your husband Erwin, who has sadly passed away, was also an actor, and you are the moth-er of theatre director Markus Strahl.
Haas: Yes and I still frequently sing with my son,
mainly in theatre plays. We're currently performing
together in Weissenkirchen and in Vienna.
We all want to grow old, but not be old. Talking to you over the phone, you sound like you're in your 30s, it's hard to believe you're 93. Perhaps one day you'll let me in on how you do it.

"A guest recently asked me for some input into his marriage proposal," chef patissier Gerhard Spreitzer recounts. Happy to oblige, he carefully tucked the beautiful engagement ring inside an art-

LOCALGOOD THINGS COME TO THOSE WHO WAIT
The quote from Abe Lincoln gets to the heart of the quandary we often face when shopping for food. Do we really need to have access to every-thing all year round? Strawberries from South Africa, green beans from Kenya and apples from New Zealand? For us, living responsibly also means
buying local, seasonal food. In the hotel and restaurant business, that's not always
so easy. But for head chef Hermann Poll it's a matter of pride: "Sourcing my ingre-
dients from the surrounding areas is important to me because I know I'm getting
a high-quality product. Over time, a fantastic network of suppliers has developed
– partners I know I can rely on." We've had a little peek at his current shopping list,
which includes ten local products:
Seegut Eisl is an organic farm with more than 140 sheep, situated across the lake
in Abersee. Cheese, yoghurt, milk, quark and ice cream all count among the prod-
ucts offered by the Eisl family.
Frau Hintsteiner in Rußbach looks after ten Jersey cows and supplies us with two
types of semi-hard cheeses ripened with red smear.
Metzgerei Zauner, a butcher's shop in Bad Ischl, is one of the oldest businesses in
the Salzkammergut region. To make their Salzfürsten Karreespeck bacon, the firm
uses only finest rack of pork, which is smoked over beech shavings and air dried.
The Marchfeld plain produces the best asparagus and artichokes. Their arrival is
eagerly awaited by the head chef each year. The perfect harvesting time can vary
greatly from one year to the next. That's why the Rössl asparagus week never takes
place before we're certain that the Marchfeld asparagus is perfectly ripe.
Hrovat´s röstet is an artisan roasting house on the nearby Pötschen mountain
pass above Bad Goisern. Only fairly traded, directly imported raw coffee goes into
the wood-fired Ghibli 15 kg roaster for gentle processing. Hrovat's coffees are
available in our Rösslerei delicatessen.
Metzgerei Haslinger in St. Willibald provides our
hotel with meat of a rarely found quality – 90 % of
the beef is sourced from the Upper Austrian Innvier-
tel region.
Imkerei Hintsteiner is a family-run apiary that's
been going strong for over 25 years. The honey
is produced by more than 40 bee colonies spread
across the area around Waidhofen an der Ybbs.
If you visit the Postalm in mid to late August you'll
see many a local roaming through the woodlands
with a basket on their arm. It's mushroom season!
The exact locations where the chanterelles and por-
cini are found often remain a well-guarded secret.
The delicious bright orange Red Kuri squashes in our hotel kitchen garden are much easier to
spot than mushrooms. On his bike, it only takes the
head chef ten minutes to get there.
Situated just a few kilometres from the hotel is our own char fish farm. That's where we breed
and smoke the famous Rössling char. We hold fish-
ing lodge evenings twice a week, where up to 20
visitors can dine on freshly smoked char. As the eve-
ning progresses, Peter and Alain will provide insights
into their craft as you enjoy a behind-the-scenes ex-
perience. Our smoked Rössling char is also available
in the Rösslerei delicatessen.

RED AND WHITETHE VINEYARD AROUND THE CORNER
Our hotel has a storied tradition of promoting the best of Austrian wine cul-ture at the highest level. The 18th century Felsenkeller rock cellar protects some truly magnificent treasures. Since the summer of 2019, some 10,000
bottles and over 500 different wines including Grüner Veltliner, Riesling, Blaufränk-
isch & Co. from the Wachau, Lake Neusiedl and recently also Upper Austria have
found a home here. Florian Eschlböck gave his vineyard the somewhat unusual
name "95 Tage". Why? Because 95 days is the length of the calendar summer,
and the period in which the grapes ripen to full maturity. Founded in 2008, the
family business is based in Hörsching, where Florian is assisted by his father Dieter
and wife Katrin. The use of ecologically sound procedures is important to them.
That's why no insecticides or herbicides are used at the Eschlböck vineyard. "95
Tage" wines are notable for their intensive fruit aroma and pleasing acid-sugar
balance.
The Casa Amore vineyard in Schlüßlberg achieved organic and biodynamic certifi-
cation in 2018 – the only vineyard in Upper Austria to be awarded this distinction.
Having switched careers only a few years earlier, winegrower Armin and his family
tend to a two-hectare plot. Situated in an area not traditionally known for wine
growing, the vineyard is home to the Müller Thurgau, Sauvignon Blanc, Weißbur-
gunder, Grüner Veltliner, Blauer Zweigelt and Pinot
Noir varieties. Just four years after qualifying as a
viticulturist, Armin Kienesberger attracted the at-
tention of gastronomy guide Gault Millau, which
singled out Casa Amore with the special prize "Dis-
covery of the year".
The wines of Casa Amore and Eschlböck are listed
on our wine list, our sommeliers will be happy to
advise you.
SMALL IS BEAUTIFULFRUITY SPIRITS AND FLAVOURSOME BREWS
On the opposite side of the lake, nestled into a beautiful meadow or-chard with more than 200 trees, lies the Primushäusl, where the Rieg-ers have been distilling schnapps for over 30 years. The business is now
in the capable hands of junior boss Siggi Rieger, who has expanded operations
with a state-of-the-art distillery housed in a rustic timber lodge. This allows vis-
itors to watch the master distiller at work as part of a guided tour. The prod-
uct line is continually being developed and currently includes 48 different
fine spirits as well as whisky, gin and rum. The numerous awards attracted in
recent years testify to the elite status of Primushäusl fine spirits, not just in Austria
itself, but right across the world.
Another local distiller to attract widespread recognition is Matthias Gasteiger, who
has been producing award-winning spirits and liquors from local fruit varieties for 20
years. A former salt miner, the 63-year-old also offers a range of gourmet vinegars:
"I focus on quality rather than quantity." Based near Abersee, he exclusively process-
es organic ingredients and doesn't use any chemical sprays. This has earned him the
inclusion in the 2020 Gault Millau Austria guide for his fine plum and gentian spirits.
His refined tipples can be found on the drinks menus at our restaurants as well as in
the Rösslerei delicatessen. Less potent but no less enjoyable is the historic Peterbräu
beer. Originally brewed 300 years ago on the site of
the current hotel, it was produced to quench the
thirst of the many pilgrims passing through St. Wolf-
gang. In collaboration with Trumer Private Brewery,
Peterbräu beer was reinstated in 2011 to mark the
third centenary. An exceptionally smooth, full-bod-
ied and typical Austrian speciality with a strong bou-
quet, full-flavoured taste and a hint of caramel.

BIKINGPEDAL POWER
across the Salzkammergut covers an altitude difference of 14,500 metres and takes
in the region's loveliest spots. Why not try out one of the beautiful nearby sections
of the trail? There's also plenty on offer for racing cyclists in the area around St.

tion of 20 varied routes. For true adrenalin junkies, there are annual competitions
such as the 5-Seen bike marathon, the Eddy Merckx Classic event or the Salzkam-
mergut MTB Trophy in Bad Goisern. Whatever you opt for – it's time to saddle up
and pedal away.
The Salzkammergut region is a paradise for mountain bikers, racing cyclists and e-bike users alike. The network of cycle paths covers more than a thousand kilometres and ranges from easy family routes through to arduous mountain trails. Rössl guests benefit from complimentary

Summer by the lake.
A lakeside summer is my kind of summer. Beside me the crystal waters of Lake Wolfgangsee, above me just blue sky, framed by magnificent mountains – what more could one want. Leaping off the diving board into the refreshing water. Discovering that even the second gear of the
e-power boat sets a very leisurely pace. Gliding along aimlessly in the pedal boat. Practising your bal-
ancing skills on a stand up paddleboard or even on the water skis... No matter how you decide to spend
your time, enjoy the relaxing waters of the Wolfgangsee to their fullest. Top it all off with a classy sun-
downer, a fizzy Rössl summer drink with fresh mint or a cold Peterbräu beer. That's what I call enjoying
summer with all your senses.

LAKE WOLFGANGWATER SPORTS AND SUMMER SUN
Have you ever experienced that feeling of complete weightlessness under water? Do you yearn to fly across the lake at breathtaking speed? The St. Wolfgang diving centre and nearby water ski school make it all possible – and there's plenty more. During the months of July and August, Rössl guests can even hop aboard the shuttle boat Margarethe for a leisurely ride to the Rössl bathing lawn. A few steps will take you to the diving cen-tre, with the water skiing school just to the west.
SUP & KAYAK
For all those who feel more at home above the water's surface than below, we
recommend exploring the lake with a stand up paddleboard, or SUP in short. No
prior experience is required, we'll be at hand to help you with your first attempts.
If you're already a confident SUP user or even a pro, why not try out one of our
special boards, such as the super fast Race SUP or the family friendly Yoga SUP. For
our younger guests we also have our special SUPs for children and teens. If you
fancy a longer outing, we'll be happy to provide you with insider tips on the most
romantic, popular or remote beauty spots along the lake, accessible with SUP or
the sit-on kayak.
DIVING
"We have a wide range of opportunities on offer for diving fans as well as those
who have yet to explore the sport," says Iris Berner, co-founder of the diving centre
and an enthusiastic diver herself. Anything is possible, from taster sessions in the
pool or lake according to preference (from 8 years) through to globally recognised
PADI diver training (from 10 years). "We can tailor the activities to individual re-
quirements, such as a refresher diving course or even a guided diving safari to the
lake's most exclusive diving locations with the school catamaran," she continues.

team would go beyond the scope of this publication. So we've decided to provide

retraining and opportunities for promotion are part
of what we offer, while good accommodation and
great leisure-time activities are a matter of course.
At this point I would like to extend a heart-felt thank
you to all our employees, who have stood solid as a
rock in the turbulent times of coronavirus, and con-
tinue to do so.
Always at hand. Alexander is head waiter and a wine academy graduate. In addition to quenching the guests' thirst he's also well equipped to quench any possible fire in the hotel, as he's an incident commander of the local fire brigade.
The perfect fit. Stefanie, our much-loved breakfast genie ap-
preciates the part-time hours at the Rössl, while her husband
Michael has just successfully moved across from the kitchen to
purchasing.
Family matters. Thanks to flexible working hours, Bianca, Doris and Maria are successfully combining work and family commitments. A fabulous couple. Milan has happily worked here for 30
years, while Miriana retrained in order to join him in the Rössl.
All-rounder. While our guests know Hans as a mul-
titalented hired help, he now also provides support
to the hotel sales team. At home he runs a farm.
Sympathy and respect. Michaela adeptly rules the Rössl break-
fast kitchen. Providing her with the necessary time off to care for
a family member was a matter of course.
Nurturing support. Zoran is head waiter and sommelier in the
award-winning Kaiserterrasse restaurant and always has a sym-
pathetic ear for our apprentices.
A family affair. Margot has worked with us for over 35
years and heads up event management. She followed
her father here, who was a concierge at the Weisses
Rössl for many years.

Fabienne Peter is the eldest of Rössl landlady Gudrun Peter's three daughters. She's currently studying at the higher college for commerce in St. Wolfgang and has already gained some experience in her family establishment. Fabienne has a special interest in social media platforms. On
