ResourcesNata de Pina is a popular desert in the Philippines. It is made with fermented pineapple juice that is sweetened, then turned into a gel like substance. It is served with fruit, ice cream, and mixed drinks. This has become a common treat, not only for its taste, but for its low cholesterol and low fat content.Materials
Pineapple juice, 10 litersDiammonium phosphate (DAP), 30 gSugar, 4.8 kgGlacial acetic acid, 0.2 litersAcetobacter xylinum, 1 liter
EquipmentBlenderKnife and cutting boardSieverPan and stirring spoonStovePlastic tray
Method:
1. Prepare all the materials2. Mix and boil pineapple juice, DAP, sugar, and glacial acetic acid.3. Let the juice cool in a plastic tray, and then add starter Acetobacter xylinum and cover with paper.4. Fermentation lasts for 14 days and nata layer will be formed thereafter. 5. Cut the nata into size 1 x 1 x 1 cm, wash and boil.6. Soak the nata in water for one night, and change soaking water repeatedly to eliminate acid taste.6. Add 40% sugar solution, essence, and benzoic.7.
