In the cake industry, when you frostthe top, but not the sides of a cake, it’snaked.

That is the meaning behind NakedLove, a new cake line launched lastweek by Norman Love Confections. The handmade cakes are part of Love’scontinued expansion into bakery andpastry sales, which began late last yearwith the launch of Stir, Bake, LOVE, aline of cookie mixes.

“We’ve noticed trends in layercakes,” said Norman Love, founder ofNorman Love Confections. “Some ofthe old, homey layered cakes are com-ing back.”

The idea for the line began with Mi-randa Prince, a cake artist with Nor-man Love Confections. Love andPrince began by tasting different layer

cakes that were currently on the mar-ket. “How do we capture the Americantaste profile? We wanted to make itvery simple and identifiable, and usethe absolute best ingredients,” Loveexplained. Prince, who has family inLas Vegas, also wanted the cakes to beaccessible to everyone.

After tasting, baking and more tast-ing, the end result is Love’s latest prod-uct, Naked Love. “When I fill a cake, itlooks delicious,” Prince explained.“Then we cover that with frosting andyou can’t see the layers.” The NakedLove cakes skip the exterior frosting, showing off the layers of frosting andcake. The round cakes are topped witha buttercream disk decorated withstenciled polka dots. “Miranda cameup with the polka dots,” said Love. “Mi-randa and I talked a lot about ‘how doyou finish these cakes?’ I’m a big fanof, when you do a line of something, fol-low suit with consistency.”

The cakes come in seven flavors:banana, carrot cake, chocolate peanutbutter, coconut, confetti, lemon rasp-berry and ultimate chocolate. “My fa-

vorite is the confetti cake,” said Love.“Delicious vanilla cake and vanilla but-ter cream with sprinkles folded intothe cake ... I’m a big fan of vanilla.” ForPrice, her favorite is the banana cake, which features layers of banana cakewith pecans, a banana mousseline (apastry cream with butter in it so it isthicker and heavier than pastrycream) and a dark chocolate crunch.

While part of the challenge was cre-ating a new product line, an even biggerchallenge was shipping the finishedproduct.

The process starts with shock freez-ing the cake to lock in moisture. Thenthe cake is shrink wrapped, preventingany trapped air from drying out thecake, and shipped frozen. Upon arrival,an instruction card leads recipientsthrough the care of their cake. The cakeis ready to eat after tempering to a lightchill or room temperature, softeningthe buttercream and the fat moleculesin the cake, and making the texture sim-ilar to a freshly baked and frosted cake.“Basically, the fat molecules are relax-ing,” said Love.

The cakes are available for purchaseonline and in Love’s three area choco-late salons. Small cakes, which serve upto four people, are $28 in store or $57shipped; the large cakes, which serve upto six people, are $45 in store and $75shipped.

“I’ve always believed that, as our on-line sales continue to grow and consum-ers become more confident in buyingonline, we should place more emphasison our website and online sales,” saidLove. “We think we do a really deliciousand wonderful pastry and bakery prod-uct.”

The cakes will be featured in the Feb-ruary issue of Food & Wine Magazine, coming on the heels of Love’s inductionin to the Dessert Professional maga-zine’s Chocolatier Hall of Fame.. “Weare nervously excited about what is tocome,” said Love. “This is really a feath-er in Miranda’s hat ... We are anxiouslyawaiting the storm.”

Are fairy gardens a big trend?

Yes, fairy gardens are a trend. Peo-ple who put in butterfly gardens buylittle fairies and little gnomes andhouses for toads and frogs. It makesyour garden like a fantasy area espe-cially if you have children or grand-children.

What is unique about your store?

I think it’s unique because mostly itdeals with butterflies and nature. So ifyou have someone that is really intobutterflies, this is the place to findthings they love. We also have home-made fudge here. The owner, RobJohnson, and his father, Jerry Johnson, make the fudge. They have uniqueflavors like bubblegum, vanilla Skit-tles, blueberry, raspberry and orangecream fudge.

Is there a charge to get into the gift shop?

There is no admission charge. Onlythe conservatory has a charge becausethey’re nonprofit. The entrance is $12per person and there is a $1 discountfor Florida residents, an additional $1discount for anyone over 50 and veter-ans with identification get in free. Inaddition, the first Sunday of everymonth is ‘Sunday fun day is free day’

for everyone and we allow vendors toset up on the property for free. All ofour plants are butterfly friendly andon nice, warm days we have butterflieseverywhere.
