Thanks all our pioneers for building our communities and working

Ingredients:

1 1/3 cups all-purpose fl our

1/4 teaspoon baking soda

2 teaspoons baking powder

3/4 cup unsweetened cocoa powder

1/8 teaspoon salt

3 tablespoons butter, softened

1 1/2 cups white sugar

2 eggs3/4 teaspoon vanilla extract

1 cup milk

Directions:

Preheat oven to 350 degrees F (175 degrees C). Line a muffi n pan with paper or foil liners.

Sift together the fl our, baking powder, baking soda, cocoa and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fl uffy. Add the eggs

one at a time, beating well with each addition, then stir in the vanilla. Add the fl our mix-

ture alternately with the milk; beat well. Fill the muffi n cups 3/4 full.

Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the

cake comes out clean. Frost with your favorite frosting when cool.

QUICK CHoCoLaTE CUPCaKES

Creamy Chocolate frosting

2 3/4 cups confectioners’ sugar

6 tablespoons unsweetened

cocoa powder

6 tablespoons butter

5 tablespoons evaporated milk

1 teaspoon vanilla extract

Directions:

In a medium bowl, sift together the

confectioners’ sugar and cocoa, and

set aside.

In a large bowl, cream butter un-

til smooth, then gradually beat

in sugar mixture alternately with

evaporated milk. Blend in vanilla.

Beat until light and fl uffy. If neces-

sary, adjust consistency with more

milk or sugar.

in that old silk hat they found, for when they placed it on his head

INGREDIENTS

3 cups all-purpose flour

3 tsp of baking powder

1/2 teaspoon salt

1 cup unsalted butter, at room temperature

2 cups white sugar

4 eggs, at room temperature

1 teaspoon vanilla extract

2 tablespoons lemon zest

1 cup whole milk, divided

2 1/2 tablespoons fresh lemon juice, divided

LEmoN CREam ICING

2 cups chilled heavy cream

3/4 cup confectioners’ sugar

1 1/2 tablespoons fresh lemon juiceLEmoN CUPCaKES

DIRECTIoNS:

Preheat oven to 375 degrees F (190 degrees C). Line 30 cupcake pan cups with

paper liners. Sift the self-rising flour and salt together in a bowl. In another bowl,

beat the unsalted butter and sugar with an electric mixer until light and fluffy. Beat

in the eggs one at a time, beating each egg until incorporated before adding the

next. Mix in the vanilla extract and lemon zest. Gently beat the flour mixture into

the butter mixture, one third at a time, alternating with half the milk and half the

lemon juice after each of the first 2 additions of flour. Beat until just combined; do

not over mix. Fill the prepared cupcake liners with batter 3/4 full, and bake in the

preheated oven until a toothpick inserted in the center comes out clean, about 17

minutes. Let the cupcakes cool in the pans for about 10 minutes before

removing them to finish cooling on a rack.

To make the icing, beat the cream in a chilled bowl with an electric

mixer set on Low until the cream begins to thicken. Add the

confectioners’ sugar and lemon juice, a little at a time, beating after

each addition, until fully incorporated. Increase the mixer speed to

High, and beat until the icing forms soft peaks, about 5 minutes.

Spread on the cooled cupcakes. Refrigerate leftovers.

1 (8 ounce) package cream cheese, softened

1 egg1/3 cup white sugar

1/8 teaspoon salt

1 cup miniature semisweet chocolate chips

1 1/2 cups all-purpose flour

1 cup white sugar

1/4 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup water

1/3 cup vegetable oil

1 tablespoon cider vinegar

1 teaspoon vanilla extract

DIRECTIoNS:

Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper cups

or lightly spray with non-stick cooking spray.

In a medium bowl, beat the cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon

salt until light and fluffy. Stir in the chocolate chips and set aside.

SURPRISE CHoCoLaTE CUPCaKES

In a large bowl, mix together the flour, 1 cup sugar, cocoa, baking soda

and 1/2 teaspoon salt. Make a well in the center and add the water,

oil, vinegar and vanilla. Stir together until well blended.

Fill muffin tins 1/3 full with the batter and top with a dollop of the

cream cheese mixture.

Bake in preheated oven for 25 to 30 minutes.

INGREDIENTS:

1 tablespoon apple cider vinegar

1 1/2 cups almond milk

2 cups all-purpose flour

1 cup white sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup coconut oil, warmed until liquid

1 1/4 teaspoons vanilla extract

DIRECTIoNS:

Preheat oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line

with 18 paper baking cups.

Measure the apple cider vinegar into a 2 cup measuring cup. Fill with almond milk to

make 1 1/2 cups. Let stand until curdled, about 5 minutes. In a large bowl, Whisk to-

gether the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk

1 Tbsp coconut oil,

1/4 cup almond milk.

Combine in a saucepan, bring it to

a boil, boil 5 min. Spread it while it’s

lukewarm.

together the almond milk mixture, coconut oil and vanilla. Pour the wet

ingredients into the dry ingredients and stir just until blended. Spoon the

batter into the prepared cups, dividing evenly.

Bake in the preheated oven until the tops spring back when lightly

pressed, 15 to 20 minutes. Cool in the pan set over a wire rack. When

cool, arrange the cupcakes on a serving platter. Frost with desired

frosting.

INGREDIENTS:

12 half pint, wide mouth Mason jars

2 tbsp (30 ml) butter, for greasing Mason jars

1 cup (250 ml) all-purpose fl our

2/3 cup (170 ml) unsweetened cocoa powder

1 tsp (5 ml) baking soda

¾ tsp (4 ml) baking powder

¼ tsp (1 ml) sea salt

½ cup (125 ml) unsalted butter, softened

1 cup (250 ml) honey

2 large eggs

1 ½ tsps (7 ml) Peppermint & Mint Extract

½ cup (125 ml) plain yogurt

1 can, White Buttercream Icing

DIRECTIoNS:

Preheat oven to 350°F (180°C). Grease Mason jars with 2 tbsp (30 mL) butter

In a medium bowl, whisk or sift together fl our, cocoa powder, baking soda, baking

powder and salt; set aside. In a large bowl or mixer, cream ½ cup (125 ml) butter

and honey together until smooth. Beat in eggs one at a time until smooth, then

stir in mint extract. Fold half of the fl our mixture in until just combined (do not

over mix). Fold in yogurt until combined, then fold in remaining fl our. Divide batter

evenly into prepared Mason jars, fi lling each just over halfway full. To make fi lling

easy, use a piping bag.

Place Mason jars into a roasting pan and fi ll with hot water, up to 1 ½-in (4 cm)

pick inserted in centre of cake comes out clean. Using oven mitts

or a towel, carefully remove Mason jars from pan and allow to cool

completely. Fill Mason jars with icing and decorate as desired, up to

12 hours in advance of serving. To store, iced cakes and seal with

lids for up to 48 hours in refrigerator.

INGREDIENTS:

1 package lemon cake mix (regular size)

1-1/3 cups water

1/3 cup canola oil

3 eggs

1 tablespoon grated lemon peel

1 cup lemon creme pie fi lling

mERINGUE:

3 egg whites

1/2 teaspoon cream of tartar

1/2 cup sugar

DIRECTIoNS:

In a large bowl, combine the cake mix, water, oil, eggs and lemon peel; beat on low

speed for 30 seconds. Beat on medium for 2 minutes.

Fill paper-lined muffi n cups two-thirds full. Bake at 350° for 18-22 minutes or until a

toothpick inserted near the center comes out clean.

Cut a small hole in the corner of a pastry or plastic bag; insert a very small tip. Fill

with pie fi lling. Push the tip into the top of each cupcake to fi ll.

LEmoN mERINGUE CUPCaKES

In a large bowl, beat egg whites and cream of tartar on medium speed

until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on

high until stiff glossy peaks form and sugar is dissolved. Pipe over tops

of cupcakes. Bake at 400° for 5-8 minutes or until meringue is golden

brown. Cool for 10 minutes before removing from pans to wire racks to

cool completely. Store in an airtight container in the refrigerator.

Yield: 2 dozen.

Ingredients

2 cups all-purpose fl our

1/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/2 cup salted butter, softened

1 cup granulated sugar

1 1/2 Tbsp fi nely grated orange zest

(from about 1 1/2 oranges)

2 large eggs

3/4 cup heavy cream (if you want a

lighter texture use half and half)

1/4 cup fresh orange juice

1 1/2 tsp orange extract

1 tsp vanilla extract

oRaNGE CREamSICLE CUPCaKES

Directions

Preheat oven to 350 degrees. In a mixing bowl, whisk together fl our, baking

powder, baking soda and salt, set aside. In a large mixing bowl, using an electric

hand mixer set on medium-high speed, blend together butter, granulated sugar

and orange zest until pale and fl uffy, about 3 - 4 minutes. Mix in eggs one at

time, blending until combine after each addition. Measure out cream into a liquid

measuring cup, stir in orange juice, orange extract and vanilla extract. With hand

mixer set on low speed and working in 3 separate batches, blend in fl our mixture

alternating with cream mixture, beginning and ending with fl our mixture and mixing

just until combine after each addition. Divide batter among 14 paper lined muffi n

cups, fi lling each cup 3/4 full. Bake in preheated oven 23 - 25, rotating muffi n tins

once halfway through baking, until toothpick inserted into center comes out clean.

Remove from oven and allow to cool several minutes before transferring to a wire

rack to cool. Cool completely then frost with Orange Buttercream Frosting and

garnish with a small orange slice if desired (just before serving). Store in an airtight

container at room temperature.

Beat together 1/2 cup butter or becel with 3 cups of icing sugar, add

a tsp of orange extract and keep beating with an electric hand mixer

adding creamo or cream until a frosting consistency. Pipe onto cooled

cupcakes.

INGREDIENTS:

2 cups all-purpose flour

2 tsp baking powder

1-1/2 cups grated cheese

1/2 cup chopped smoked salmon

1/3 cup chopped fresh dill

1 egg3/4 cup buttermilk

1/3 cup vegetable oil

1/2 cup cream cheese

INSTRUCTIoNS:

Heat the oven to 350°F, and line a 6-cup muffin pan with paper liners.

Mix together the flour and baking powder in a large bowl. Add the grated cheese,

smoked salmon, and dill.

In a separate bowl, beat together the egg, buttermilk and oil.

Place half the wet ingredients into the dry ingredients and stir well. Add the rest of

the wet ingredients and mix until completely combined.

Spoon into the muffin liners until each is filled halfway, then place a heaping tsp of

cream cheese in the middle of each muffin. Add more batter until they are full with

mixture.

Cook for 20 minutes, until the muffins are just browning on top. Cool

Cook potatoes until tender, drain, add the cream, butter, salt and pepper and mix

really well.

Mix in the dill. When cooled pipe onto the cupcakes.

1/2 cup dill, diced finely

¼ cup heavy cream
