José Luis Rodríguez Zapatero, Presidente del estado español y Mariano Rajoy, lider del partido Popular- primer partido de la oposición -, acordaron adelantar la reestructuración del sistema de cajas de ahorros con problemas financieros.Su decisión partió causada por las advertencias de los economistas de un posible colapso financiero y de un posterior contagio de la deuda económica contraída por Grecia.En el primer encuentro entre los dos lideres después de un año y medio, los dos rivales políticos han alcanzado un acuerdo para recapitalizar las cuarenta y cinco cajas de ahorros para el treinta de junio.También acordaron aprobar una ley antes de tres meses que permita gobernar las cajas de ahorros con estructuras que estén en muchos casos muy expuestas a fluctuaciones relacionadas con el deteriorado mercado inmobiliario. No obstante hay que tener en cuenta que las cajas de ahorros sostienen la mitad del sistema financiero.

In their first one-on-one meeting for 11⁄2 years, the two political rivals reached an accord to finalise plans for mergers and state-funded recapitalisations among the 45 savings banks by June 30.They also agreed on a new law within three months to govern the ‘cajas’ with unclear ownership structures that are in most cases heavily exposed to the collapsing property market. In all, cajas account for about half the financial system.

It is named after the nobleman Fernando de Uncibay, captain of the Vizcaínos, who accompanied the Catholic Monarchs in the re-conquering of Málaga. In 1497, he was named Alderman of Málaga and being a busy man, he was also Mayor of Bezmiliana (Rincón de la Victoria). Over the years the Plaza has undergone various transformations including a short term name change in 1929 to Plaza de las Cortes de Cádiz. The Sculptures and the monolith take centre stage of the Plaza, the latter being remodelled in 1989 by the architects Luís Bono Ruiz de la Herrán and José Fernández Oyarzábal, who reduced its height and erected an obelisk, adding the mythological sculptures “Rapto de Europa” and “la muerte de Acteón”, made by local sculptor José Seguiri.Plaza de Uncibay is a delightful location and any visit to Malaga would not be complete without a little time spent here.

A lo largo de los años, la plaza ha sufrido diversas transformaciones, así como un cambio de nombre, por un corto periodo de tiempo en 1929, se llamó la Plaza de las Cortes de Cádiz. Unas esculturas y un monolito ocupan la parte central de la Plaza, este último fue remodelado en 1989 por los arquitectos Luís Bono Ruiz de la Herrán y José Fernández Oyarzábal, quien redujo su altura y erigió un obelisco, añadiendo las esculturas mitológicas “El rapto de Europa” y “La Muerte de Acteón”, realizadas por el escultor local José Seguiri. Wrap tightly in many layers of foil then wrap that in lots of wet burlap. Finally you want to wrap that in a heavy wire frame. This holds the whole thing together and gives you something to hold on to. Once you have it wrapped tightly you are ready for the fire. One tip, if you are doing a whole hog you need the mouth propped open to let heat through. night of San Juan where we all take to the beaches, camp overnight on the beach, light a fire, cook dinner and then swim in the sea at midnight to cleanse our souls (although a friend of mine suggested last year that it might take more than a midnight swim to cleanse him of his sins!). Of course you may not want to camp out overnight and cook on the beach, preferring perhaps to have a more civilised meal in a local restaurant, nice glass of wine, chat with friends and then make your way onto the beach before the midnight cleansing. This of course is very acceptable behaviour for the festival and the many restaurants along the coast will be pleased for your business. However, should you wish to cook on the beach, with a difference, you could try pit cooking. Pit cooking is one of the oldest methods of cooking. Dig a hole in the ground, fill it with fire, add your meat, cover and cook. While lots of people do this in many different ways there are a few basic steps you can take to make it turn out right. You can use this cooking method for large hogs, whole lamb, a side of beef, or virtually anything else you have in mind for your party.Digging the Pit: The size of the hole in the ground you need is determined by what you are going to cook. The pit needs to be about one foot larger in every direction. The hole should be about three feet deep. The size of the hole is going to determine the size of the fire and how much of everything else you are going to need, so you need the hole first. Lining the Pit: Most pits are lined in stones of bricks. This is done to even out and hold in the heat. Large stones, about the size of your head are perfect. Building the Fire: You are going to need a lot of hot coals to do your pit cooking. What you are going to aim for is about a foot deep of burning hot coals before you start the actual cooking.Wrapping the Meat: Whatever it is you choose to cook needs to first be flavoured and then securely wrapped. Some people use chicken wire to wrap it together. This makes a good tight package. In the old days an important part of this wrapping was banana leaves (or other large leaves). This provided protection from the fire and moisture to the meat. These days’ burlap bags are used to make a damp surface

This controls the cooking time. Traditionally the meat goes in the fire at night for eating the next day but it really all depends on your quantity of meat. Since the meat is tightly wrapped it won’t dry out and can tolerate a little overcooking so you do have a large window to work with. Basic rule...be patient and enjoy the experience.

Cualquier persona que viva aquí en España sabrá todo

sobre la noche de San Juan, en la que todos nos vamos a las playas, donde acampamos por la noche, hacemos un fuego, preparamos la cena, y luego nos bañamos en el mar a media noche, para limpiar nuestras almas (aunque un amigo me confesó el año pasado que le haría falta más de un baño a medianoche para limpiar sus pecados). Quizá no te apetezca acampar para pasar la noche y cocinar en la playa, y prefieras tomar una comida más civilizada en un restaurante cercano, charlando con los amigos, con un buen vaso de vino, para después dirigirte a la playa, antes del baño purificador. Esta es, claro esta, una conducta muy aceptable en estas fiestas, y habrá muchos restaurantes a lo largo de la playa encantados con tu opción. No obstante, si quieres cocinar en la playa, para variar, podrías probar la “cocina al hoyo”. Cocinar en un hoyo es uno de los métodos más antiguos de cocinar. Cava un hoyo en el suelo, llénalo con brasas, pon la

carne, cúbrela y deja que se haga. Aunque cada cual lo hace de una forma diferente, hay unos pasos básicos que debes tener en cuenta, si quieres que el resultado sea el deseado. Puedes usar este método para asar un cochinillo, un cordero, media ternera, o prácticamente lo que se te ocurra para disfrutar la fiesta.Cavando el hoyo: el tamaño del agujero en el suelo que necesitas viene determinado por lo que vayas a asar. El hoyo tiene que tener unos 30 centímetros de más en cada lado, y un metro de hondo. El tamaño del hoyo determinará el tamaño del fuego y la cantidad de otras cosas que vas a necesitar. Así es que lo primero es el hoyo.Revestimiento del hoyo: La mayoría se revisten con piedras o ladrillos. Esto se hace para nivelar y guardar el calor en el interior. Grandes piedras, del tamaño de tu cabeza, servirán muy bien.Preparando el fuego: Necesitarás un montón de brasas para que tu hoyo sea un horno. Lo ideal es depositar unos 30 centímetros de brasas antes de empezar la cocción.Envolviendo la carne: Sea lo que sea lo que vayas a asar, sazónalo y envuélvelo fuertemente. Algunos usan alambre de gallinero para sujetar bien la carne. Con ello se consigue un paquete bien apretado. Antiguamente una parte importante de este envoltorio eran las grandes hojas de plátano (u otras). Esto protege la carne del fuego y mantiene su jugo. Hoy día los sacos de arpillera se usan para lograr una

superficie húmeda, y hoja de aluminio para separar la carne del fuego. Utiliza lo que puedas encontrar.Lo fundamental es colocar la carne ya preparada y sazonada en un envoltorio de varias láminas de aluminio y un montón de arpillera mojada, y atarlo todo, bien sujeto, con un alambre grueso. Esto lo mantendrá en una pieza y te ofrecerá algo con lo que agarrarlo. Cuando ya lo tengas todo bien sujeto, está listo para el fuego.Un consejo: si estas asando un marrano entero, tendrás que mantener su hocico abierto para permitir que salga el calor. Por ello se ponía la manzana en la boca del gorrino.Cargando el hoyo: tan pronto como la carne este en el agujero, tienes que cubrirla. Esto evita que se queme la arpillera, al dejar sin oxigeno al fuego. Las brasas permanecerán calientes durante varios días, pero ya no habrá un fuego real. Esto puede lograrse cubriendo el hoyo con tierra, pero recuerda que tendrás que sacarlo todo más tarde. Cubriendo el fuego mantienes una temperatura constante, que es lo ideal para asar.Tiempo de cocción: el tamaño del hoyo marca el tamaño del fuego y, por ello, la cantidad de calor del hoyo. Esto decide el tiempo de cocción. Tradicionalmente, la carne se pone a asar por la noche para comerla al día siguiente, pero en realidad todo depende de la cantidad de carne.Puesto que la carne está firmemente envuelta, no se resecará, y puede tolerar una ligera sobre cocción; así es que tienes un amplio abanico para trabajar. Regla básica: ten paciencia y disfruta la experiencia. n
