WHAT IS SOTOL?
Sotol is spirit of sereque or sotol plant (Dasylirion spp.). Sereque is a short-stemmed plant, with lustrous and green leaves of 15 to 20 mm wide and up to one meter long. Sotol plant is endemic
of the Chihuahua´s desert, and the north of Mexico.
SOTOL HISTORY
More than 800 years ago, the native tribes of northern Mexico realized that sereque heads cooked and mixed with water fermented, producing a beer-type alcoholic beverage, which was introduced as part of their culture and used in ceremonies and festivities. However, it was not until the 16th century that a high alcoholic drink began to be obtained, since the Spanish colonizers introduced distillation to obtain the spirit of the plant.
Since the installation of the first distillery or “vinata” and until the end of the 20th century, the production of Sotol where mainly clandestine, because the mexican government persecuted those who made it. With the appearance of the Sotol origin designation in 2002, the development of vinatas in the states of Chihuahua, Coahuila and Durango was promoted. Additionally in 2002, the Sotol began to be known in the national and international market as a strong and high quality drink.
SOTOL PIZCADORES
Sotol Pizcadores uses the sotol plant orsereque, denominated Dasyliron Leiophyllum, which can be found in the desert region inthe north of Mexico. Sotol plant grow wildly on the hillsides where the rain is rare andthe temperatures seem infernal.
Sotol Pizcadores is produced since 2010, however we adopted an ancestral processwhich dates from pre-hispanic times for oursotol production.
