apresenteronallthreeseriesof‘GreatBritishFoodRevival.’MichelalsofrontedthehighlyanticipatedreturnofBBC2’s‘FoodandDrink,’andpresentedadocumentaryonEscoffier,whoserevolutionaryapproachtofinecuisinehasinspiredMichelandmanyothers,.HisrecentsearchfortheperfectchocolatewasfilmedforadocumentaryfortheBBCwhichwasshownearlierin2014.HeisinvolvedwiththeRouxExperiencecoursesatthe‘CactusKitchens’cookeryschool,withtheExecutiveproducerofSaturdayKitchen,AmandaRoss.CactusKitchensofferspeopletheopportunitytolearntocookwithinsmallintimategroupsfromsomeoftheUK’sfinestchefs,onsiteabovetheSaturdayKitchenstudios.Theauthorofseveralcookerybooks,hismostrecentisTheFrenchKitcheninwhichMichelexplorestheheritageofhisnativeFrenchcuisine-fromtherustictothehaute–in200recipes.

Always leave a little fat on a new season’s lamb rack to enhance the beautiful sweet flavour. Serve with a traditional ratatouille and roast potatoes with garlic. Ask your butcher to French trim the rack so the bones are beautifully clean.

Preheat the oven to 220oC/Fan 200oC/Gas 7 and season the lamb. Heat the oil in an ovenproof pan on the hob and sear the lamb over a high heat, fat-side down, until golden. Turn the lamb over and continue to cook for another 2 to 3 minutes.

Add the garlic and thyme, then place the pan in the preheated oven for 16 minutes for pink lamb, basting twice. Take it out and leave the meat to rest in a warm place.

Drain the fat from the pan, add the shallot and cook gently over a moderate heat. When it is soft, add the stock and boil until syrupy. Remove the garlic and thyme, then whisk in the cold butter to finish the sauce. Carve the lamb and serve with ratatouille and roast potatoes.

Poached White Peaches Scented With Strawberries with Rose Petals

and Wild Strawberries

SERVES 6

Blanch the peaches in boiling water for 15 seconds. Plunge them into iced water, drain and peel. Mix the sugar and lemon juice in a large pan with 600ml of water and bring to the boil.

Add the peeled peaches, cover and simmer for 10-15 minutes until tender, turning the peaches around occasionally. Add the rose flavouring and leave to cool.

Take 100ml of the syrup and bring back to the boil. Add the gelatine that has been softened in cold water and squeezed dry.

Whisk until the gelatine has completely melted, then add further 400ml of the syrup. Cool again.

Cut the peaches into 8 slices each and arrange in bowls, plates or glasses. Cover with the cold, but not yet syrup, and decorate with rose petals, wild strawberries and a dusting of icing sugar.
