PICNIC PIES ……………………………..……………………………..…..…………………………….……………………………..………………. Heat up the milk and let the butter melt in it, let the mixture cool down a bit and mix in the egg yolk. In a mixing bowl shift together the flour and the salt and pour the milk/ butter mixture over it until it forms a ball and roll it out. Cut out 6 bigger circles and line 6 muffin tray holes and cut out a further 6 smaller circles to use as lids. You can fill these little pies with anything. The latest batch I made was filled with cooked lentils (roughly six tablespoon fulls), about 100 g of chopped cooked sweet potato, parmesan cheese, a chopped tomato, some chopped sage and 2 eggs (the eggs keeps the mixture nicely together). They were delicious. Once you have filled your pies, fit the lid on the top and press the edges together and bake in a pre-heated oven for 30 mins at 180°C. ……………………………..……………………………..…..…………………………….……………………………..………………. For the dough: 75 ml of milk 75 g of butter 1 egg yolk 220 g of flour pinch of salt
