This month on the sporting front, there is a feast of superb events, we have the completion of Euro 16 with the final on July 10th, cycling July 2nd – 24th Tour De France, July 14-17th The Open Golf Championship at Troon, Wimbledon Tennis completion on July 10th, British Grand Prix at Silverstone on July 10th, Boxing World Heavyweight Title between Tyson Fury and Wladimir Klitschko on July 9th

Recipe Chicken Chorizo & Haloumi Kebabs

Kebabs ready for the BBQ and would go great with last month’s tomato & lime salsa recipe! You can swap and change the chicken, chorizo, vegetables or the cheese to make vegetarian ones with mushrooms, mini corn on the cob, courgettes, fennel or other favourite veggies.

Method:If you have wooden skewers, soak them in water for 10 minutes to prevent them burning while cooking. Wrap a slice of chorizo round 10 pieces of chicken and in turn, skewer the chorizo chicken, plain chicken, pepper, onion and haloumi onto each of the skewers, finishing it off with a whole chilli. Leave a space at the bottom of the skewer, so they can be turned over while cooking. Place on a plate and drizzle with the oil and season with salt & pepper.

Cook the kebabs on a hot BBQ (they can also be cooked under the grill) turning them over until the chicken is cooked through and the vegetables & haloumi cheese are nicely browned. Enjoy with rice, salad, in a wrap or pitta bread with some tomato & lime salsa!

Ingredients:2 large chicken breasts, cut into bite size chunks

1 large pepper, de-seeded and cut into bite size chunks

1 large onion, peeled and cut into 8250g haloumi cheese, cut into bite size chunks

4 – 6 whole chilliesApprox. 10 slices of ready sliced chorizo

Drizzle of oilSalt & pepper

4 – 6 kebab skewers (depending on how much you put on each kebab)
