It is difficult to describe in a few pages the characteristics of a territory
as many-sided as Prato’s, where innovation and tradition blend perfect-
ly in a constant search for new ideas and trends. This guidebook shows
that the territory offers a highly-valuable artistic and environmental
heritage while being one of Europe’s most important textile districts.
The two faces of a fast-changing reality that has been discovering a new
potential in the past few years, thanks to its entrepreneurial dynamism
that attracts foreign investments too. Now we are facing the “green”
challenge, in order to strengthen the eco-sustainable aspect of our in-
dustry and provide our companies with new stimuli. Prato has been
operating in the textile business for centuries and it is amazing the way
its rich heritage of knowledge and expertise has adjusted to the needs
of a fast-evolving market. Since the Middle Ages, the textile industry
has been synonymous with wealth in Prato, as the city’s artistic heritage
clearly shows. Then it became its passport to the world and the Pratese
district still is a center of fashion and creativity for the greatest names
of fashion design. A leadership that our territory intends to preserve,
as the fruit of that “Tuscan life” which has made our region one of the
best known in the world.

E’ difficile descrivere in poche pagine le caratteristiche di un ter-
ritorio così poliedrico come quello di Prato, dove tradizione e
innovazione si mescolano continuamente alla ricerca di nuove
tendenze. Sfogliare le pagine di questa guida evidenzia come il territorio pos-
sa offrire un patrimonio artistico e ambientale di grande valore che convive
con uno dei distretti più importanti d’Europa. Sono due volti di una realtà in
evoluzione, che negli ultimi anni sta riscoprendo nuove potenzialità, grazie al
dinamismo imprenditoriale che attrae anche investimenti dall’esterno.
Adesso stiamo affrontando la sfida “verde”, per potenziare il lato ecologicamen-
te sostenibile della nostra industria e fornire nuovi sitimoli alle nostre aziende.
Prato opera nel tessile da secoli ed è sorprendente come questo patrimonio
di conoscenza abbia saputo nel corso del tempo rinnovarsi continuamente
per adeguarsi alle esigenze di un mercato in continua evoluzione. Fin dal
medioevo il tessile per la città è stato sinonimo di ricchezza, come testimonia
anche il patrimonio artistico della città. Poi è diventato un lasciapassare per
il mondo e ancora oggi il distretto pratese è un bacino di moda e creatività
per i marchi della moda più noti. Un primato che il territorio ha intenzione
di mantenere, frutto di quel “tuscany life” che ha reso la nostra regione una
delle più note del mondo.

Situated in the heart of Tuscany,
Prato is the ideal starting point for
the region’s other famous cities of
art. On the doorstep of Florence,
just 10 km from “Vespucci” air-
port, and halfway between Rome
and Milan, Prato boasts a strategic
position for business trips as well as
holidays.
The capital city of a province
composed of seven municipalities,
Prato is known for its wool textile
manufacture, existing since medie-
val times and playing an important
role in the economic and social
growth of the entire district and
which now, with its modern facto-
ries, has been moved to the indu-
strial areas.
The present, therefore, has its
roots in a past steeped in industry

cina a Firenze, a soli 10 Km dall’aeroporto
“Vespucci”, a metà strada tra Roma e Mila-
no, Prato si trova in una posizione strategica
per viaggi sia d’affari che di piacere.
Capoluogo di una provincia composta da
sette Comuni, Prato è conosciuta per la la-
vorazione tessile laniera che ha avuto, fin
dal Medioevo, un ruolo importante per lo
sviluppo economico e sociale dell’intero di-
stretto e che ora, con le sue moderne fabbri-
che, è stata trasferita nelle zone industriali.
Il presente trova quindi fondamento in un
passato di grande laboriosità e creatività,
doti che hanno fatto dei pratesi un esempio
per l’industria manifatturiera di tutta Eu-
ropa. Eppure fino alla scoperta, nel 1997,
di uno dei più grandi insediamenti etruschi
Il Castello dell’Imperatore, situato nel cuore del centro
storico, è senza dubbio uno dei simboli dell’importanza
storica della città. Voluto dall’imperatore Federico II di
Svevia, il castello fu realizzato per porre sotto control-
lo militare le principali vie di comunicazioni che dal
sud del paese portavano in Germania, in particolare la
strada che dal passo di Montepiano portava attraverso
la valle de Bisenzio al cuore della Toscana.
The Castello dell’Imperatore, or Emperor’s Castle,
situated in the heart of the old city, is undoubtedly
one of the most important historical symbols of the
city. Erected on the order of Emperor Frederick II of
Swabia, the castle was built to put the main routes
linking the south of the country with Germany under
military control, in particular the road leading from
Montepiano pass through the Bisenzio valley to the
heart of Tuscany.

right throughout the whole of Eu-
rope.
Yet until the discovery of one of
Tuscany’s largest Etruscan settle-
ments in the area of Gonfienti in
1997, it was thought that the hi-
story of the city was relatively re-
cent, beginning in the Middle Ages
- around the X century - with the

La lavorazione della lana fece di Prato un
centro noto e la città, nel corso dei secoli è
stata contesa e esposta alle mire espansioni-
stiche della vicina Firenze.
L’avvento dell’era industriale fece di Prato,
la “Manchester della Toscana”, una delle
città più attive e pronte a dare lavoro an-
che agli immigrati e agli abitanti dei comuni

The two nuclei merged the fol-
lowing century and thus began the
growth of Prato, which in the XIII
century reached 15 thousand inha-
bitants thanks to the birth of ma-
nufacturing activities that required
both labour as well as the construc-

Prato into the “Manchester of Tu-
scany”, one of the most active cities
and a major source of employment
also for immigrants and people from
the surrounding towns, with a high
level of textile specialisation and a
marked orientation towards exports.

che, dal 1951 in poi, non si è mai arrestato,
portando gli abitanti dai 78mila della metà
del secolo scorso agli attuali 185mila.
Nel 1992, dopo una lunga attesa, Prato è
diventata Provincia, ottenendo l’autonomia
amministrativa da Firenze. L’area compre-
sa tra Firenze, Prato e Pistoia rappresenta
comunque una delle aree metropolitane più
grandi d’Italia.

ch, from 1951 on, has never stopped,
rising from the 78,000 inhabitants of
the mid twentieth century to its pre-
sent day figure of 185,000.
In 1992, after a long wait, Prato
became a province in its own right,
obtaining administrative indepen-
dence from Florence. The area co-

stands as one of the largest urban

Over the centuries, many famous artists
have left their mark on the area, mean-
ing Prato can also claim to be a prestig-
ious city of art which offers numerous
artistic itineraries both within and out-
side its city walls.
Inside the old city centre, well-known
and increasingly popular among tourists
is the Castello dell’Imperatore, or Em-
peror’s Castle, the Duomo, the Palazzo
Pretorio, the Basilica di Santa Maria
delle Carceri and the churches of San
Francesco and San Domenico - all build-
ings that house works by great masters
such as Agnolo Gaddi, Paolo Uccello,
Filippo and Filippino Lippi, Donatello
and other famous artists of the four-
teenth century and the renaissance.
Also of note are the churches of
Sant’Agostino and San Fabiano, the
monastery of San Vincenzo, as well as

Nel centro storico sono conosciuti e
sempre più visitati il Castello dell’Impe-
ratore, il Duomo, il Palazzo Pretorio, la
Basilica di Santa Maria delle Carceri,
le chiese di San Francesco e di San Do-
menico, tutti edifici che custodiscono
opere di grandi maestri, come Agnolo
Gaddi, Paolo Uccello, Filippo e Filippi-
no Lippi, Donatello ed altri famosi arti-
sti del Trecento e del Rinascimento.
Interessanti anche le chiese di Sant’Ago-
stino e di San Fabiano, il monastero di
San Vincenzo, il monastero, l’oratorio e
la chiesa di San Niccolò.
Trascorse a Prato i suoi anni artisticamente più fertili il pit-
tore Filippo Lippi, uno dei pittori più interessanti del Rina-
scimento, che fu chiamato in città per affrescare la cappella
del Duomo. Personaggio eccentrico, nel 1456 fu nominato
cappellano del convento pratese di Santa Margherita, dove
conobbe e si innamorò della monaca Lucrezia Buti, modella
di molti suoi dipinti. La storia d’amore spinse la Buti a la-
sciare il convento e a stabilirsi nella casa pratese dell’artista;
solamente nel 1461 il papa Pio II, grazie all’intercessione
di Cosimo de’ Medici, sciolse dai voti il Lippi e la Buti,
regolarizzando la loro posizione.
Prato was where Filippo Lippi, one of the leading painters
of the Renaissance, spent his most productive years, having
been called to the city to decorate the main chapel of the
Duomo. An eccentric character, he was appointed in 1456
as chaplain of the convent of Santa Margherita in Prato,
where he met and fell in love with the nun Lucrezia Buti,
who modelled for many of his paintings. Their love affair
prompted Buti to leave the convent and take up residence in
the artist’s Prato home. It wasn’t until 1461 that Pope Pius
II, thanks to the intercession of Cosimo de’ Medici, released
Lippi and Buti from their vows, legitimising their position.

the monastery, oratory and church of
San Niccolò.
The “Luigi Pecci” Centre for Contem-
porary Art organises exhibitions and
events by some of the most renowned
figures in modern avant-garde. Built
by the architect Italo Gamberini and
opened in 1988 with the panoramic ex-
hibition “Europa oggi” (Europe Today),
it is one of Europe’s leading centres of
contemporary art and is soon to be ex-
tended to accommodate its permanent
collection.
Also present is the Textile Museum,
which tells the city’s textile history and
offers visitors an interesting overview of
the art of weaving over the centuries,
with special attention paid to modern
uses. Theatre features highly in cultural
life in Prato: an art form which has put
the city into the national headlines since
the Sixties, thanks to the presence of the
Metastasio theatre. Here, artists of the
calibre of Oscar-winning Roberto Be-
nigni, undoubtedly one of Prato’s most
illustrious citizens, studied and took the
first steps in their career.
Il Centro per l’Arte Contemporanea
“Luigi Pecci” organizza mostre e ma-
nifestazioni dei più noti esponenti delle
moderne avanguardie. Costruito dal-
l’architetto Italo Gamberini e inaugura-
to nel 1988 con la mostra panoramica
“Europa oggi” è uno dei principali cen-
tri europei per l’arte contemporanea e
nel prossimo futuro sarà ampliato per
consentire l’allestimento della mostra
permanente.
E’ inoltre presente il Museo del Tessuto,
che racconta la storia tessile della città,
illustrando ai visitatori un’interessan-
te panoramica dell’arte della tessitura
attraverso i secoli con uno sguardo di
particolare attenzione agli utilizzi con-
temporanei.
Nella vita culturale pratese, un’impor-
tanza particolare viene rivestita dall’at-
tività teatrale, che fin dagli anni sessan-
ta, grazie alla presenza del Metastasio,
ha fatto salire la città agli onori delle
cronache nazionali. Qui hanno studia-
to e mosso i primi passi artisti del livello
del premio Oscar Roberto Benigni, cer-
tamente uno dei cittadini più illustri.
I dintorni della città rappresentano la conferma dell’importanza strategica che la Prato ha rivestito nello svilup-
po della Toscana. Le colline del Montalbano, tra Poggio a Caiano e Carmignano, ospitano una delle più belle
Ville Medicee della regione e l’incantevole borgo di Artimino. E’ immersa nel verde anche la Val di Bisenzio,
ricca di vegetazione e con un aspetto quasi montano nella parte alta del territorio. Qui sono ancora visibili i
segni del passaggio di Matilde di Canossa o dei Conti Alberti, oltre alla presenza di una tradizione montana
che ancora connota profondamente la zona.
The surroundings of the city stand as a testament to Prato’s strategic importance of in the development of
Tuscany. The hills of Montalbano, between Poggio a Caiano and Carmignano, are home to one of the most
beautiful Medici villas in the region and the enchanting village of Artimino. Also immersed in greenery is the Val
di Bisenzio, rich in lush vegetation and an almost mountainous landscape in the higher part of the area. Here,
the marks left by the passage of Matilde di Canossa (Countess Matilda of Tuscany) or the Counts of Alberti
are still visible to this day, not to mention the mountain traditions which still deeply characterise the area.

There are over 28,000 businesses oper-
ating in the Prato district, mainly in tex-
tiles and ancillary processes, but also in
other sectors like craftsmanship, farm-
ing and retail.
Prato’s production fabric is made up
of a variegated universe of small and
medium-sized enterprises located in a
territory with a great entrepreneurial
vocation, that shows its initiative, both
individual and collective in numerous
emerging sectors of the economy. Man-
ufacturing is obviously the predominant
sector, with over 8,500 companies.
Together with a typically Prato-style
entrepreneurship, over recent years we
have also seen the increasingly greater
presence of immigrants, in particular
from Eastern Europe, China and North
Africa, who have decided to set up busi-
ness in the city. Today ten percent of

Insieme all’intraprendenza tipicamente
pratese, negli ultimi anni si è assistito alla
presenza sempre più massiccia di immi-
grati, in particolare dall’Europa dell’est,
dalla Cina e dal Nord Africa, che hanno

Prato is home to the Central Tuscan Interporto or
freight terminal, one of the most important logi-
stics hubs in central Italy. With its 55 operators,
700,000 m2 with 60,000 m2 of warehouses,
6,000 m2 of management offices and an 8-rail
650 metre intermodal terminal it is a strategic in-
frastructure at the centre of an important phase of
development. Thanks to the freight terminal, the
area’s businesses with their strong export vocation,
can reach all the international markets.

scelto di avviare un’attività in città. Oggi
il dieci per cento delle imprese pratesi ha
infatti come titolare un cittadino stranie-
ro: i settori preponderanti sono quelli del-
le confezioni (gestite quasi esclusivamente
da cinesi), le costruzioni, le attività com-
merciali e di ristorazione.
Quello di Prato è comunque un quadro
economico in continua evoluzione: la città
sta cercando di salvare la tradizione tessile
ma al tempo stesso anche di reinventarsi
in nuovi settori e nuovi lavori.
Un impulso al cambiamento è arrivato
dallo sviluppo del turismo: la riscoperta
di Prato come luogo di arte e cultura e
la vicinanza con Firenze, spesso satura di
turisti, ha fatto aumentare il numero delle
strutture ricettive e ha dato una scossa po-
sitiva all’economia di tutto il territorio.
L’input infatti è arrivato anche al di fuori
delle mura cittadine: in Val di Bisenzio e
sulle colline medicee agriturismi e picco-
li alberghi sono aumentati in numero e
qualità. E per favorire ulteriormente la
crescita di questo settore Prato sta pro-
grammando la promozione con un appo-
sito consorzio.

Il distretto pratese è uno dei distretti industriali più grandi d’Europa e rappresenta un modello produttivo che è stato al centro di numerosi studi e ricerche. Si estende su una superficie di circa 700 chilometri quadrati, attraversando 13 Comuni. Complessivamente vi operano 8 mila imprese con oltre 35 mila addetti. Il sistema industriale pratese si basa sulla suddivisione della produzione tra numerose piccole e medie imprese tra loro indipendenti, ognuna specializzata in una specifica attività (fi-latura, ritorcinatura, orditura, tessitura, tintoria e rifinizione o finissaggio). Oltre a questo i lanifici pratesi riescono ad allineare le loro strategie verso obiettivi comuni costituiti da standard qua-litativi elevati, tempi di consegna veloci e prezzi competitivi
The Prato district is one of the biggest industrial districts in Eu-rope and it represents a production model that has been the sub-ject of numerous studies and research projects. It covers around 700 square kilometres, taking in 13 municipalities. It includes a total of 8,000 businesses employing more than 35,000 peo-ple. The Prato industrial system is based on division of pro-duction among numerous small and medium-sized independent companies, each one specialising in a specific activity (spinning, twisting, warping, weaving, dyeing and trimming or finishing). In addition to this, the Prato wool mills manage to streamline their strategies with shared objectives that include high quality standards, fast delivery times and competitive prices.

Prato companies are in fact owned by
foreigners: the main sectors are clothing
(run almost exclusively by the Chinese),
building, retail, restaurants and bars.
Prato however has a continually
evolving economic picture: the city is
trying to save its textile tradition but
at the same time also attempting to
reinvent itself in new sectors and new
jobs. A wind of change has also been
brought by the development of tour-
ism. Rediscovery of Prato as a place
of art and culture, and its vicinity to
Florence, often saturated with tour-
ists, has increased the number of ho-
tels in the city and is also a positive
driver for the economy throughout
the area.
Input has in fact arrived also outside
the city walls: in Val di Bisenzio and
on the Medici hills, holiday farmhous-
es and small hotels have increased in
both number and quality. And to fur-

Il 1° Macrolotto industriale di Prato è la più grande lottizzazione industriale,
totalmente privata, realizzata in Italia. Si sviluppa su un comprensorio di cir-
ca 1.500.000 metri quadri nel quale operano circa 380 aziende. GIDA spa,
la società per la depurazione delle acque di scarico, gestisce anche il recupero
e riutilizzo delle acque reflue. Dopo il processo di depurazione ed un apposito
post trattamento, infatti, le acque di scarico vengono distribuite alle imprese
idroesigenti del territorio attraverso l’acquedotto industriale, che costituisce una
rete lunga circa 60 chilometri. Alla produzione di acqua per il riutilizzo con-
corre anche un autonomo impianto interno al Macrolotto 1.
L’acquedotto industriale pratese è una struttura che, in dimensioni così estese,
non ha uguali in Italia e pochi nel mondo e rappresenta una modalità moderna
ed evoluta per preservare le risorse idriche naturali.

The 1st industrial Macrolotto in Prato is the largest totally private industrial
estate in Italy.
It covers an area of around 1,500,000 square metres and houses about 380
companies. GIDA SpA, the company in charge of purifying waste water, also
manages recovery and re-use of waster water. After the purifying process and
special post-treatment, in fact, this waste water is distributed to companies
on the estate that use water for their processes via the industrial aqueduct that
has a network of around 60 km. There is also an independent system inside
Macrolotto 1 that contributes to the production of water for re-use. The Prato
industrial aqueduct is a structure that has no equal in Italy and few in the
world for its huge size. It is a modern evolved method of saving natural water
resources.

companies and the in-depth specialist
knowledge of operators, whose com-
bination of experience, style and cre-

ents products that are always new and

In this context there are many cloth-
ing brands, some more famous than
others, that have started to work in the
district, thanks also to the initiative of
many young entrepreneurs who have
managed to rework decades of ex-
perience in the district of textile pro-
duction, identifying new trends and
conquering market quotas. Today,

Una curiosità: anche ad Hollywood si sono accorti della
ricchezza delle proposte del distretto, sancito dalla nascita
di un connubio sempre più stretto con l’industria cinema-
tografica. Alcuni dei costumisti più noti sono infatti clienti
abituali di Prato e qui hanno trovato materiale interessante
per le proprie creazioni: sono stati fatti con tessuti pratesi gli
abiti di “Il gladiatore” con Russel Crowe, il vestito di Mel
Gibson in “Braveheart”, così come gli abiti di “Gangs of
New York”, diretto da Martin Scorsese con Leonardo Di
Caprio e Daniel Day Lewis.

Il riciclo dei tessuti è al centro della “rivoluzione verde”
del distretto di Prato: grazie alla cardatura, una speci-
fica tecnica di lavorazione della fibra che a Prato viene
utilizzata da decenni, è infatti possibile creare nuovi
tessuti utilizzando quelli usati. I filati sono prodotti con
l’impiego di fibre vergini o mediante il riutilizzo delle fi-
bre ottenute dal riciclo di tessuti e dai ritagli di maglieria
sia nuovi che usati.
La lana rigenerata ha rappresentato per oltre un secolo
una fenomenale opportunità di sviluppo e di afferma-
zione del distretto tessile pratese sui mercati del mondo.
Le tecniche del “riciclo” oltre ad affascinare nella loro
esecuzione raccolgono e sintetizzano una cultura di at-
tenzione e di sensibilità verso l’ambiente, la tradizione
dell’uomo, le sue professionalità. Per valorizzare questo
tipo di lavorazioni, la Camera di Commercio ha creato il
marchio “Cardato regenerated Co2 neutral”, che garan-
tisce l’azzeramento della Co2 prodotta nel processo di
lavorazione della rigenerazione, dando vita ad un tessuto
dall’impronta ambientale ridotta.
Recycling textiles is at the centre of the “green revolu-
tion” in the Prato district: thanks to carding, a specific
production technique for fibres that has been used in Pra-
to for decades, new textiles can be created from used ones.
The yarns are produced from virgin fibres or through
re-use of fibres obtained from recycled textiles or waste
from both new and old knits.
For over a century, regenerated wool has been a phe-
nomenal opportunity of development, allowing the Prato
textile district to establish itself on world markets. “Re-
cycling” techniques, in addition to the appeal offered by
their processes, gather and represent a culture of attention
and sensibility for the environment, man’s tradition and
his professionalism. To valorise this kind of process, the
Chamber of Commerce has created the “Cardato regen-
erated Co2 neutral” brand, which guarantees zero-levels
of Co2 produced during the regeneration process, thus
creating a textile with a low environmental impact.

tessuti di carta, tessuti medicali, a lento
rilascio di farmaci; ci sono tessuti tecnici
che vengono usati in aeronautica, tessuti
che si illuminano. E questi sono solo al-
cuni esempi della creatività del distretto.
Ogni fase della lavorazione tessile può
essere trovata all’interno del distretto,
ma a questo viene accompagnata una
forte dose di creatività da parte degli
operatori: l’industria di Prato sviluppa
ogni sei mesi 2.000 nuovi filati, 60.000
nuovi disegni tessili e centinaia di nuo-
ve collezioni di tessuti. Ogni anno l’in-
dustria tessile di Prato produce circa
90.000 tonnellate di filati, 300 milioni
di metri di tessuti, 110 milioni di me-
tri di tessuti tecnici, 12 milioni di capi
di abbigliamento. Il valore generale di
produzione Prato è di circa 5.630 mi-
lioni di euro. La maggior parte della
produzione viene esportata in Europa,
negli Stati Uniti e in Giappone, e vie-
ne utilizzata da molte delle griffes più
note che utilizzano i tessuti pratesi per
impreziosire le proprie collezioni.

develops 2,000 new yarns, 60,000 new
textile designs and hundreds of new
textile collections. Every year Prato’s

Prato means textiles, history, art and cul-
ture, but also gourmet food, fine dining, in-
tense yet delicate flavours, excellent wines
and much, much more.
Wine production has grown immensely
over the years, with Carmignano obviously
taking centre stage. A deep, vibrant ruby
colour, which verges on burgundy with
ageing; an intense bouquet with notes of
Parma violet and a pronounced elegant
character with age; a dry palate, full-fla-
voured, rounded, balanced, soft and vel-
vety: these are the distinguishing features
of Carmignano DOCG wines.
And then there is the ageing process, car-
ried out in oak and/or chestnut barrels for
at least eight months for the Carmignano
and at least twelve for the Carmignano re-
serve. Characteristics that make it a verita-
ble gem of the Tuscan wine scene, some-

Known as the “Biscuit route”, it winds down from the first spurs
of the Val di Bisenzio Apennines, along the plains and the towns
of Prato and Montemurlo as far as the rolling hills of Mon-
talbano, passing though old bakeries, confectioner’s and artisan
laboratories that bake the traditional biscuits of Prato, known
as Cantucci or Cantuccini and made not only with almonds but
also with chocolate, pistachios, citrus zest and hazelnuts. The
dark brown Brutti Boni have the aroma and flavour of almonds;
Zuccherini, dipped in melted sugar after baking, were the biscuits
traditionally served at weddings; Amaretti are chewy, almond-
flavoured biscuits only slightly larger than a walnut, and finally
the latest additions... sassi della Calvana made with chestnut
flour and Carmignanini made with dried figs.

Il Carmignano è uno dei vini più antichi d’Italia; in-
fatti la prima documentazione scritta in cui appare il
nome di un vino Carmignano risale alla fine del XIV
secolo; si tratta di un documento in cui un notaio di
Carmignano (PO), Ser Lapo Mazzei, comunica ad
un mercante di Prato, Marco Datini, di aver ordinato
per la sua cantina quindici some di vino Charmi-

Il Carmignano può essere considerato il progenitore dei
cosiddetti vini Supertuscan (grandi vini toscani otte-
nuti aggiungendo al Sangiovese vitigni internazionali
quali il Cabernet-Sauvignon o il Merlot); di fatto già
dal 1600 per la sua produzione si usava aggiungere
al Sangiovese il Sauvignon, vitigno importato dalla
Francia dai Medici (ed ancor oggi chiamato nella
zona uva Francesca, cioè proveniente dalla Francia).
La zona di produzione del Carmignano è stata de-
finita fin dal 1716 dal Granduca Cosimo III de’
Medici, che emanò il Bando Sopra la Dichiarazione
dé Confini delle quattro Regioni Chianti, Pomino,
Carmignano, e Val d’Arno di Sopra, nel quale ve-
nivano specificati i confini delle zone entro le quali
potevano essere prodotti i vini citati.
Attualmente sono quattro i vini DOCG (denomina-
zione ed origine controllata e garantita) della provin-
cia di Prato: il Carmignano, il Carmignano riserva,
il Carmignano rosso e il Chianti Montalbano, alla
quale si aggiungono altri vini particolari che vengono
esportati in tutto il mondo.
Carmignano is one of the oldest wines in Italy; in
fact, the first written record in which the name of
Carmignano wine appears dates back to the end of
the XIV century. It is a document in which Ser Lapo
Mazzei, a notary public from Carmignano (PO),
notifies Marco Datini, a merchant from Prato, that
he has ordered fifteen loads of Charmignano wine for
his cellar, paying four times the price of other wines

Carmignano can be considered the ancestor of the
so-called Super-Tuscan wines (great Tuscan wines
made by blending Sangiovese with international grape
varieties such as Cabernet-Sauvignon or Merlot). In
fact, by 1600 it was being produced by adding Sau-
vignon, a vine variety imported from France by the
Medici (and still called “uva Francesca” or “French
grapes” in the area today), to Sangiovese.
The Carmignano wine production area was defined
back in 1716 by Grand Duke Cosimo III de’ Medi-
ci, who issued the Bando Sopra la Dichiarazione dé
Confini delle quattro Regioni Chianti, Pomino, Car-
mignano, e Val d’Arno di Sopra, which set out the
confines of the area where the aforementioned wines
could be produced. There are currently four DOCG
(controlled and warranted designations of origin)
wines produced in the province of Prato: Carmigna-
no, Carmignano reserve, Carmignano red and Chian-
ti Montalbano, joined by other special wines which
are exported all over the world.

secolo. L’impasto, a base di farina di
grano tenero, acqua e lievito naturale,
dopo un periodo di riposo, viene nuo-
vamente lavorato e successivamente ta-
gliato a mano.
Poi c’è l’olio, con una produzione che
sta velocemente raggiungendo risulta-
ti importanti, sia in termini qualitativi
che quantitativi. La produzione di olio
extravergine di oliva sul territorio pro-
vinciale pratese è una realtà sempre più
interessante, che negli ultimi anni è stata
al centro di un vero e proprio boom, con
il recupero di oliveti posti lungo tutto il
territorio. Per completare il “menù alla
pratese” ci sono la Mortadella di Pra-
to, alla quale è stata recentemente rico-
nosciuta la DOP, e poi i Fichi secchi di
Carmignano, uno dei presidi Slow Food.
E poi ricette “speciali” come i sedani alla
pratese o le dolci pesche di Prato, piatti
poveri, ma ricchi di gusto, frutto della
creatività gastronomica di un territorio
che con ingrediente semplici ha saputo
inventare grandi sapori.

Then there is oil, an area that is fast achiev-
ing important results both in terms of
quality as well as quantity. The production
of extra virgin olive oil in the province of
Prato is an increasingly important phenom-
enon and one which has been at the centre
of a veritable boom over recent years with
the recovery of olive groves right through-
out the province.
The menù alla pratese is completed by
Mortadella di Prato, which has recently
obtained DOP status, and the dry figs of
Carmignano, one of the Slow Food pre-
sidia. Then there are the “special” recipes
such as sedani alla pratese (stuffed celery)
or pesche di Prato (a local dessert shaped
like a peach and soaked in liqueur), all hon-
est yet tasty dishes, fruit of the gastronomic
creativity of an area which has succeeded
in inventing great flavours with simple in-
gredients.

simo III Medici che nel 1716 riconosce-
va a questo vino la prima Doc italiana.
Per quanto riguarda gli altri prodotti
tipici Prato offre una cucina dagli in-
gredienti poveri, ma ricchi di sapore,
seguendo le orme della cucina tradizio-
nale toscana.
Sono numerosi i prodotti tipici della cu-
cina pratese che negli ultimi anni sono
stati al centro di un attento lavoro di
riscoperta e valorizzazione. Tra le nu-
merose prelibatezze i più famosi sono
sicuramente i biscotti di Prato, chiamati
impropriamente “cantuccini”, che da
oltre tre secoli vengono prodotti in città.
Farina, zucchero, mandorle non sbuc-
ciate, lievito e uova sono i soli ingredien-
ti usati per ottenere questi biscotti che
tradizionalmente vengono serviti insie-
me al Vin Santo.
Onorata da Dante Alighieri, che in esilio
diceva: “Come sa di sale lo pane altrui”,
la bozza pratese, un pane rettangolare,

As for other typical products, Prato offers
a range of simple yet flavoursome ingre-
dients, in keeping with traditional Tuscan
cuisine.
Over recent years, numerous typical lo-
cal products have been at the centre of a
careful process of rediscovery and valori-
sation. The most famous of Prato’s many
delicacies are undoubtedly the biscotti di
Prato, erroneously called cantuccini, which
have been made in the city for over three
centuries. Flour, sugar, unpeeled almonds,
yeast and eggs are the sole ingredients used
to make these biscuits traditionally served
with Vin Santo.
Honoured by Dante Alighieri, who in ex-
ile said: “Come sa di sale lo pane altrui”
(how salty is the bread of others), the bozza
pratese - a rectangular loaf of bread with
a dark brown crust and a covering of white
flour, was already well known back in the
