Background information

Holy Week (Latin: Hebdomada Sancta or Maior Hebdomada, "Greater Week") in Christianity is the last week before Easter. It includes the religious holidays of Palm Sunday, Maundy Thursdah (Holy Thursday) and Good Friday, and lasts from Palm Sunday (or in the Eastern, Lazarus Saturday) until but not including Easter Sunday, as Easter Sunday is the first day of the new season of The Great Fifty Days. It commemorates the last week of the earthly life of Jesus Christ culminating in his crucifixion on Good Friday and his resurrection on Easter Sunday.

maguey: Agave americanaThe maguey plant is not a cactus but an Agave, believed to be the species salmiana, subspecies salmiana. The plant was one of the most sacred plants in Mexico and had a prominent place in religious rituals and Mesoamerican industry.Pulque, or octli, is an alcoholic beverage made from the fermented juice of the maguey, and is a traditional native beverage of Mesoamerican. Though it is commonly believed to be a beer, the main carbohydrate is a complex form of fructose rather than starch.
