quality characteristics of doc prosecco
The DOC declaration for Prosecco means certain quality characteristics have been fulfilled. These were defined by the Italian Prosecco Consortium in 2009. Today, only those sparkling wines actually grown, pressed and bottled in Veneto may be designated Prosecco.
in addition to defining the geographic region, the
quality control also stipulated the type of grape to be
used. only the glera grape may be used for prosecco,
a varietal long established in italy. another important
quality characteristic of a prosecco is the bottle it is
sold in. only glass bottles may be used for the bottling
and sale of prosecco.
the difference between secco and prosecco
the doc seal of quality ensures there is a signifiicant
distinction between secco and prosecco. this covers the
area of cultivation, the type of grape and the bottle. secco
does not have to be made exclusively from glera grapes, it
does not have to be made in italy and can be sold in cans.

The decisive factor for the ‚Perlage‘, the fine bubbles that form in the glass, is the serving temperature: carbon dioxide escapes quicker at higher tempe-ratures. The warmer the serving temperature, the greater the effervescence of the Prosecco. That is why it is so important to keep the opened bottle chilled properly – it helps keep the Prosecco sparkling longer. The optimum serving temperature for Prosecco is between 8-10°C.
