St. Augustine is celebrating the 500th Anniversary of Ponce de Leon’s famous discovery of this beautiful shore as he sailed toward the Keys in April 1513. Within a few years, in 1565, the � rst settlement was founded by Pedro Menendez de Aviles.

At the Fountain of Youth Archeological Park, you’ll see how native people lived successfully here for over 4,000 years before the Spanish explorers arrived. At the exhibit of Native Village structures built with traditional methods, you’ll see demonstrations of their skills with food, cra� s and weapons for hunting.

� e heart of the city is the Plaza de la Constitucion, a shady square where people have met for more than 400 years. � e Government House, which is easily recognized by its balcony overlooking Cordova Street, is a good place to begin exploring.

You can walk in any direction from here, but for an overview of the Old City, climb aboard the trolley for a narrated tour. As you roll along there’s plenty of opportunity to hear about the colonial buildings, intriguing streetscapes and grand hotels. Many buildings are now museums. Large and small, they are full of intriguing antiques, artifacts and interactive fun.

It’s easy to spot the Spanish style buildings that hold the life’s work of wealthy collectors at Villa Zorayda, the Lightner Museum and the Pirate & Treasure Museum. Pick your pleasure; each one is a fantastic journey to the past.

� is is a year-round paradise for outdoor enthusiasts who like to paddle pristine creeks, � sh in either fresh or salt water or sail with the breeze. Climb 219 steps to the top of the St. Augustine Lighthouse to see a panorama of the nation’s oldest seaport, the Matanzas River and miles of Atlantic beaches.

Visitors to the World Golf Hall of Fame, known for courses designed by Sam

Snead and Jack Nicklaus, will see a "History in the Making” exhibit that features memorabilia fresh from the fairways of professional golf events.

At the Pirate and Treasure Museum, Sir Frances Drake’s expeditions are � nding life in an exhibit that includes a rare burnt wooden remnant from a 16th century ship attributed to him. Drake raided and burnt St. Augustine to the ground in 1586.

Romantics will want to end the day with a slow-paced carriage ride along the oldest byways, and if ghosts don’t scare you, take a tour to learn about restless spirits that still roam the city…sweet dreams!

HISTORY SEEKERSWashington Oaks Gardens State Park is known for formal gardens of azaleas, roses and camellias blooming among old oaks. The estate, once owned by a relative of George Washington, is nestled between the Matanzas River and a beach with coquina rock formations. 2 miles south of Marineland on A1A. 386-446-6780.

Princess Place Preserve is known for 1,500 acres of hiking, horseback riding and wildlife viewing. A lodge built by Henry Cutting in 1886 still stands. When it’s time to decide where to eat, foodies know St. Augustine’s chefs are renowned for innovative menus and creative dishes. Actually, a Florida seafood appetizer—shrimp, clams or oysters—is a good start to any meal. But if your taste runs to Cajun, Asian, Italian or slow smoked Southern barbeque, we have that too.

It’s easy to add a measure of romance to any evening by dining on the veranda of a Victorian home or in an old building

where candlelight shadow-dances on aged bricks. � ere are garden settings, wine cellars, decks overlooking the water and elegant hotel dining rooms furnished with a nod to the gilded era tastes of Henry Flagler.

St. Augustine was the capital of Spanish La Florida for more than 250 years a� er Pedro Menéndez de Avilés founded it in 1565. Spanish traditions still in� uence dining here in contemporary versions of chilled gazpacho soup and paella, a rice dish with vegetables and bits of meat or seafood.

If you crave something different, order a traditional Minorcan dish made with the Datil pepper, which was brought here in the 1600s and only grows in the St. Augustine area.

In the evening try the traditional way to end a meal and enjoy a cup of coffee and � an, a sweet Spanish egg custard. Bon appétit!

6 Red Snapper Fillets (2 Lbs, skin removed)Salt, Freshly Ground Black Pepper3 Tablespoons Olive Oil2 Garlic Cloves, thinly sliced6 Large Shallots Sliced 2 Dried Bay Leaves3 Peppers ~ yellow, red, orange, in thin strips2/3 Cup Sherry Vinegar1 Cup Dry White Wine5 Tablespoons Extra-Virgin Olive Oil1/2 Teaspoon Crushed Black Peppercorns2 Whole Cloves1/2 Cup Fresh Flat-Leaf Parsley

DIRECTIONs

1. Season both sides of fillets with salt and pepper then cut in half lengthwise. Heat 1 T of olive oil in a large nonstick sauté pan over medium-high heat. Lightly sauté on both sides for about a minute making sure not to cook throughout.

2. Add remaining tablespoon olive oil to the pan and cook garlic over medium heat until it just begins to color. Add shallots and bay leaves then cook until shallots are transparent about 4 to 5 minutes. Add peppers and cook 5 minutes or until tender.

3. Add vinegar and wine then bring to a boil over high heat, then reduce heat and simmer for a minute or two. Add the extra-virgin olive oil, peppercorns, cloves, salt and remove from heat.

4. Place one layer of fish in the bottom of a large bowl and spoon some of the marinade, shallots and peppers over it. Repeat until all are used up. Cover tightly and refrigerate overnight.

Then & Now

Marineland, a Florida icon, has been bringing dolphin awareness to the public for 75 years. Originally created as Marine Studios in 1938, it has provided many “firsts” in underwater films and dolphin care. In its early years as Florida’s number one attraction, guests were entertained by educational stadium shows highlighting “educated porpoises.” In 2006 a new and modern facility opened with the focus on intimate and educational dolphin interactions. In 2011 Georgia Aquarium of Atlanta acquired the park, expanded exhibits and unveiled new guest experiences with the much-loved

dolphins.
