Arlingtons

The building which houses Arlingtons

Brasserie has one of the most interesting

and varied histories in Ipswich. It was

originally opened in 1847 as the Ipswich

Museum and HRH Prince Albert was

the patron. Since the Museum moved the

building has been many things, most

famously The Arlingtons Ballroom.

In the last three years this most stylish

venue has been transformed into

one of the town’s busiest and most

popular dining destinations.

Downstairs, the warm and friendly Café

serves delicious home-made cakes and

pastries with teas and fresh ground

coffees. In the evening the café becomes

a popular bar which is a magnet for

the town’s young professionals.

It not only boasts live music but is

also a keen meeting point for many

clubs and groups, including Poetry Anglia.

A planned extension to the café bar,

coming in July, will allow even more scope

for local groups to enjoy the comfortable

surroundings and accommodate the lunch

time rush.

Upstairs is a bustling French Brasserie

providing space enough for parties of over

100 and the gallery for more intimate

dinning a deux. Serving food from breakfast

to lunch through to afternoon tea and then

on to dinner. Every weekend there is live

unobtrusive music ranging from live piano

through to acoustic guitar. With menus

offering a range of classic French dishes

and traditional English fare with novel

surprises such as ‘basket of vegetables’.

Food in seasonCrabThe season for crab is well underway,

and reaches its glut later in the year

around September.

When buying ready-dressed crab, check

that it contains just white crabmeat.

Occasionally, these consist of mainly brown

crabmeat, with a little of the more

expensive white meat cunningly scattered

over the top, making it look like there is

more than there actually is. There’s often

very little or no claw meat, either – this is

mostly sold separately as a premium

product. If you are able to get hold of a

freshly cooked crab take the plunge and

remove the meat from it yourself. It takes

time and practice, but it’s worth the

bother as a 1kg, well-picked cock crab will,

on average, yield 250g white

meat, plus plenty of brown meat. For a

tasty snack try beating it into softened

butter with a little lemon juice, some

salt and cayenne pepper to taste. Chill until

firm, and spread on warm toast.

Oyster mushroomsThese are ear-like

silvery-grey or greyish-brown

mushrooms that grow in clumps or

clusters. Luckily, they are now cultivated so

are more readily available and found in

most supermarkets. Oyster mushrooms

have a subtle flavour and are often used in

Oriental cookery such as stir-fried dishes,

as the cap is thin and cooks quickly. Asian

chefs simply tear the mushroom into

desirable sizes before adding it to their

woks. Despite their great flavour,

they cook down to virtually nothing and are

quite expensive, so are often used in

combination with other mushrooms. For

do-it-yourselfers, oyster mushrooms can

be grown at home on a small scale from

kits sold through seed catalogues and

gardening magazines.

LoganberriesA hybrid between a blackberry and a

raspberry, the loganberry is a large

soft dark-red berry, a little larger than a

raspberry. It has a less subtle flavour than a

raspberry and can be quite tart, so needs

plenty of sugar when cooked in desserts.

Use it as you would any other summer

berry – eat fresh with sugar or cream, or

add to desserts, jams and coulis. In

savoury cooking, loganberries go

particularly well with game dishes.

Eat. Drink. Stay

Being Ipswich residents we have stayed

and frequently eaten at Kesgrave Hall, but

despite only being a brisk 15 minutes drive

along the A12 this was our first trip to stay

at milsoms.

Reading up on their website before we set

off, ‘relaxed flexibility’ seemed to be the

order of the day.

They make great play on the fact that you

can arrive when you wish and dine at any

time, as the full menu is available all day.

We arrived midday on Bank Holiday

Monday so the restaurant, with dining

areas outside and split over two levels

indoors, was busy and filled with the sound

of satisfied diners!

Actually it’s easy to forget how close

milsoms is, as, once you step through the

door, it feels a world away; enabling you to

start ‘recharging your batteries’ without the

hassle of a long journey.

Incredibly, milsoms in Dedham have been offering their award-winning eat, drink, stay formula for the last ten years andin this, their year of celebration, we thought we would pay a visitto experience the polished establishment for ourselves.

Page 21: Select Magazine June-July 2011

19

Everything at milsoms is delivered with

style and after a speedy check-in we

went for a relaxing walk along the winding

River Stour.

The footpath runs directly outside the hotel

and within moments you drop into serene

Constable countryside. We walked to the

Dedham Boathouse using a supplied map

and rented a boat to take us further down

the river. The river would be great for wild

swimming if you felt really brave;

we however were just content rowing along

between its picturesque banks.

After a leisurely walk back to the hotel we

settled down to a well-deserved late lunch

on the restaurant’s terrace.

As we have come to expect from a milsom’s

menu the dishes on offer were inventive and

exciting and we opted for Blackened Essex

Bird Chicken Breast, Tabbouleh, Aubergine

and Greek yogurt and Harissa (£14) and

Thick Cut Scottish Hake, crushed potatoes,

peas an hollandaise sauce (£16.75). Both

dishes come with a side order of vegetables

or salad.

Knowing we were booked in for the night in

one of the 15 rooms we had no worries on

the driving front so were really able to enjoy

the wine list. The rooms are all individually

designed to a high standard, quiet and

with comfortable beds that delivered

a refreshing night’s sleep.

Talent in focus

[email protected]

+44 (0)7859 056717

www.claudia-gannon.com

What do you specialise in?I like to photograph people, so I specialise

in portraits for company websites, or

annual reports or case studies and other

corporate materials. I also do PR and Event

photography, for example covering a new

product launch, or exhibitions & events

for foreign embassies. My real passion

is food photography and am moving more

and more toward that direction which is

really exciting.

How would you describe your style?I favour natural light and generally simple

lighting setups whether studio or natural. I've

worked as an assistant on complex setups,

especially car shoots, Subaru, Toyota &

others, they are incredibly time consuming

and challenging, but sometimes just a

window makes the nicest light for a portrait.

What’s the secret to taking perfect photographs?Oh I think there are several things that are

important when creating an image, lighting

is really important, it gives the photo a

certain mood and feel. Engaging with your

subject is also really important, being able

to make people laugh and make the

experience of having your picture taken fun.

Which of your photo’s are you mostproud of and why?As a photographer I'm always moving onto

new challenges and also coming back to

old ones. Favourites pop up as your career

progresses and I have lots, most are

portraits, though I'm most proud of some of

the food shots. Believe it or not getting food

to look good on camera is not easy. I

recently had the chance to go up in a

helicopter and took some shots of Suffolk,

which was great fun and I managed not to

throw up!

Who would you most like to photograph? Its got to be Johnny Depp!

What has been your most embarrassingmoment as a photographer? Not so much an embarrassing moment

behind the camera, but in front of it. I'll just

say that for a laugh, I ended up in a

competition and shots of me in a bikini

were printed in the News of The World

along with a rather creative "quotation";

little did I know that my future mother in law

read that paper every Sunday!

Meet two of our best local photographers

www.wphotography.biz

What do you specialise in?Commercial Property Photography (see

www.wphotography.biz) but personally I

really enjoy doing more contemporary art

photography (see www.harrisonhicks.com)

which gives you the freedom to experiment.

How would you describe your style?Versatile, but if anyone can tell me more

that would be great.

What’s the secret to taking perfect photographs?Getting the light and composition right and

take it with your third eye!

Which of your photo’s are you mostproud of and why?Spin Off – A dance group for dancers with

learning or physical disabilities (photo taken

at technical rehearsal of High Voltage at the

New Wolsey Theatre), June 2008. I was

most proud of it as dance photography is

technically difficult as the light and bodies are

constantly moving and changing at speed.

Also, I wanted to show how talented the

dancers were, and I think I achieved that.

Who would you most like to photograph? The Queen informally.

What has been your most embarrassingmoment as a photographer?Dropping my camera during a shoot (ouch!).

The Lion roars again!

Suffolk-based hotel group, Thorpeness &

Aldeburgh Hotels has recently completed

a major refurbishment of The White Lion

Hotel in Aldeburgh.

This is no ordinary refurbishment however;

the internal space has been completely

re-imagined, filling the public rooms with

light and making it a stylish and

contemporary 21st Century hotel.

In places, the hotel resembles the

Brudenell Hotel with strong nautical themes

and subtle designs, which are both

comfortable and modern. The blues, green

and ochres used in the soft furnishings

reflect the coastal colours viewed from the

window. This is especially the case with the

sea-front bedrooms which we saw during

our visit, and have the added advantage of,

at once, feeling muted and restful.

The orientation of the bar within the newly

created Bar & Brasserie is very impressive; it

runs along the complete length of the far left

wall of the hotel and replaces the former bar

and function room. Now, with the dramatic

alterations, light floods the whole of the

Brasserie area and the clever addition of a

glass partitions gives the impression of a

separate space away from the Bar.

We visited on a weekday and were seated

at a window table looking out onto the

iconic Aldeburgh beach; it was great to

look out at the huge sky without the

coastal wind that is so frequently present

on the seafront.

The food was impressive. Head Chef,

Jason Shaw, has created a menu that is

both inventive and varied with plenty to

tempt you after a jaunt in the sea air. There

are platters for two, together with simple

and tasty fish, meat and vegetarian dishes.

The menu, interestingly, features a map of

the local suppliers from which Jason

sources his fresh, seasonal produce and

the prix-fixe menu at £11.95 for two

courses and £15.95 for three is fantastic

value for money.

Once we had ordered we were served

freshly baked rosemary bread with oil and

balsamic vinegar, which I tried not to eat,

but failed as it was incredibly fresh and

crusty and complemented the oil effortlessly!

Page 33: Select Magazine June-July 2011

31

We started with a beautifully presented

dish of asparagus, salmon and hollandaise;

garnished with a wedge of lemon it was

uncomplicated and delicious.

Keeping our choices to Brasserie classics,

we opted for Moules Marinière that

creatively included mange tout and freshly

cut herbs, and were served with frites and

aïoli (£10.95) and steak frites, sirloin served

with a large field mushroom, slow roasted

tomato and Béarnaise sauce (£17.50). To

finish, it had to be Lemon Posset (from the

prix-fixe menu) and Crêpes Suzette...

simply mouth-watering.

All the courses were served very simply,

which really showcased the quality of the

ingredients and the skill of the kitchen - as

stated on the menu ‘Our new Brasserie

has been inspired by a modern desire to

return to simple “back to basics” food,

offering freshly prepared dishes,

contemporary, informal surroundings and

impeccable service’

Perfect for a family meal, a leisurely lunch

or just a drink, The White Lion is well worth

a visit. However, get in quick before the

hordes of tourists arrive at the end of July

and August – then the secret will be out!

atmosphere unfolds on Saturday 27

August with A Klezmer Party brought by

She’koyokh and Friends. The swirling

dances of Bulgaria and Turkey combine

with Ashkenazi melodies from Poland,

Romania and the Ukraine. For some truly

great Scottish Folk music, there is also

one spectacular weekend. With an

The cast from BAFTA-winning E4 hit series,

Misfits will be well worth catching. Fresh

from filming the third series, the cast and

creative team will share some of their

favourite moments from the show so far.

For those of you who have been living

under a stone for the last couple of years,

Misfits follows five outsiders on community

service who get struck by a flash storm

and lumbered with special powers.

Hard as nails Kelly (Lauren Socha) can

suddenly hear people’s thoughts, shamed

sporting hero Curtis (Nathan Stewart

Jarrett) discovers he has the ability to turn

back time when he regrets something, and

party girl Alisha (Antonia Thomas) can send

people into a sexual frenzy when they

touch her skin. Even painfully shy Simon

(Iwan Rheon) can make himself invisible

when he feels he’s being ignored, which

makes it all the more hard to swallow for

smart aleck Nathan (Robert Sheehan),

who seems to have been unaffected,

much to his dismay.

Also don’t miss...Camille O’Sullivan, she enjoys a

formidable international reputation for

her intensely dramatic interpretations

of the songs of Brel, Cave, Waits, Bowie

and more. The award-winning singer

has stunned audiences around the world

with her 5-star sell-out performances,

including Sydney Opera House,

London’s Royal Festival Hall and

appearance on ‘Later... with Jools Holland’

Backed by her talented band, expect fire,

ice, darkness, joy and pure passion.

On 14th – 17th July in the sumptuous surrounds of the Suffolkcountryside, the welcoming daisy-adorned gates will open forthe sixth edition of the magical and fantastical Latitude Festival.

Finally, something on the cutting edge…London Contemporary Orchestradraws together London’s brightest young

talent to explore and promote new music to

an increasingly wide audience. For

Latitude the LCO Soloists showcase works

by three American mavericks. Steve

Reich’s ‘Different Trains’ contrasts the cross-

continent trains of Reich’s American

childhood with the cattle trucks to

Auschwitz, using fragmented

recollections from three Holocaust survivors,

Reich’s governess and recordings of the

trains. ‘Four’ by John Cage stands as a

beautifully simple statement, illustrative of

his late period. Completing the programme

Mattress & beddingA good mattress can last up to ten years or

more, so this is one area where it’s a good

idea to pay for quality – and try before you

buy. There are a range of different types of

mattress: open string, pocket sprung, latex

or memory foam – and the best way to

work out what suits you is to try lying down

on a few.

It’s also worth investing in good-quality

bedding – you’ll use your duvet and pillows

every night, so you need them to be both

comfortable and durable.

Again, the type of bedding you choose is

a matter of personal choice. Some people

prefer natural feather or down fillings for

softness, others prefer synthetic or

hollowfibre fillings which can be washed

more easily, and may be better for allergies.

Different weights or ‘togs’ of duvets may

be appropriate for different seasons, too –

spend a little time in the bedding section

of your local department store, and do your

homework before you buy.

Athena Bed LinenSo versatile, it's a must-have, classic

design that will suit most room schemes

– chic and unfussy, it's particularly perfect

in sleek monochrome room schemes.

From £65 for a single duvet cover

Sweet DreamsWhen the daily news and weather combine to make getting outof bed a less-than-inviting prospect, you might as well stay justwhere you are. A comfy bed, plenty of soft bedding and somefresh linen are the only requirements for serious downtime. And,since both quantity and quality of sleep impact on health andwellbeing, the world just might seem a better place for it.

Buy British!

Daniel Barr, Managing Director at Anglia

Factors, commented: “I think a large

proportion of the population has always

preferred to buy British, but are now even

more inclined to do so as a result of the

current economy. It is a case of supporting

UK companies in tougher times.”

He added: “We’ve been trading for over 40

years from our showroom in Suffolk and we

are proud that we employ all our own

craftsmen and installers. Customers

associate British products with creative

design and they feel far more confident

purchasing from a British company,

knowing that there are easy-to-reach

points of contact should problems occur.

We are so confident in our work at Anglia

Factors that we give a lifetime guarantee

on all our cabinetwork.

People much prefer to invest in products

that will stand the test of time, that are long

lasting and of a higher quality. It’s great to

see that customers are currently favouring

the high quality of British-made products,

helping to give a welcome boost to the

UK economy.”

Anglia Factors manufactures from their

headquarters in Martlesham Heath, near

Ipswich. With the showroom only next

door; it allows clients the luxury of

remaining closely involved from initial

concept through to the manufacture,

installation and project management.

Never before has it been more important to support our Britisheconomy. As the credit crunch continues to bite for some Britishbusinesses, we asked leading Suffolk kitchen manufacturer,Anglia Factors, why they felt there was a fast-growing trend forpatriotism, and why the nation’s consumers are now even morecommitted to buying British than ever before.

Page 61: Select Magazine June-July 2011

June and July are set to be brilliant

months for comic book film fans.

June kicks off with ‘X-Men: First

Class’. Set in 1962 amidst the

Cuban missile crisis, it revolves

around the young mutants who

went on to become the

wheelchair-bound Professor X

and the funny-helmet-wearing

Magneto. It’s one to get excited

about, not least because it’s

directed by Matthew Vaughn

(director of ‘Layer Cake’ and

‘Kick-Ass’).

On 17th June we are treated to

‘The Green Lantern’ starring Ryan

Reynolds as a (sort of) average Joe

pilot who finds a special ring

(nothing to do with Mordor) and

becomes Earth’s ambassador

against the evil of the Universe.

‘Captain America: The First

Avenger’ is out on 29th July and

looks to be the perfect introduction

to this classic superhero and is

a must-watch for anyone looking

forward to ‘The Avengers’ set

to be released next year.

There are alternatives to the comic

book blockbusters. Playing at The

Riverside in June are ‘Hanna’, the

modern fairytale style coming of

age young girl assassin story

(that old chestnut) and ‘Oranges

& Sunshine’, the uplifting tale of

the forced migration of children

during the war and the social

worker who sought to reunite

them with their families.

My highlight for June is The Regal

Theatre’s 75th Anniversary.

To celebrate, from 1st-7th July

The Regal in Stowmarket is

charging entrance to all their films

at 1936 prices; just five pence!

Tickets are on sale from 1pm on
