    Shutter Menu Analyzing.

    ADVANTAGES

    1. Menu Objective

    Meet the taste and the preferences of our TARGET GUEST

    Furthermore, our food quality, flavour and the price satisfy Local Guest.

    Based on my observation and interacting with Local guests, 80% of them (3

    groups that I served, interacted and got comment) were happy with our food.

    - One Sentosa Cove President family gave good comment about our food,

    they did order Chicken Curry, Fish and Chip, Local Laksa,.

    - Another local family is our return guest, they came to our restaurant in

    their weekend, they like our food, especially Nasi Lemak. So one week

    after on Saturday, they returned and ordered Nasi Lemak again.

    - One young Singapore couple, stayed in Villa 9 for 1 night. They were also

    happy with our food and gave a good comment.

    2.Pricing-Effectiveness

    Our food price can be considered as a competitive price.

    As my researching on Knolls Restaurant (Capella). Their menu items are

    different between Our menu items. Those food items listed above, are the

    same ours. So, we can see the big different between our price and theirs.

    Of course, Capella restaurant facility is better than ours, but the food quality,

    quantity and decoration are almost the same. I did come there and tried their

    Nasi Goreng and Hokkien Mee. I can say our food quality and price is

    considered a competitive price.

    Regarding to our competitors [all the hotels belong the beach: Siloso Beach

    Resort, Rasa Sentosa(Shangri La), Costa Sand Resort, Capella.]. I do not

    compare the menu of Siloso Beach caf with Our restaurant menu, because

    they are actually not our competitor. First, they are 3 star-resort. Second,

    Siloso Caf is not a restaurant, it is just an out door cafe.

    In my opinion, Rasa Sentosa is our competitor, but they are under

    reconstructionthey all businesses are close, so I could not research reality .

    - Chatterbox menu, which has food items similarly with our menu, is clearer

    about food image, ingredient and operation than our one.

    Our menu design, art work has no style to make guest identify of

    our Shutter restaurant or Amara Sanctuary resort.

    Our menu cover is not shape and form enough to help create the

    interesting and sale appeal.

    Our menu also does not show our restaurant name Shutter. It is

    lack of Address, location and contact number.

    2. Planning the order of items on the menu .

    We do not have any special location for special items on the list.

    In my opinion, the placement of items in the list affects the frequency

    which they are ordered

    - The menu items located in the first and the last positions on the list are

    generally ordered most frequently. So those items that are the easiest for

    the operation to prepare, provide the highest profit and considered

    special of our restaurant, must be located in the first or last of the list.

    Based on my observation, and interacting with the guest during 5 months.

    Our Modern Laksa , Abalone Noodle with Prawn, Pumpkin Soup and

    French Onion Soup are quite special . Several times, the guest asked me

    which one was special of our restaurant. I did suggest them these foods, and

    in result, the guest was surprise and happy with these foods. Therefore, we

    may put them in the first or the last of the list if they are easier to be prepared

    or have higher profit than others ones.

    3. Important points

    To fulfill both Ethical Requirement and Government Regulations, we

    have to display the ingredient or special information of the food to

    avoid inaccurate statements or unexpected complain of Muslim

    guest or Fascist guest. But Our menu is too simple, it does not

    display anything.

    We take the menu of Chatterbox restaurant for example. It displays the image

    of

    + The image of Chili to represent those spicy items.

    + The image of Leaves to represent those vegetable items for vegetarian

    + The image of Pig to represent those porky items.

    The quantity of the food items must be also represented.

    - For example, Satay Platter (1/2 dozen); Chicken Wing (room service

    menu)(1/2 dozen); Wagyu Beef Satay( 3 cubes).

    The icon of money ($) also have to put in front of the price( for

    example, it have to be $ 19.00 instead of 19.00) ( Our bar menu at

    swimming pools do not show ($) in front of the price)

    In my opinion, Our menu planning objective is effective. We meet our target

    customer. The price is reasonable enough to be a competitive price.

    On another hand, Our menu information, designing, description,

    representation, menu cover is not that good, it have to be improved.
