Oklahomans love to eat – from the basic eat-and-run to the more refined café or bistro. A quiet restaurant, a group of friends and a nice bottle of Chianti are the perfect ending to a busy day. Many area chefs have customized their culinary talents for the more discriminating Oklahoma

palate. While a hearty chicken fried steak is always a welcome indulgence, roasted rack of lamb or an herb-crusted salmon is a delightful change of pace. Here, several of the metro’s top chefs have shared either their signature dish or their restaurant’s most popular item. Each one is unique and satisfying, prepared with skill, f lair and a generous dash of love.

Roasted Chicken and Summer Corn RisottoSTELLA MODERN ITALIAN CUISINE, 1201 N. WALKER AVE., OKC, 405.235.2200 Stella sits in the heart of Midtown and is known for its seasonal menu. In fact, owner Lori Tyler and executive chef Melissa Aust say that is the most difficult thing they do – deciding which menu items stay and which ones are removed for the addition of seasonal dishes. “I knew I wanted a risotto dish featuring chicken and a lighter feel for summer,” Tyler said. “Melissa created her favorite item for summer after receiving the first bushel of fresh corn. She uses a corn-and-chicken stock, whole chickens roasted in Stella’s brick oven which are shredded for this dish, fresh garden herbs collected from Stella’s window garden, a mixture of three cheeses including spiced mascarpone and a dash of ghost pep-per salt to add a bit of spice. This Roasted Chicken and Summer Corn Risotto is our favorite summer dish! Try it with a glass of Elyse L’ Ingenue and you have the perfect summer meal.”

Roasted Rack of Lamb with Ancho-Cherry SauceTHE COACH HOUSE, 6437 AVONDALE DR., NICHOLS HILLS, 405.842.1000 Legendary Oklahoma City chef Kurt Fleischfresser has made dining at Nichols Hills’ Coach House an experience to treasure. Several dishes remain standard menu items, including Roasted Rack of Lamb with Ancho-Cherry Sauce. “We source local and domestic lamb for this dish,” Fleischfresser said. “The impor-tant thing about the lamb we are sourcing is that it has a bright, fresh flavor without mutton-y or gamey notes. The sauce is made from our lamb stock over a gastrique of tart, dried cherries and toasted ancho chiles. Again, the balance of flavors makes the dish work: fruity, smoky working with the rich, slightly fatty lamb rack.”

Whole Roasted BranzinoTOMMY’S ITALIAN AMERICAN GRILL, 5516 W. MEMORIAL RD., OKC, 405.470.5577 The popular ’90s-era restaurant is back after a several-year hiatus, and Tom-my’s is better than ever. Chef Ryan Murphy spent many years at the Coach House perfecting his craft. He graduated to sous chef at Deep Fork Grill, and was then head chef at The Mantel, Red Prime Steak House and most recently at Bellini’s. “At Tommy’s, one of my signature menu items is the Whole Roasted Bran-zino,” Murphy said. “It may often be referred to as European Sea Bass. I pan sear the fish, then roast it and finish it with fresh lemon and olive oil. Typically I serve it with tomato risotto and a vegetable of the day. It is one of our most popular dishes and one our customers ask for again and again.”

Mahogany is part of the prestigious Hal Smith Restaurant Group, offering diners a meal and experience they will remember long after the dishes have been cleared away. “To me, Oklahoma is about the grill,” said head chef Brad Johnson. “We raise some of the best beef in the nation. My farming background tells me if I could have one meal it would be in late sum-mer. Sliced summer tomatoes with salt, pepper and a little oil and vinegar. Then some simple grilled vegetables with new potatoes. My steak would be a Prime 48-Ounce Porterhouse, medium rare of course, enough for me and my wife. It is seasoned with salt and pepper and nothing else but a little butter to finish. A Bordeaux-style wine and key lime pie for dessert. Simple goodness.”

Othello’s LasagnaOTHELLO’S, 1 S. BROADWAY AVE., EDMOND, 405.330.9045 Yet another unique and tasty dining experience is waiting for you in down-town Edmond. Othello’s original proprietor was Pasquale Benso, who opened his restaurant on Norman’s Campus Corner in 1978. Bob Weiss and his wife Tammy opened the Edmond location in 1999, using Benso’s traditional Italian recipes. “It’s all about the sauce,” Weiss said. “We make it from scratch every day using fresh tomatoes, garlic, basil, extra virgin olive oil and a special mixture of Italian seasonings. Our most popular dish is Othello’s Lasagna. It is seven lay-ers of pasta filled with a special blend of four different chesses and our home-made sauce, then topped with mozzarella and baked to a bubbly completion. We have another version that includes meat sauce and Italian sausage, and it is always a customer favorite.”

Dry-Aged Pork RackVICEROY GRILLE IN THE AMBASSADOR HOTEL, 1200 N. WALKER AVE., OKC, 405.600.6200 One of Oklahoma City’s most exciting new bistros is the Viceroy Grille. Located on the first floor of the new Ambassador Hotel in the heart of Midtown, its executive chef Leo Novak loves to experiment. “I just moved back to Oklahoma City after being gone for 15 years,” Novak said. “I can’t believe how much it has grown. As a chef, I love to try new ingredients and dishes, and one I just added is a Dry-Aged Pork Rack. I start with a 10-bone dry-aged pork rack. I French the rack portion into 12-ounce chops and then brine for several hours. Summer to me also means sweet corn, so I make a sage creamed corn to accompany the chop. Finally, I put more pork into the dish by braising pork belly with Brussels sprouts. I finish the dish with an apple demi-glace. The chop is grilled and then butterflied because it is very thick. Since our opening in the spring, this has proved to be one of our most popular dishes.”

Horseradish Crusted SalmonLEGENDS, 1313 W. LINDSEY ST., NORMAN, 405.329.8888 Fine dining is not limited to Oklahoma City. Take a short drive to Norman and you will see why the restaurant is simply called “Legends.” “The Horseradish Crusted Salmon is one of the few menu items that will never come off,” said Rebecca Sparks, Legend’s executive chef and owner. “Our chicken crepes and chicken salad are also long-time favorites. This summer one of my personal favorites is the new kale superfood summer pasta. It has kale, of course, feta cheese, Greek olives, chicken, cherry tomatoes in a light olive oil and miso butter sauce. A trip to Legend’s must also include a piece of our divine signature dessert, the lemon cream cake. And our new watermelon tea helps beat the heat and works well with most of our menu items.”

Kentucky Club Pan Fried ChickenKYLES 1025, 1025 N.W. 70TH ST., OKC, 405.840.0115 This charming restaurant is nestled just off Western Avenue near Nichols Hills. Its origins date to the speakeasy days of The Kentucky Club and the menu is like turning a page in a history book, but with a contemporary twist. “In addition to great steaks and seafood, we also have a number of other specialty items on the menu,” said Kyle Anderson, owner and general manager. “We feature the original Kentucky Club Pan Fried Chicken, which has developed a multi-generational following.” It’s named Bell’s Pan Fried Chicken on the current menu, in honor of Kentucky Club manager Johnny Bell. “Our lounge specializes in old-school cocktails such as the Manhattan, gimlet and the old fashioned. Plus, no visit to Kyles 1025 is complete without one of our signature, world’s best brandy ice desserts. Reservations are preferred but not required, so come by and see us!”

Mixed Seafood TamalesCHEEVER’S, 2409 N. HUDSON AVE., OKC, 405.525.7007 The story behind Cheever’s dates back to the early 20th century, when a young lady began selling roses from her backyard to help with her family’s finances. Eventually she opened her own flower shop, Cheever’s, in 1938. Fast-forward 60 years, and the flower shop gave way to new owners Heather and Keith Paul and the Good Egg Dining Group. Today, Cheever’s Café is one of those special neigh-borhood places serving contemporary comfort food. One of the most popular dishes is the Mixed Seafood Tamales. Chefs start with hand-made tamales made from sweet potato masa. Then they are topped with a sauté of shrimp, lobster meat, halibut and scallops in a rich yet mild ancho pepper cream sauce and served with cilantro rice. Cheever’s Café has a full bar with an array of delightful cocktails, but the perfect pairing for this dish is the Ken Forrester Old Vine Reserve Chenin Blanc, which complements the mildly spicy and earthy seafood.

Chicken SpediniVITO’S RISTORANTE, 7521 N. MAY AVE., OKC, 405.848.4867 Quietly tucked away near Northwest May Avenue and Grand, Vito’s has all the old-world ambiance of a colorful trattoria on Italy’s Amalfi Coast. Cozy corner tables with red-checkered tablecloths and the tantalizing scent of simmering garlic give a hint of the feast ahead. “There’s no such thing as too much garlic,” said Cathy Cummings, head chef and owner. “Our signature dish at Vito’s is the Chicken Spedini – boneless chicken breast that is tossed in Italian-seasoned bread crumbs, Parmesan cheese and fresh garlic. It is rolled onto a skewer, grilled over charcoal and topped with our amogio sauce – extra virgin olive oil, parmesan, fresh basil, more fresh garlic and squeezed lemon. When you walk in the door at Vito’s you are not a customer, you are part of the family!”

Beneath the tender crust lies a luscious well of molten chocolateness, perfect for the mature palate that still likes to sneak a lick off the spoon after making brownies. This is what all other “lava” cakes are endeavoring to be; soft and creamy – not underdone – and deeply chocolate. Served with a small cup of vanilla ice cream (the perfect foil for the cake’s fabu-lous warmth) drizzled with fudge and caramel sauces, and garnished with mint and slices of strawberry, the Molten Chocolate Cake could easily be shared … but you probably won’t.

The result is a dreamy dessert that has achieved a devoted following as Pie Junkie’s most popular flavor, year ’round. (A well deserved honor).

With ribbons of ethereal mousse layered between thin slices of a demure, lightly sweet cake, this delectable combination provides a pleasing solution for someone who loves the airiness of a well-prepared mousse, but longs for a little more substance than that particular treat usually provides. Embellished with a dab of whipped cream, and thin coins and shavings of additional chocolate, the Chocolate Mousse Cake is a won-derful traditional-with-a-twist choice for the chocolate aficionado.

GRAND BLVD., OKC, 405.844.1501 Cakes (and tortes) of the flourless variety are difficult to master, and chefs will secretly confide that they are also expensive and labor intensive. The Flourless Chocolate Torte at Café 501, however, is a masterful example of why the effort and expense are worth it, when done right; rich without being too heavy, and with an intense flavor sure to be appreciated by the most serious chocophiles. Topped with a smooth ganache and edged with white chocolate shavings, the flourless torte is a velvety indulgence, sure to become a favorite once you’ve tried it.

this opportunity to mention that beer is also worthy of affection, and several outfits in central Oklahoma do it very, very well. We’ve picked out some of our favorites from a hand-ful of the city’s maestros of malt and hierophants of hops; consider this a six-pack of recommendations for blue-ribbon OKC brews. Of course, there are some other delicious in-state options that are a bit beyond the metro’s borders – the venerable Choc in Krebs, Marshall Brewing or Prairie Artisan Ales in Tulsa – and some nearby locales that brew their own like Belle Isle and Bricktown Brewery, and the magnificent Bier on tap at Royal Bavaria and Das Boot Camp (the King’s Gold is seriously fantastisch).
