SMCC Hosts Young Chef CompetitionsSMCC hosted two competitions for young chefs on March 9 and 10, helping the next generation of culinary artists begin to make their name.

On March 9, SMCC hosted Maine’s 2nd annual ProStart Culinary Competition at the school’s Culinary Arts Center in South Portland. On March 10, the school hosted for the first time the regional event in the Chaîne des Rôtisseurs’ Jeunes Chefs Rôtisseur Competition.

The March 9 competition was for Maine high school teams, and it was the second year that SMCC hosted it.

There were six, four-student teams taking part this year, with schools including:• Northern Penobscot Technical Region

III, from Lincoln, under Chef Instructor Hermann Ammerman;

• Hancock County Technical Center, from Ellsworth, under Chef Instructor Bill Baker;

• Waldo County Technical Center, from Waldo, under Chef Instructor Mark Hannibal;

• Portland Arts and Technology High School, from Portland, under Chef Instructor Doug Armstrong;

• Lewiston Regional Technical Center, from Lewiston, under Chef Instructor Danny Caron; and

• Oxford Hills Technical Center, from Norway, under Chef Instructor Norma Smith.

“This is really our future,” said SMCC Culinary Arts Chairman Chef Geoff Boardman. “We’re proud to host this competition and give an opportunity for Maine’s young chefs to shine.”

The teams all had to create a menu, cook three-course meals (four portions each) and serve them to judges. They were judged in the kitchen and on their final product.

SmCC Wins 2013 State plumbing Apprenticeship ContestOn Friday, March 22 SMCC student Bryan LaFrance won the 2013 State Plumbing Apprenticeship Con-test at the Augusta Civic Center. The apprenticeship contest was part of the 119th Annual Maine Plumbing-Heating-Cooling Contractor’s Tradeshow (PHCC). While the competition was close and all of the contestants worked extremely hard on their mock-ups, Bryan LaFrance represented SMCC proudly by coming away with the win. Congratulations Bryan!

SmCC Students Named to the All-maine Academic teamCongratulations to SMCC students Justin Childs and David Spenlinhauer for being named to the All-Maine Academic Team for two-year colleges at a ceremony held on Wednesday, March 27 at the

Senator Inn in Augusta. The event, hosted by the Maine Community College System Board of Trustees awarded a $500 scholarship to Childs and Spenlihauer along with 12 other Maine Community College students named to the team.

SmCC and USm Host Joan Benoit Samuelson at “Storied miles”Hear Joan Benoit Samuelson speak at “ Storied Miles,” a free lecture, on Wednesday, April 3 at USM’s Portland Campus in the Wishcamper Building, Room 102. A reception will be held at 6:30 pm and the lecture will be held at 7:00 pm. Benoit, an American marathon runner and Olympic gold medal winner will speak on women, sports, and her experience as a path-breaking athlete. SMCC’s Gender Equity Committee and USM’s History & Political Science Committee and SMCC President Ron Cantor and USM President Theo Kalikow will jointly host this event. monica Good, Wife of SmCC professor Dan Abbot, Wins Sarton Women’s memoir AwardOn Friday, March 22, in Austin TX, the Story Circle Network (SCN) announced that Monica Wood was granted the Sarton Women’s Memoir Award for her book, “When We Were the Kennedy’s.”

The book tells the story of Wood’s mill town childhood in Mexico, Maine, and her Catholic family’s struggles after the sudden death of her father in 1963.

Her family’s overwhelming grief is tenderly, artfully woven into the whole nation’s grief for the death of President Kennedy, and with the healing that comes with the acceptance of loss.

Campus ConnectionExploring a Hidden Gem: The McKernan Center and Conferences & EventsIn recent weeks, a hard-working SMCC department took a break away from the office to enjoy a quiet lunch overlooking the dark winter waters of Casco Bay – a productive retreat for a half-dozen co-workers.

In the same venue, almost 100 entrepreneurs and business experts gathered to learn more about starting a business and what’s involved, from marketing to intellectual property, and everything in between. After the conference, they mingled into the evening, enjoying a variety of gourmet appetizers.

In both cases, the groups were enjoying one of SMCC’s crown jewels – the McKernan Center.The center, part of the original Fort Preble, is run by the Conferences & Events team at SMCC.

Campus ConnectionSMCC Students ‘Speed Date’ with Area Fire-EMS ChiefsMore than 50 SMCC Fire Science and Paramedicine students had a unique opportunity recently to sit down with area fire and emergency medical chiefs. During this time they discussed what it takes to get the job most of them aspire to – career firefighter-EMT or paramedic.

SMCC’s Fire Science and Paramedicine Departments and six area fire departments – representing nearly 500 full-time fire and EMS jobs – collaborated to provide the 4th Annual Fire-EMS Chiefs’ Roundtable on March 4 and 5 at SMCC’s McKernan Center.

Chief officers from Brunswick, Lewiston, Portland, Scarborough and South Portland Fire-Rescue Departments met with students and briefed them on the character traits, training levels, certifications and degree credentials they look for in their top candidates for career positions.

Many students came away with valuable lessons learned. Colton Houle, 2nd year Fire Science student from Hudson, NH, observed, “The Chiefs’ Roundtable is like speed dating. You get a short amount of time with each chief as they give you an overview of their department and what they have to offer and at the end of the meeting you have your front runners that made a lasting impression on you.” Brian Gregoire, 2nd year Fire Science student and Marine Corps veteran from Biddeford, added “As a veteran, just learning what different fire departments expect in their applicants and how they run their day-to-day operations was very enlightening.”

Myriah Porter, 1st year Fire Science student from Peru, Maine, said the roundtable helped to ease the anxiety that comes with applying for jobs.

“It was a really good opportunity to get to talk to the chiefs in a much less formal setting than if I was

interviewing for a job,” she said. “It also helped me to know what I need to do in order to get the job I want.”Fire Science faculty were very pleased with the sessions. Rob Lindstedt, Fire Science faculty member observed “The roundtable sessions had an immediate effect on student performance. It encouraged our students to refocus on why they are here.”

The participating fire chiefs thought the sessions were very productive, as well.

Assistant Chief David Jackson of Portland Fire Department said “This was an excellent opportunity for our future applicants to network with chief officers of our department, and to bring the official department requirements down to a human level,”

Deputy Chief Steve Fox of South Portland Fire-Rescue Department agreed, “The Roundtable provided a valuable face to face experience for the South Portland Fire Department. In the past two years we have hired four SMCC students, all past participants in this process. I am always impressed with the maturity and professionalism of the students.”

Entrepreneurs Called to Success at SMCCSMCC continued its support of Maine’s small business sector by once again hosting the “Calling All Entrepreneurs” event on Friday, February 15, matching budding small business owners with local experts.

This was the third year SMCC hosted the event.“We host this event at SMCC every year because it makes a difference. We have watched a few businesses

Campus Connectionlaunch as the result of this event. In addition, it’s FREE advice from experts,” said Michelle Neujahr, Director of SMCC’s Entrepreneurial Center. For some small businesses this advice and encouragement may be just what they need to get started.”

The event gives hopeful entrepreneurs an opportunity to discuss their business ideas with people who have started their own companies or who are experts in different areas, such as finance, marketing, legal and more. Each one-on-one session gave the entrepreneur the chance to briefly outline their business idea and receive feedback from the experts. These 20-minute sessions gave new entrepreneurs the chance to build ongoing relationships with mentors.

Experts this year included business coaches Mandy Schumaker and Dante Vespignani, local attorney Jeffrey Gnecco and financing expert and entrepreneur Chris Speh.

In recent years, SMCC’s “Calling All Entrepreneurs” event has helped dozens of Mainers with an idea and a dream. Some of the more successful business owners to use the event as a sounding board include Ry Russell, who restarted and rebranded the Saco Drive-In, and Phil Gaven, who co-founded The Honey Exchange in Portland with his wife, Meghan.

Gaven said he and his wife had been brainstorming around starting a business, but had no experience in retail and little knowledge with startups.

“Fortuitously, I saw an ad for Entrepreneur Week and the events at SMCC - right down the road from where we live. I went in with little more than my Brainstorm Notebook and a practiced elevator pitch,” said Phil. “My meeting with Mandy Schumaker and Dante Vespignani was the first time explaining the idea to strangers, and they were enthusiastic about it. By the end of 20 minutes I had transformed a daydream into a plan of action. What I needed was the first proactive steps to take on the path. After that, the rest of the path seemed to lay itself out before me.”

Hospitably Management Intern Lends a Hand at McKernanThe first student to take part in the new Hospitality Management Internship Program is putting her knowledge and skills to good use on campus, as an intern with SMCC’s Conferences and Events Department.

Yadira Malczynski, a native of the town of Ensenada in Northern Mexico, is a Hospitality Management major who will be graduating this May. To complete her Associate degree, Malczynski must complete a 150-hour internship. Malczynski could have chosen to perform her internship at any one of Southern Maine’s busy hotels, but she chose to complete it here at the McKernan Hospitality Center at SMCC’s South Portland campus.

Malczynski’s interest in tourism and hospitality comes from growing up in Ensenada, which is about 70 miles south of San Diego, CA. She enjoyed interacting with the many different cultures when the cruise ships docked in her hometown, and saw first-hand how local business was significantly affected by the tourism industry. After arriving in Buffalo New York in 2001, Malczynski started the process of enrolling in college. In 2005, she arrived in Southern Maine and got involved with the Parents as Scholars Program (PaS). As the mother of two, Malczynski needed flexible class schedules and felt SMCC would be a good fit.

Malczynski hopes to have her own hospitality business here in Maine.

Campus Connection Campus ConnectionBringing Hearts and Hands to GuatemalaJulie Chase, Interim Dean of Parnerships & Communications at SMCC recently visited Guatemala with a team from Partners in Development (PID). Read about her experience, bringing hearts and hands to Guatemala, below.

I was standing on the dirt floor of the house, around me the walls were half cement, half wood. Above me, the roof was tin. Smoke filled the air from the open wood-burning stove while a barefoot woman cooked tortillas over it, on a round stone.

Our eyes burned and breathing was difficult. I held a 4-month-old baby with a constant cough while the father learned how to use a new water filtration system our team had just installed.

As I rocked the baby, Juan Carlos, in my arms, a baby chicken ran across my foot. Our translator poured a glass of water from the new filter and drank it, and I was overwhelmed by the realization that Juan Carlos would now have clean water.

I was far, far away from Maine. I was in a small village in Guatemala, on a service trip with Partners in Development (PID). PID helps the extreme poor in Guatemala and Haiti attain independence and whole life improvement. PID combines a variety of programs to achieve community transformation in places where hope is often lost in the cycle of poverty. The work of our team of 28 consisted of construction, water filtration systems, children’s programs and staffing a medical clinic. It was my first time on such a project, and it was a far cry from my day-to-day job at SMCC as the Interim Dean of Partnerships and Communications … or was it?

Over the week I learned how to build and install a water filtration system, including “cleaning the sand” needed to filter the water while other team members poured concrete and built the foundation for a new home. I also learned to appreciate a cold shower, even if dirt came out of the shower head! I learned that

the Spanish I learned 20-plus years ago came back and I was able to communicate better than I expected.

The medical team saw more than 100 patients a day, and educational programming was put on for 75 children a day. Other than the medical team, most of us didn’t have a particular background in the work we were asked to do. We had willing hearts and wanted to “be of use” in this village. Even if that use was just to hold a baby or to leave behind our shoes and clothes for others to use after we went back to Maine.

What struck me over and over was how valuable students and staff from SMCC would be in a project like this. Students studying construction or any of the trades, nursing and medical assistant students, early childhood education students, staff and faculty… people who have training in these areas would accomplish so much more and have an immediate impact in this village. What are the possibilities? A partnership between SMCC and a little village in Guatemala? An opportunity for students and staff to apply their skills and hearts? A week devoted to service and time to learn more about life in a third world country?

With the support from President Ron Cantor, I am looking into the opportunity for SMCC to organize a similar trip. If you are interested in learning more, please contact me at [email protected]. Young Chef Competitions“What these students can accomplish is simply unbelievable. They understand the challenge, they know the goal and train relentlessly for this day,” said Mike Carney, president of the Maine Restaurant Association Education Foundation.

And in the second competition, area chefs who will be under the age of 27 as of September put their skills to the test in the Jeunes Chefs Rôtisseur Competition. Two of the competitors were SMCC Culinary Arts students: Casey Taylor and Audrey Carlson – who recently finished second in the regional venue of the San Pelligrino Almost Famous Chef Competition.SMCC was one of 10 sites nationwide to host a regional event in the competition. The contestants

created a meal from several “mystery baskets” of ingredients.

Poulin said he thought Carlson had the contest in the bag – but the last young chef prepared the first-ever vegan dish entered in the competition. The novelty of that, he said, pushed the Le Cordon Bleu School of Culinary Arts student into first place. The winner will compete against other regional winners in Napa Valley.Carlson said she was proud of her showing, and of how she rose to the occasion and overcame the pressure. She plans to continue her culinary education at Johnson & Wales, pursuing a four-year degree after she earns her associate degree at SMCC.

Educating the Modern Bucket Brigade

In 1736 Benjamin Franklin and his associates founded the Union Fire Company. In 2012 the Maine Fire Service Institute moved its headquarters to Brunswick. Across the centuries these two organizations share a commitment to education and training. They prove that “an ounce of prevention is worth a pound of cure.”

The Maine Fire Service Institute (MFSI) is a department of Southern Maine Community College with statutory authority to train and certify firefighters throughout the state of Maine. Nine full-time staff and 100 contract instructors stretch from Aroostook County to York County—perhaps you’ve seen them on the road towing MFSI/SMCC trailers filled with training equipment, props and more. Fire-fighting has come a long way since Franklin’s Bucket Brigade.

Maine’s 433 fire chiefs are the “customers” of MFSI. The students are volunteer and full-time firefighters of all backgrounds, ages and levels of experience. Highly qualified instructors work with the chiefs to coordinate training programs that are often held in firefighters’ hometowns. We also host seminars and hands-on training sessions in the newly renovated classrooms and laboratories of SMCC’s Midcoast Campus at Brunswick Landing.

“What I tell people is as a firefighter, you never quit learning,” says Bill Guindon, the Executive Director of MFSI. “It’s a dangerous oversimplification to suggest that fire-fighting is all about spraying water on fire. Everything associated with fire departments has changed and continues to change.”

Fires burn differently today than they did 20 or 30 years ago. The vast prevalence of petroleum-based products in many of our household goods means that fires burn faster and hotter. Vehicles are designed differently, too. Whereas firefighters could once cut a car open in seconds, modern materials and technology have made cars safer but much trickier to cut open. New fuel alternatives are changing the way we heat our homes, so firefighters must be trained to respond safely and effectively to blazes involving these fuels.

Our Midcoast Campus is full of potential for MFSI. Guindon plans to construct a live fire facility so that instructors can train firefighters on actual structure fires. He envisions a driving course to teach and certify those who need to ply those long ladder-trucks through narrow city streets. And he wants to develop a pumping course to prepare experts in the age-old art of getting water onto fire.

Beyond certification, those trained by MFSI earn college credit that can be applied to our A.A.S. degree in Fire Science. Additionally, SMCC faculty members work with local fire departments to offer an innovative live-in program. Fire science students actually live in fire houses rent-free in exchange for being on-call during specified hours. It’s one more way that SMCC prepares people to learn and live successfully in the real world.

If all this is more than you might expect from a college remember that “Community” is SMCC’s middle name. Firefighters protect and serve Maine’s communities so SMCC educates and prepares firefighters.
