Dear Fellow Members,

Where has the time gone? It seems like yesterday I wrote my first Sportsline encouraging each of you to get out of your comfort zone and try something new at our Club. I’m excited to say, many of you did!

It has been wonderful to see so many members participate in golf, tennis, fitness and social food and beverage

events throughout the year. During monthly meetings, committee members developed new ways to encourage their fellow members to come out and enjoy all the Club has to offer and you took full advantage of it!

There were times when committees challenged Club Management to get out of their comfort zone and look for opportunities to improve amenities, program events, schedule maintenance or create a new menu. The membership survey results are in and the scores have increased in all categories! This proves the hard work your committee members and management conducted throughout this busy year.

Thanks to everyone who served on committees this year. I know first hand your meetings ran long and they did because you wanted to make sure the club experience was nothing less than perfect.

I’m grateful to the board members who stuck around for hours to discuss everything from grass mowing height to changes in our menu. A heart felt thank you to Frank Broyles, Ron Howard, John Mason, Sharon Pfaff, Bob Shema, Kate Shema, Scott Oishi and Craig Uebele. At the beginning of the year, I did not know each of you personally, but as we close out this year, I’m thankful to call you my friends.

The goals we have achieved this year will be the foundation for progress next year and our membership is in GREAT hands with Frank as our new Board of Governors Chair!

This year, I challenged each of you to invest in yourself and I hope when your year-end results come in; you’re in the black!

Meet The Sales and Member Relations Team

RYAN HUMPHREYS

Associate Director of Club Sales

Ryan began his career at Four Season in February 2007, after moving from his hometown of Tucson, Arizona and Alma Mater, University of Arizona. Ryan has held several positions at Four Seasons and The Sports Club including Golf Services Manager and Membership Sales Manager. Ryan was recently promoted to Associate Director of Club Sales in June 2012. Ryan enjoys playing golf and fishing and has recently embarked on his newest and most exciting adventure, fatherhood.

Membership Sales Manager

Crystal Daniel joined the Four Seasons family in 2007 in our Hotel Sales department. Prior to beginning her career with Four Seasons, Crystal worked in mortgage lending and spent some time as a Restaurant Manager. Crystal officially joined the Club Sales team in September 2012 after spending the summer assisting the Sales office through a maternity leave. Crystal grew up in Grand Prairie and graduated from The University of Texas at Arlington. Crystal is married with three children - all girls!

Member Relations Manager

After graduating from Arizona State University (Go Sun Devils!), Jessica joined the Four Seasons team in Santa Barbara where she first gained experience in the Concierge Department and then soon transferred into the Sales and Social Media world. After almost four years with the Santa Barbara property, she moved to Dallas to embark on a new chapter and a new role as your Member Relations Manager. Jess enjoys traveling with her fiance, cooking, running and spending time on her new road bike.

ROB COWANI had the good fortune of getting to know Dina Schulz fairly quickly after she and her husband Peter, and daughter Kristin joined the Club 13 years ago. It would be pretty hard not to get to know her as she could be characterized as ‘very outgoing.” It was not surprising to learn that Dina came from a

prominent communication and broadcast background.

The members involved in the Club’s committee system got to know Dina quickly as they also saw this huge personality with outstanding communication skills who was active in many areas of the Club. She quickly rose to Chair of the Green Committee at a crucial time during the renovations of Cottonwood Valley and TPC. Communication served her well in that role and has been a trademark of her leadership style as Chair of our Club’s Board of Governors this past year.

I want to personally thank Peter and Kristin for allowing Dina to spend her time contributing towards the betterment of the Club. Please join me in a BIG THANK YOU to Dina for her hard work, dedication, integrity and once again communication expertise as Chair of your Board of Governors!

A Letter from Paul EarnestDIRECTOR OF GOLF

I humbly sit today having just completed my 14th Annual Cool October Golf Marathon...92 holes in 12 hours of continuous golf. After running between shots and being mentally and physically exhausted over the ordeal, I reflect upon the history of the Marathon and I remain so humbled by the help and support of this endeavor. All of the Cool October Marathons are a constant reminder, with Robin Scott leading the tennis charge and Michelle Scannell leading the Spin-a-Thon. I am so very proud of our Club. Our battle against cancer is ever present in all things around us. From pink shoes and gloves on NFL players to three-day walks ‘For the Cure’ this fight seems to unite us. While we continue to have an increase of people in a fight against this horrible disease, we do so with the very latest in technology, very capable doctors and human resources to help guide patients in ways that increases our effectiveness in this fight. This year, the golf team raised $30,000 and now collectively over 14 years has contributed $362,000 towards this battle. Thank you to everyone who has contributed both financially and emotionally in our Cool October fundraiser. We are making a difference every day for our members, Sports Club staff and to people in the Irving community who otherwise might not find the care that makes the difference.

A fter doing a little Sports Club research, I found that Judy Mason is not only our new 2012 Senior Ladies Golf Champion, but has also held the Ladies Golf

Club Champion title AND the Tennis Club Champion tile many times over the past 25 years!! I got to sit down with Judy and chat about her many memories and triumphs at the Club.

Jess: When you first joined the Club, were you a tennis player or a golfer?Judy: I was a tennis player. I had just married John and we wanted a place to play. We even got to take a hard hat tour of the Club and tour the men’s locker room! We joined the Club in ‘83 and have loved the Club ever since. Jess: You’ve been a member since 1983! What was your favorite amenity when you joined?Judy: Well, besides the red wine, the Championship Tennis court. We owned that court back in the day. We could just walk on with no reservation and play. It was great!

Jess: How long have you been playing tennis?Judy: I’ve been playing tennis since I was a little girl and still living in New Hampshire. Tennis and skiing were our favorite family sports.

Jess: Did you play in school?Judy: Yes! I played in college at Middleberry in Vermont.

Jess: When did you start playing Golf?Judy: I picked up golf when I turned 40.

Jess: How often do you play? Judy: John and I play every Saturday and Sunday at the Club.

Jess: Who drives the golf cart? Judy: We almost ALWAYS walk!

Jess: Do you have a favorite thing about Golf?Judy: If you have a bad game, at least you’ll always have a great walk!

Over the month of October, we contracted Stacey Daigneau, a certified arborist, to trim trees on the Cottonwood Valley Course. Wow, what an impact he made! Stacey trimmed over 800 trees on holes 1, 2 and 11-18. The course looks great and plays much better. The trees are much healthier and the turf under the trees is now able to get more sunlight.

We are already attempting to coordinate another visit from Stacey. Our long-term plan is to address all the trees on Cottonwood Valley, TPC and the Resort and Club grounds. Happy Holidays!

It happens all the time… some people take golf much too seriously. There is no problem with being competitive and wanting to improve your game, that’s the goal right? But, if you’re not having fun on the greens, it might be time to rethink how you’re

spending your weekends at the Club!

Golf is supposed to be fun and exciting! The ladies of the WGA are a perfect example of how it’s done!

LIVE BY THE RULE OF FUN:

• Play with people who you like and people who like you. It’s never easy when you’re trying to have fun with a bunch of overly serious golfers.

• If you mess up a shot… it’s ok to get upset, but don’t hold it in! Staying frustrated will only hinder your game!

• Eat, drink and golf! If the beverage carts are out there, take advantage!

• Dress the part! The WGA is extremely creative when it comes to their team uniforms. The pictures speak for themselves!

• Last but not least, relax!

Cool October 2012Cool October = SUCCESS! $120,000! We did it! But not without the generosity and support of YOU, our loyal sports club members. For the past 28 years we’ve been raising money to help fight cancer, however since 1992 Four Seasons Resort and Club has elected to raise funds specifically for fighting cancer in our local community. The Irving Healthcare Foundation and Baylor Medical Center at Irving has benefited through the years from these funds resulting in over $2.4 million contributed to the cause. Because of your charitable contributions, Baylor Irving’s Cancer Center is able to offer advanced cancer care and technology to the citizens of Irving so they don’t have to leave the city limits. Our community can find the care they need in their own backyard at our city’s only not-for-profit hospital.

Through our sports marathons, a chili cook-off, a golf tournament, a bake sale, a 5K/10K Run, and many more events, we have exceeded our $100,000 pledge by $20,000. That is such amazing news! And we couldn’t have done it without you.

This year’s $120,000 donation will help support: Breast Cancer Patient Nurse Navigator – A breast-specific patient navigator to help guide patients through the process of post-diagnosis, treatment and survivorship. Our dollars will support partial salary funding for one year, at which point Baylor Medical Center at Irving will assume the full funding of the position the following year. Patient Information Mapping and Treatment Plan SoftwareThis technologically advanced software provides real-time data capture of patient information, providing them a fully comprehensive plan that includes the history of their care, medical record information and it maps out their post-treatment follow-up schedule. The software allows for a smooth informational transition if a patient changes physicians mid-treatment or post treatment. Remote Access Project for Physician Coordination This amazing technology enables other physicians to dial in and collaborate with radiation oncologists on patient treatment planning. Education and Outreach Programs – Various education programs for current staff at the Irving Cancer Center.

So from the bottom of our hearts, we want to thank you for your support this year and all previous years that you so generously contributed your time, emotional support and monetary donations. Together we are making a difference.

Change your holiday routine this year by staying active and making healthy decisions! Commit to consistent exercise and burn calories by attending Group Exercise Classes and engaging in regular cardiovascular exercise in the gym. To help with the consumption challenges this time of year, consult with Erin Epperson, our Nutrition Specialist. If you need an extra push, work out with a personal trainer to help educate and motivate you!And don’t forget that kids need to stay active as well during the holidays. Our after school Junior Tennis Program, run by Darren Snyder, is exceptional. On the fitness side, Saturday mornings are fun and active with Kids Zumba, Kids Yoga and Team Fit 4 Kids. So get your kids involved!Happy Holidays!

To maximize your footwork on the court here is a tip that will help. Use a “drop step.” This is achieved from the ready position on the forehand. This happens as soon as you see the ball coming off your opponent’s racquet face. This helps you to turn your shoulders and be better prepared and balanced when you hit the shot. The same applies for your backhand groundstroke. Have fun with your newfound weapon!!

Bridging the WorldsJAMES TIDWELL, MASTER SOMMELIER AND BEVERAGE MANAGER FOUR, SEASONS RESORT AND CLUB

Cape Wine is the South African wine industry’s big bash. This trade tasting and conference is held every two years in Cape Town. I had opportunity to attend last month, and was impressed by the quality and variety of wines on offer. The South African wine industry has moved farther, faster than almost any other country’s. Since apartheid ended in 1994, the wines have improved to compete on the world stage. The results combine the fruit, warmth and suppleness of US or Australian wines with the freshness, grip, and earthiness of European wines. In this respect, these wines bridge the New World and the Old World. Café on the Green has many South African wines, and these two represent some of the best of the red wines:

Raats Cabernet Franc 2010 [Stellenbosch, South Africa] Bruwer Raats is considered the winemaker extraordinaire of Cabernet Franc by fellow South African winemakers. The respect is well-deserved. This wine has a lithe, beautiful nose of mineral, spice, and violets. The palate retains acidity for freshness and contains fine, ripe tannins that add silky texture. Black currant and plum flavors are enhanced by mild green olive and green peppercorn notes.

De Toren Fusion V 2010 [Stellenbosch, South Africa] De Toren makes wines that age gracefully; the 1999 version of this Bordeaux blend tasted last month was still vibrant and elegant. The 2010 example is velvety rich and glycerous, coating the palate. Black plum, black cherry, and currant fruits are crunchy, but ripe. Cinnamon spice and smoky oak notes are well-integrated, accenting the fruit. This full-bodied, dense red will age for a decade or more.

ROSEMARY MINT MASSAGERosemary and mint are uplifting and invigorating. This treatment is wonderful for relieving sinus discomfort and headaches along with sore muscles. Chef Frederic’s Crème Dubarry A note from the Chef: This is a classical French soup, also known as cauliflower soup. I personally like to thicken soups with rice instead of potato or cream. The rice gives a nice silky texture and it is a bit lighter. Yes, I do use some cream but just at the end to give it the richness it deserves. If you’d rather have the soup chunky, then reserve some of the cooked cauliflower before blending and add it back to the soup at the end.

Ingredients: Butter 3 Tbsp.Yellow Onions 1 Large peeled and thinly slicedLeeks 2 Each, white parts only, well-washed and chopped Cauliflower 1 Head center and green removedBasmati Rice 3 Tbsp.Chicken stock 3 CupsThyme 1 SprigBay leaf 1 EachMilk 2 CupsHeavy cream 3 Tbsp.

Method:Heat up a saucepan then add the butter, onions and leeks. Cook until onions become transparent. Chop the raw cauliflower into thin shreds and add it to the softened onions, leeks, butter mixture. Add the rice, then add the chicken stock, milk, thyme, bay leaf and bring to a simmer and cover. Simmer on low for 25 minutes. Once the cauliflower and rice are completely tender, remove the thyme and bay leaf and blend the soup until completely smooth. Add the cream just before serving and enjoy!
