Meet Emma Gilbert and Heath Daly, the culinary crusaders at the forefront of a raw food movement that’s high on flavour, purpose and soul.

For Emma Gilbert and Heath Daly, simplicity isn’t a form of deprivation, it’s the key to a bigger life. A year ago, the former medical student and dedicated naturopath poured a mutual passion for progressive, plant-based food - exempt from the energy-sapping effects of dairy, gluten and refined sugar - into The Raw Kitchen, a restaurant, smoothie bar, retailer and yoga studio, housed in a sprawling 1920s factory. Visit on any given day and you’ll witness art students sharing pizza topped with cashew macadamia cheese and business types sipping an organic spinach smoothie and squeezing in yoga before returning to work. It’s proof that the high-ceilinged space has become Perth’s temple to living well.

“It’s been a long process,” laughs Gilbert. “Heath and I were both interested in raw food and were running workshops and stalls at festivals and growers markets and operated a vegan cafe in Fremantle’s Plaza Arcade. But then we stumbled upon this space and saw the opportunity. Although Heath put a lot of effort into stripping back the walls and exposing the gorgeous Jarrah floorboards, it’s always been about passion and love. We see it as a lifestyle space where we bring ideas like community, sustainability,

locality and ethics together. We wanted to be involved in creating it from start to finish.”

This vision has paid off. At The Raw Kitchen, dishes like fiery yellow coconut curry with Margaret River tempeh and green polenta crowned with charred capsicum puree and root vegetables, are a study in flavour and texture thanks to a buyer that sources fresh, local ingredients on a daily basis and a cooking approach, the handiwork of head chef Georg Martin, that proves health food’s culinary appeal.

And the equally focussed on workshops, which school curious locals in the benefits of a raw lifestyle as well as a concept store that stocks everything from artisanal homewares to eco-conscious skincare, as part of a plan to showcase products with an interesting story and clear provenance.

“Raw food is progressive, it’s part of the healthy food movement but it tastes amazing and it’s important for us to create an enjoyable dining experience

for people,” says Daly, who’s currently writing a book on The Raw Kitchen’s philosophy. “I think it’s proving not to be a fad because after people eat it for weeks they feel better - alive and energised. That’s what happens when you strip everything back to its essence and let the flavours shine through.

For summer getaways, a large cotton scarf that can lend itself to being a top, a dress, a towel, a picnic rug or a headscarf. The best style is the skin you live in everyday. Ditch the foundation for tinted suncream and slip slop slap.

A one-of-a-kind experience in Perth? Getting back to nature. Running around the swan river or spending the day at Rottnest Island.

Where would we find you on a Friday night in Perth? Could go one of two ways. A quiet night at home on my laptop or dirty martinis at Mechanics Institute Bar.

How would you describe Perth to someone who has never visited? It’s all about the weather, the people you surround yourself with and being able to enjoy life’s simple pleasures with a slower paced lifestyle. We live in paradise in the West.

Meet Kristi Dempster, a force behind 140 – the imaginative Perth development proving that creativity and commerce don’t need to be mutually exclusive.

It can take an unexpected payoff to know that a project you’ve put your heart into was worth your time. For Kristi Dempster, Marketing Manager at 140, a William Street precinct that aims to be an inspiring antidote to the faceless towers that command the Perth skyline – while bringing Northbridge creativity closer to the Murray Street Mall – it was witnessing a moment of connection between an artist she’d commissioned and a passer-by.

“In November last year, we ran a campaign called 140ART where we invited 12 Australian artists to exhibit work on the precinct’s shopfronts and walls,” says Dempster, who’s helped steer the development since it was spearheaded by Cbus Property in 2010. “Sara Winfield was installing a mural and we had a disabled man in a wheelchair sit and watch her for three hours. I’ve been working on this project for four-and-a-half years and there’s been a lot of blood, sweat and tears. But watching an emotional reaction like that was so rewarding.”

For Dempster, creating a relationship between 140 and the people that pass through it isn’t just about urban

renewal – it sparks a spirit of possibility that can help a city evolve. She says that the precinct, which features stark bronze sculptures by Perth jewellery designer Alistair Yiap, a technicolour canopy by Nike Savvas and murals by street artist Tim Phibs’ alongside venues like Jamie’s Italian and German beer house Brotzeit, aims to break down barriers between art, design, food and retail.

“We have a number of new food and beverage venues planned when we launch in early 2015 as well as a comprehensive art program,” says Dempster, whose background is in interior design. “When a national corporation like Cbus Property takes a new approach, it pushes evolution within the industry. Property owners and developers can’t keep producing suburban retail offers in the middle of the city. A lot of creative young people who moved east or overseas are returning to Perth and starting entrepreneurial ventures.140 was the perfect opportunity to push some boundaries and address the fact that for cities to create a point of difference, they have to be culturally alive.”


What do you believe sets Perth’s art scene apart from those in other capital cities? In my opinion it’s driven by a younger generation willing to push boundaries and take commercial risks to challenge Perth’s status quo. If the last few years are anything to go by, it’s working!

What are your favourite urban or public spaces in the Perth CBD? Cbus Property’s 140 has been a real passion project for me over the last 4.5 years, so it’s definitely at the top. Aside from that I would have to say Wolf Lane. The team at Form completely transformed this laneway earlier in the year as part of their ‘Public’ program which saw 50 artists paint 37 walls over 7 days. It houses so many amazing works including a personal favourite by Maya Hayuk.

Which three Perth artists and illustrators do you think art fans should watch out for?

First and foremost Andy Quilty. Andy was a resident artist at 140 for a little over a year, his body of work really evolved during this period. Anya Brock for mass commercial appeal (she may take over the world) and Alister Yiap as he transitions into sculpture.

What’s your favourite gallery or design store in Perth? There are so many! The Artspace Collective has recently opened north of the CBD and aims to establish a space for art sessions, exhibitions and shared work studios. The converted space above a street-front shop is where Marite Norris and her husband Anthony Maslin are generating a positive energy to honour and remember their three children Mo, Evie and Otis Maslin, who died with their grandfather in the MH17 air disaster in July. Unique spaces with purpose are generally the ones I’ll gravitate to.

How would you spend the perfect Friday evening in Perth? After a full day at 140, I would usually meet friends and head down William Street into Northbridge. There are so many unique small bars, eateries and boutiques. Bivouac Canteen gets me every time. I’m also excited for Lucky Chan’s Bar to open in the New Year. It’s Australia’s first crowd-funded bar which is pretty impressive in itself.

A two and a half hour flight from Perth, Broome is well known for the sunset images of camels peacefully wandering over sections of the 22 kilometre long Cable Beach. However, before you throw on a bikini and sprint towards the creamy white sand, read up on the tides and extend yourself beyond a sunbake.

The tides along the Kimberley coast are the biggest in the southern hemisphere with the difference in high and low tide being up to 10 metres. Low tide is certainly the best time to stretch a fluffy beach towel over a patch of sparkling white sand, but in between your sighs of contentment, set your sights on the incredible history that is exposed as the water retreats.

At the lowest of tides, make your way to Gantheaume Point where the deep red cliffs framing the turquoise

ocean aren’t the only breathtaking vision. A variety of 130-million-year-old dinosaur footprints can be seen, including sauropods and Stegosaurus prints.

From Town Beach, use low tides again to walk the mud flats and see the eerie wreckage of Catalina boats that were sunk in World War II. In the evening it is also the spot to catch the natural phenomenon of the Staircase to the Moon, an illusion created along the mudflats when a full moon coincides with a low tide.

The next natural wonder to marvel at is the South Sea pearl. Take a tour out to one of the pearl farms (try Willie Creek Pearls or Cygnet Bay Pearls) or wander into the shopping precinct of Chinatown where you can snag one of your own from the showrooms.
