oDark miso paste – 2tbsp.
oHoney – 2tbsp.
oSoy sauce(sweet) – 1tbsp
oWhite wine vinegar – 1tbsp

oUdon noodles – 250g
oSpring onions – 1bunch

oVegetable stock – 2l
oWalnuts – 100g

oFirstly begin by bringing two liters of stock to the boil while adding in sliced ginger and spring onions
oThen proceed to gently toast walnuts in a hot pan until aroma is released, remove and leave to cool
oReduce heat when stock comes to the boil, simmer and after 10 minutes add your greens and mushrooms and remove from heat

oBlend walnuts until fine and incorporate into other miso paste ingredients
oCook noodles in boiling water until tender and serve immediately and our over hot broth and a dollop of paste
oServe immediately

oRamen noodles – 125goChicken stock – 350mloChili sauce – 1tbsp.oFish sauce – 1tspoSoy sauce(dark) – 5mloRice vinegar – 1tspoMirin – 1tspoFrozen peas – 2tbsp.oChilies(red) – 2oShallot – 1oCoriander – 1 bunch

oBegin by bringing a pot of salted water to the boil and add noodles
oWhen cooked remove and cool
oThen bring the stock, chili sauce, mirin, rice vinegar, soy sauce and fish sauce to the boil , add the cooked noodles and peas
oGarnish with chilies, shallots, and coriander
oServe immediately

oWarm water – 240ml
oOlive oil– 1tbsp

oPre-heat oven to 240°C and heat your baking tray as well
oFirstly begin by combining the flour, salt, sugar and yeast and gradually add the warm water
oMix to a smooth dough and add the olive oil, knead slightly and cover and prove for 1hour in a warm environment
oCut into 3-4pieces and roll until nice base is nice and thin
oAdd desired sauce and ingredients and bake on hot baking tray and cook for roughly 10 minutes or until golden brown around the edges

o Sea salt – 50g
o Garlic – 5-6cloves
o Sugar – 1tsp
o Gochugaru – 3-4tbsp

o Firstly begin by slicing the cabbage into quarters, adding to a bowl and adding salt and massaging well
o Place some water in the bowl and cover with a plate and leave for 1-2hours
o Rinse cabbage when this process has finished and leave to drain for 20 minutes
o Meanwhile begin to make the paste by combining the ginger, garlic, sugar, and water, mix in the Korean chili paste

o Daily, press down on mixture and check for recommended taste and texture
o Refrigerate and use as necessary
o Best to leave it stored for longer to produce more flavour
