PROCESS DESCRIPTION FOR PROCESSED CHEESE PRODUCTION
Processing
TheSTEPHANUHTsystems(3)arestateoftheartandcapableofproducingallmodernproducts.
Extensionofshelflifeisachievedbyheatingupto145°C.ForprolongedstandingtimestheUHTcanbedesignedinadoubleUHTheadexecution.Toreducesetting,productcontactpartsarePTFEcoated.
Priortofilling,theproducthastobecooleddownanddeaerated(4)bycontrolledvacuum,followedbyaninclinedcreamingtankforstructurerebuildingandviscositydevelopmentunderambientpressure.TheCreamingTank(5)isequippedwithahighefficiencycreamingelementandviscositymonitoring.
Theproductcooling,deaerationandcreamingundervacuumcanalsobeachievedinasinglecombinedsystem–theSTEPHANFlashcoolingandCreamingTank(6).
AdditionalmodulesforCIP,steamfiltration,productfiltrationandpiggingsystemsarealsoavailable.
Standardisation
Thefinalproductisablendofrawcheese,variouspowderedingredients,butter,fat/oilandwater.Themainingredients,naturalcheeseandbutter,requirepre-processessuchasqualitychecks,unpacking,weighing,metaldetectionandgrinding.
IntheSTEPHANBatchCookingunit(1)allnecessaryfunctionsofprocessingsuchascutting,blending,heatingbydirectsteaminjection,emulsifyinganddeaerationareachievedwithinonesinglemodule.
IntheSTEPHANContinuousCooker(2)theproductisheatedbydirectsteaminjectioncombinedwithadynamicandhighlyefficientmixingsystem.Thefinalemulsifyingstepisachievedbymeansofarotor/statorsystemwhichensuresthebestproductquality.
Theprocessingandheatingtotherequired(70–95°C)cantakeplaceineitheracontinuousorbatchsystem.
